The Culinary Welty
Welty’s use of foods in her fiction includes the green tomato pickle in Why I Live at the P.O., the shrimp boil at Baba’s in No Place for You, My Love, and the groaning boards in Delta Wedding. but her interest in foods and cooks is evident in other writings as well.
Welty wrote pieces for a selection of Jackson cookbooks, including Winifred Green Cheney’s Southern Hospitality (1976). Cheney and Welty were old friends, as is evident in this Preface:
A Note on the Cook
Winifred Green Cheney is an old friend and near neighbor of mine in Jackson, Mississippi, and although I am not a cook, I am well equipped to testify to her cooking-from the dining room if not the kitchen. Her cooking is superb. But knowing there are further qualifications for a good cookbook, Mrs. Cheney has seen to those admirably too.
Winifred Cheney has not only collected and thoroughly tested and wisely chosen her dishes, she has learned all about them. She has traveled and tasted all over our part of the world with an alert, investigative interest in the background and provenance of the recipes she works from. The variety of Southern dishes is wide: indeed, the South is a big place-bigger than France, as has been pointed out-and it has had a long history. Its dishes, distinctively Southern as they have become, may go back in origin to the French, Spanish, English, Ger- man, Mexican, Greek, Dalmatian, African, Creole, or Caribbean comers to the land. Mrs. Cheney sets value on this ingredient of flavor. Her respect for the local dish and for the time- honored style of preparing it forms the roux, you might say, on which her own creations are based.
The recipes here come to us by way of long experience in the kitchen and out of the patience of the perfectionist. The zest Mrs. Cheney takes in her cooking comes through in the zest with which she writes down her recipes for us. She makes us acquainted, altogether, with the essence and character as well as the proper substance of the dish at hand.
The cook who can make a dream of a dish isn’t necessarily able thereby to set down for others the exact way to prepare it. can testify that one of the hardest things in the language to write is a set of clear directions. Mrs. Cheney has the gift, and the conscience, for doing it.
Winifred at home cooks for her family, for her friends, of course. She cooks to honor the visitor, and also she cooks for a varying but ever-present list of neighbors or friends who are convalescing from illness, who are in trouble of some kind, who are alone or confined to their homes. (And for some reason known only to her kindness, she includes in her list writers. Let me be confined to my typewriter with a deadline, and, as though it were a fate I didn’t deserve, Winifred appears with something on a tray to sustain me.) The original Lady Bountiful was the invention of an Irish dramatist in 1707. Winifred exists as her own version. She makes her rounds with baskets and trays as a simple extension of her natural hospitality. In good weather but especially in bad, splashing forth in raincoat and tennis shoes, carrying a warm cake straight from her oven, she sympathizes with you or celebrates with you by sharing her table with you.
I hope Winifred does not mind my coming print about her character-after all, it is no secret in her hometown-for my reason is that I believe it has something positive to do with how good the food is. All of Mrs. Cheney’s dishes came about through the explicit idea of giving pleasure to particular people-with real people, and a real occasion, in mind. I think that may be a very good secret of the best cooking.
When Jane Austen’s Miss Bates, attending Mr. Weston’s ball, is seated at the supper, she surveys the table with a cry, “How shall we ever recollect half of the dishes?” When I sit down to Sunday dinner at Winifred’s I feel just like Miss Bates. What guest could not? But it now becomes possible for us to recollect the dishes we’ve dined on there. The cook herself has recollected-and here presented the reci- pes for them. They are here to study and follow in her own cookbook.
It’s a gracious cookbook. It’s like another extension of Winifred Cheney’s hospitality; she has added another leaf to her table.
Welty’s essay in The Country Gourmet (1982), published by the Mississippi Animal Rescue League, while not of a culinary nature in itself, deserves inclusion for its gentle message.
The excellent work of the Mississippi Animal Rescue League has been well known in Jackson and the State for over a decade. It was chartered in 1969 by the State as a non-profit corporation for the prevention of cruelty to animals, and the land on which the Shelter stands (at 4395 South Drive) was leased to the League by the City of Jackson for $1 a year. Its up-to-date record opens our eyes to the scope of its activities. For instance, the number of animals that the League rescues-from abandonment, starvation, cruel treatment, accidents in the streets and as far as possible nurses back to health and offers for adoption as household pets, reaches several thousand a year.
Of necessity, the Shelter has had to grow; it now incorporates a well-equipped Annex. There is at present an operating room set up in a mobile home, but plans have been drawn up for a Clinic, which would offer increased benefit.
The League is in the daily business of saving lives. We who care for the work its personnel, both professional and volunteer, are carrying out, salute them and welcome a chance to support the Mississippi Animal Rescue League. Guarding and protecting, trying to save, all life on earth is a need we all alike share.
Mark Kurlansky, in The Food of a Younger Land (2009), includes an essay of hers entitled “Mississippi Food” that Kurlansky claims was “a mimeographed pamphlet that she wrote for the Mississippi Advertising Commission and which they distributed.” Kurlansky doesn’t provide a date for the essay, but it was likely written in the mid-1930s.
Mississippi Food
Stark Young, in his book Feliciana, tells how a proud and lovely Southern lady, famous for her dinner table and for her closelyguarded recipes, temporarily forgot how a certain dish was prepared. She asked her Creole cook, whom she herself had taught, for the recipe.
The cook wouldn’t give it back.
Still highly revered, recipes in the South are no longer quite so literally guarded. Generosity has touched the art of cooking, and now and then, it is said, a Southern lady will give another Southern lady her favorite recipe and even include all the ingredients, down to that magi cal little touch that makes all the difference.
In the following recipes, gleaned from ante-bellum homes in various parts of Mississippi, nothing is held back. That is guaranteed. Yankees are welcome to make these dishes. Follow the directions and success is assured. Port Gibson, Mississippi, which General Grant on one occasion declared was “too beautiful to burn,” is the source of a group of noble old recipes. “Too beautiful to burn” by far are the jellied apples which Mrs. Herschel D. Brownlee makes and the recipe for which she parts with as follows:
JELLIED APPLES
Pare and core one dozen apples of a variety which will jell successfully. Winesap and Jonathan are both good. To each dozen apples moisten well two and one-half cups of sugar. Allow this to boil for about five minutes. Then immerse apples in this syrup, allowing plenty of room about each apple. Add the juice of one-half lemon, cover closely, and allow to cook slowly until apples appear some what clear. Close watching and frequent turning is necessary to prevent them from falling apart. Remove from stove and fill centers with a mixture of chopped raisins, pecans, and crystallized ginger, the latter adding very much to the fla vor of the finished dish. Sprinkle each apple with granulated sugar and baste several times with the thickening syrup, then place in a 350-degree oven to glaze without cover on vessel. Baste several times during this last process.
Mrs. Brownlee stuffs eggs with spinach and serves with a special sauce, the effect of which is amazingly good. Here is the secret revealed:
STUFFED EGGS
12 eggs
1 lb. can of spinach or equal amount of fresh spinach 1 small onion, cut fine
salt and pepper to taste
juice of 1 lemon or ½ cup vinegar
½ cup melted butter or oil
I large can mushroom soup
Boil eggs hard, peel, and cut lengthwise. Mash yolks fine. Add butter, sea soning, and spinach. Stuff each half egg, press together, and pour over them mushroom soup thickened with cornstarch, and chopped pimento for color.
Last of all, Mrs. Brownlee gives us this old recipe for lye hominy, which will awaken many a fond memory in the hearts of expatriate Southern ers living far, far away.
LYE HOMINY
1 gallon shelled corn
½ quart oak ashes salt to taste
Boil corn about three hours, or until the husk comes off, with oak ashes which must be tied in a bag-a small sugar sack will answer. Then wash in three waters. Cook a second time about four hours, or until tender. -An all day job: adds Mrs. Brownlee.
One of the things Southerners do on plantations is give big barbecues. For miles around, “Alinda Gables,” a plantation in the Delta near Greenwood, is right well spoken of for its barbecued chicken and spare ribs. Mr. and Mrs. Allen Hobbs, of ”Alinda Gables,” here tell you what to do with every three-pound chicken you mean to barbecue:
BARBECUE SAUCE
1 pint Wesson oil
2 pounds butter
5 bottles barbecue sauce (3½ ounce bottles)
½ pint vinegar
1 cup lemon juice
2 bottles tomato catsup (14 ounce bottles)
1 bottle Worcestershire sauce (10 ounce bottles)
1 tablespoon Tabasco sauce
2 buttons garlic, chopped fine salt and pepper to taste
This will barbecue eight chickens weighing from 2½ to 3 pounds. In bar becuing, says Mrs. Hobbs, keep a slow fire and have live coals to add during the process of cooking, which takes about two hours. The secret lies in the slow cooking and the constant mopping of the meat with the sauce. Keep the chickens wet at all times and turn often. If hotter sauce is desired, add red pepper and more Tabasco sauce.
Mrs. James Milton Acker, whose home, “The Magnolias,” in north Mississippi is equally famous for barbecue parties under the magnificent magnolia trees on the lawn, gives a recipe which is simpler and equally delightful:
Heat together: 4 ounces vinegar, 14 ounces catsup, 3 ounces Worcester shire sauce, the juice of 1 lemon, 2 tablespoons salt, red and black pepper to taste, and 4 ounces butter. Baste the meat constantly while cooking.
Pass Christian, Mississippi, an ancient resort where the most brilliant society of the eighteenth century used to gather during the season, is awakened each morning by the familiar cry, “Oyster ma-an from Pass Christi-a-an!” It would take everything the oyster man had to prepare this seafood gumbo as the chef at Inn-by-the-Sea, Pass Christian, orders it:
SEAFOOD GUMBO
2 quarts okra, sliced 2 large green peppers 1 large stalk celery
6 medium sized onions 1 bunch parsley
½ quart diced ham 2 cans #2 tomatoes
2 cans tomato paste
3 pounds cleaned shrimp
2 dozen hard crabs, cleaned and broken into bits 100 oysters and juice
½ cup bacon drippings 1 cup flour
small bundle of bay leaf and thyme salt and pepper to taste
1 teaspoon Lea & Perrins Sauce 1½ gallons chicken or ham stock
Put ham in pot and smother until done. Then add sliced okra, and also celery, peppers, onions, and parsley all ground together. Cover and cook until well done. Then add tomatoes and tomato paste.
Next put in the shrimp, crabs, crab meat and oysters. Make brown roux of bacon dripping and flour and add to the above. Add the soup stock, and throw into pot bay leaves and thyme, salt and pepper, and Lea & Perrins Sauce. This makes three gallons of gumbo. Add one tablespoon of steamed rice to each serving.
The chef at Inn-by-the-Sea fries his chickens deliciously too. He uses pound or pound-and-a-half size fowls. Dressed and drawn, they are cut into halves and dipped into batter made of Qne egg slightly beaten to which one cup of sweet milk has been added, as well as salt and pepper. The halves of chicken are dipped and thoroughly wetted in the batter and then dredged well in dry, plain flour. The chef fries the chicken in deep hot fat until they are well done and a golden brown. He says be careful not to fry too fast.
Two other seafood recipes from the Mississippi Coast come out of Biloxi, that cosmopolitan city that began back in 1669, and where even today the European custom of blessing the fleet at the opening of the shrimp season is ceremoniously observed. “Fish court bouillon” is a mag ical name on the Coast, it is spoken in soft voice by the diner, the waiter, and the chef alike; its recipe should be accorded the highest respect; it should be made up to the letter, and without delay:
FISH COURT BOUILLON
5 or 6 onions
1 bunch parsley
2 or 4 pieces celery
4 pieces garlic
6 small cans tomatoes 1 or 2 bay leaves
hot peppers to taste
Cut up fine, fry brown, and let simmer for about an hour, slowly. Prepare the fish, and put into the gravy. Do not stir. Cook until fish is done. This will serve 8 to 10 people; for 10 or more double the ingredients. To prepare fish, fry without cornmeal, and put in a plate or pan. Pour a portion of the gravy over it, and let it set for a while. Just before serv ing, pour the rest of the hot gravy over the fish.
Another valuable Coast recipe which comes from Biloxi is that for Okra Gumbo.
OKRA GUMBO
2 or 3 onions
½ bunch parsley
5 or 6 pieces celery 1 small piece garlic
4 cans of okra, or a dozen fresh pieces
Cut all ingredients in small pieces and fry brown. Let simmer for a while. If shrimp are desired, pick and par-boil them and add to the ingredients the shrimp and the water in which they were boiled. If oysters or crab meat is desired, add to gumbo about twenty minutes before done.
Add as much water as desired.
Aberdeen, Mississippi, is a good Southern town to find recipes. Old plantations along the Tombigbee River centered their social life in Aberdeen as far back as the 1840’s, and some of the recipes that were used in those days are still being made up in this part of the country.
Mrs. C. L. Lubb, of Aberdeen, uses this recipe for beaten biscuit.
BEATEN BISCUIT
4 cups flour, measured before sifting
¾ cup lard
1 teaspoon salt
4 teaspoons sugar
enough ice water and milk to make a stiff dough (about ½ cup)
Break 150 times until the dough pops. Roll out and cut, and prick with a fork. Bake in a 400-degree oven. When biscuits are a light brown, turn off the heat and leave them in the oven with the door open until they sink well, to make them done in the middle.
Mrs. Bicknell T. Eubanks, also of Aberdeen, prepares Spanish rice this way.
SPANISH RICE
4 tablespoons oil
1 cup rice
1 onion, sliced
1 green pepper, chopped 1 quart canned tomatoes
2 teaspoons salt
a little less than ¼ teaspoon pepper
Heat 2 tablespoons oil in large frying pan and add rice. Cook until brown, stirring constantly. Cook remaining 2 tablespoons oil with onion and green pepper until the onion is yellow and tender. Combine with rice. Add tomatoes and let it simmer until the rice is tender, stirring constantly. Add a little hot tomato juice if the rice seems dry. Add sea sonings. Serves 6.
Vicksburg, in the old steamboat days Mississippi’s wicked, wide-open town, lived high with all the trimmings. Perched on the bluffs overlook ing the Mississippi, it is famous still for its excellent catfish. The dis armingly simple recipe for preparing it is here given:
Take a catfish weighing ½ pound. Season well with salt and pep per, and roll in cornmeal. Use a pot of deep fat with temperature of 360 degrees. Place the fish in the pot and fry until done. Serve very hot.
To go along with the fish, the Hotel Vicksburg serves a wickedly hot potato salad, prepared as follows:
1 quart sliced potatoes (cooked) 6 pieces chopped crisp bacon
3 chopped hardboiled eggs
1 minced large green pepper
2 minced pimentos
4 tablespoons mayonnaise
2 tablespoons prepared mustard salt and pepper to taste
Mix and serve with quartered tomatoes, sliced dill pickles, mixed sweet pickles, and quartered onions.
A collection of recipes from the Old South is no more complete than the Old South itself without that magic ingredient, the mint julep. In the fine old city of Columbus, in the northeastern part of the state, hospitality for many years is said to have reached its height in “Whitehall,” the home of Mr. and Mrs. T. C. Billups. “The drink is refreshing,” says Mrs. Billups, needlessly enough, “and carries with it all the charm of the Old South when life was less strenuous than it is today; when brave men and beau tiful women loved and laughed and danced the hours away, but in their serious moJnents, which were many, aspired to develop minds and souls that made them among the finest people this old world has known.” The “Whitehall” recipe is as follows:
MINT JULEP
Have silver goblet thoroughly chilled.
Take half lump sugar and dissolve in tablespoon water.
Take single leaf mint and bruise it between fingers, dropping it into dissolved sugar.
Strain after stirring.
Fill the goblet with crushed ice, to capacity.
Pour in all the bourbon whiskey the goblet will hold. Put a sprig of mint in the top of the goblet, for bouquet. Let goblet stand until FROSTED.
Serve rapidly.
Who could ask for anything more?
Then we have Welty’s introduction to The Jackson Cookbook, “The Flavor of Jackson”, arguably the finest example of Southern culinary exposition, a finely-seasoned piece fashioned by a master.
The Flavor of Jackson
Most Jacksonians would agree, I think, that Jackson has always characteristically dined at home and entertained at home, and does so still by first preference. It’s been out natural form of hospitality as of course its been the most logical and economical way to live.
There was indeed and for many years, the elegant dining room of the Edwards House ready for the important or large occasion. But we were too small a place and too far inland from the Gulf or New Orleans to have been heir to restaurants of another kind: one Mexican at his hot tamale stand, on the corner of North West and Hamilton during the cold months, couldn’t make us cosmopolitan. Rather than anything else, I think—and I like to think—the word for the Jackson flavor is “home”.
It was mostly the young who went forth with any regularity for outside refreshment. After the movies, the ice cream parlor. After “The Thief of Bagdad” at the Majestic, the other dime went for the strawberry ice cream soda at McIntyre’s. And wasn’t it Mr. Key’s Drug Store that seemed a functionable part of the Century Theatre? It had purple paper grapes on a cardboard trellis overhead—almost like a part of the stage scenery to come. Just before curtain time, my father took me in there and presented me with the box of Jordan’s Almonds—“bird eggs”—that was part of the theatre rite. Some tired road company would go through its Victor Herbert for us, but it was magic, all the same, and holding a “bird egg” in the mouth (impossible to swallow, in the excitement) was part of the magic.
When the whole family sallied forth for refreshment, it was very likely after supper on hot nights just before bedtime. They’d get in the car and drive to Seal Lily’s and have ice cream cones all around; it was best to hold them outside the car and eat them through the windows, and finish fast before the last bit melted.
But parties were given at home, and they started—I believe it was true for old and young—plenty early in the afternoon. You began eating around 3:30 and kept it up until you had entirely spoiled your supper. Party food drew its praises for how pretty it was (example, Bridemaids’ Salad, all white down to the white grapes) or for how much trouble the hostess went to make it (Pressed Chicken), but it’s a safe bet that all the refreshments were the successes they were because they were rich—thunderously rich.
Sometimes we branched out from home as far as Shadow Lawn. When parties were given there it wasn’t in order to save the trouble at home but to offer the guests a change—an al fresco in the quiet country air of the Terry Road. Some of our high school graduation “teas” took place at Shadow Lawn. The receiving line stood there on Miss Anita Perkins’s lawn, in the very early shadows, and the punch bowl waited on her porch, and there were her own delicious things to eat—frozen fruit salad was her specialty—and all was elegant. It was the era of the Madeira tea napkin. I believe I could say that more tea napkins were handed round at that high-minded time than I ever saw in my life, before or since. (And at least half of them must have been embroidered by Miss Irene Anderson. She too was very much a part of the flavor of Jackson.)
As a child, I heard it said that two well-travelled bachelors of the town, Mr. Erskin Helm and Mr. Charles Pierce, who lived on Amite Street, had ‘brought mayonnaise to Jackson’. Well they might have though not in the literal way I pictured the event. Mayonnaise had a mystique. Little girls were initiated into it by being allowed to stand at the kitchen table and help make it, for making mayonnaise takes three hands. While the main two hands keep up the uninterrupted beat in the bowl, the smaller hand is allowed to slowly add the olive oil, drop-by-counted-drop. The solemn fact was that sometimes mayonnaise didn’t make. Only the sudden dash of the red pepper into the brimming, smooth-as-cream bowlful told you it was finished and a triumph.
Of course you couldn’t buy mayonnaise and if you could, you wouldn’t. For the generation bringing my generation up, everything made in the kitchen started from scratch. There was a barrel of flour standing in the kitchen! Perhaps a sugar barrel too. The household may have provided (ours did) its own good butter (which implies a churn, and, of course, a cow), and its own eggs, and most likely it grew its own tomatoes, beans, strawberries, even asparagus. There’d be the seasonal rounds of the blackberry lady, appearing with her buckets at your door, and the watermelon man with his load, who’d plug you one to your taste, and the regulars sending their cries through the summer streets—“Butterbeans, snapbeans and okra!”—followed by the ice cream man, of course. Meat? Why your mother called up the butcher, talked to him, asked what was especially nice today, and let him send it. There was communication with butchers. And my father sometimes saw them, for he’d stop by on his way from the office and come bringing home by hand the little squared-off, roofed over, white cardboard bucket with the wire handles, fragrant and leaking a little—and produced oysters for supper, just ladled out of the oyster barrel that the butcher got in from New Orleans.
And of course they grated from whole nutmegs, they ground coffee from the beans, went to work on whole coconuts with the hatchet. Some people knew how to inveigle for the real vanilla bean. (Vanilla must have had a central importance in those days—think of all the cakes. Wasn’t there a local lady who made her living, and her entertainment, just selling vanilla extract over the telephone?)
Our mothers were sans mixes, sans foil, sans freezer, sans blender, sans monosodium glutamate, but their ingredients were as fresh as the day; and they knew how to make bread.
Jackson believed in and knew how to achieve the home flavor. And if ever there was a solid symbol of that spirit, one that radiates its pride and joy, it is the hand-cranked ice cream freezer. I see it established in a shady spot on a back porch, in the stage of having been turned till it won’t go around another time; its cylinder is full of its frozen custard that’s bright with peaches, or figs, or strawberries, its dasher lifted out and the plug in tight, the whole packed with ice and salt and covered with a sack to wait for dinner—and right now, who bids to lick the dasher?
I daresay any fine recipe used in Jackson could be attributed to a local lady, or her mother—Mrs. Cabell’s Pecans, Mrs. Wright’s Cocoons, Mrs. Lyell’s Lemon Dessert. Recipes, in the first place, had to be imparted—there was something oracular in the transaction—and however often they were made after that by others, they kept their right names. I Make Mrs. Mosal’s White Fruitcake every Christmas, having got it from my mother, who got it from Mrs. Mosal, and I often think to make a friend’s fine recipe is to celebrate her once more, and in that cheeriest, most aromatic of places to celebrate in the home kitchen.
Jackson had its full plenty of recipes, but I hardly remember a cookbook. My mother had the only one I ever saw as a child, “The White House Cookbook”. I don’t recall which president’s wife was in headquarters at the time of our edition, but the book opened to a full-length drawing of a deer, complete with antlers, marked off with dotted lines to show how to cut it up for venison, which suggests poor Mrs. Teddy Roosevelt. The most useful thing about “The White House Cookbook” was its roomy size, for in between its pages could be stored the recipes jotted down on scraps of paper and old envelopes, that my mother really used. They accumulated themselves over the years from friends and relations and from her own invention and a time or two from the Mystery Chef who came in over the radio. She had a cookbook within a cookbook. She had some of the making, in fact, of the very sort of cookbook that this one (i.e. The Jackson Cookbook) is certain to be. Today there’s a cookbook available for every conceivable purpose and occasion, but in this one we come a full circle: we’re back again to the local using these cherished recipes we can make and delight in the fruits of Jackson itself.
I’d like to express the pious hope that we’re to find these recipes given in full. My mother’s don’t do me as much good as they might because she never included directions. Her reasoning, often expressed, was that any cook worth her salt would know, given a list of ingredients, what to do with them, and if she did come to a momentary loss while stirring up a dish—taste it! Cooking was a matter of born sense, ordinary good judgment, enough experience, materials worth the bothering about, and tasting. I had to sit on a stool while she made spoonbread and take down what I saw like a reporter, to get her recipe.
I can’t resist adding this, for I think it applies. John Woodburn was a New York editor who’d com through Jackson on a scouting trip for young unknown writers and spent a night at our house. He carried my first collection of stories back with him and worked very hard trying to persuade his editor to take them. Several years later, when he succeeded, he sent me a telegram to say, “I knew as soon as I tasted your mother’s waffles it would turn out all right.”
Linda’s Potato Soup
Here’s a recipe from Linda Bolton who for many years ran the Good Food Store when it was on Jackson Avenue in Oxford.
Back when I was writing a food column for The Oxford Times, I published a really basic potato soup recipe, and at happy hour the next day as I was headed for the Rose, Linda stuck her head out of the store and yelled across the street at me: “Come here and let me tell you what all you left out of your `tater soup recipe, Yancy!” So I damn sure did, and here’s the modified recipe:
For each serving (@ a cup and a half), take two large starchy potatoes and at least one red/waxy potato for texture. Wash, peel and dice, making sure to take out all discolorations. Boil in enough water to cover, adding a vegetable bouillon cube. When almost tender through, reduce heat, sauté for each of two servings one small white onion and two cloves of garlic, both finely minced, in about two tablespoons sweet butter.
To this, add liquid from the potatoes and low boil until onions have broken down. Pour this mixture back on the potatoes, simmer and stir until the soup has a creamy, chunky consistency. Season with crushed dill seed, just a little bit of dried rosemary, and black pepper before salting to taste.
You can add a little heavy cream and another tablespoon of butter to make a more substantial soup, in which case you might also want to add a little grated hard cheese. Good hot or cold.
An Interracial Hanging in Oxford
At the turn of the last century, north Mississippi was still for the most part a wilderness, little more than a network of villages and towns strung together along dirt and gravel roads, traveled by or with a horse, united only in proximity. The scars of the Civil War ran deep, and the adjusted system of laws in the newly-Reconstructed state were little more than the legal ramifications of military defeat.
Yet the state was growing, law had to be enforced and the cases of Will Mathis and Orlando Lester, grisly in detail, profound in ramifications, proved in to be a public circus ending in a lethal trapeze. Side by Side ( Pelican Publishing, February 19, 2016) is as much about race than it is of the reestablishment of justice in the South, an ongoing trial if there ever was one.
T.J. Ray’s story of the hanging of Mathis and Lester is one of those books you read and come away thinking, “Wow, that would make a damn good movie.” And it would. Fashioning a screenplay for Side by Side would be aided and enhanced by Professor Ray’s meticulous research, his informative narration that moves us through the court speeches with appropriate dispatch, his accounts of media coverage that enhance the drama now as it did then, and his descriptions of the badlands of Lafayette, Pontotoc, and Calhoun Counties that set a sordid Yoknapatawphian stage for what ultimately is a squalid incidence of multiple murder.
Death as the circumscription of all human activity is also the Great Equalizer, uniting men of all colors on the same killing floor.
Jackson: The Way We Were . . .
In 1981, Forrest L. Cooper and Donald F. Garrett published a selection of old postcards of Jackson from about 1902 until the mid-1950s, with more than 90% prior to 1920. The text was written by Carl McIntire, a self-professed “reporter, not a historian,” who nonetheless spent an enormous amount of time on the project, doing extensive research and interviewing more than 300 people. McIntire admitted to a margin of error, but states that “for the most part, all the dates and places are correct.” The book had a very limited printing and has hitherto never been republished. Mafiosos, Murders, and Gay Extortion in Biloxi
On September 14, 1987, Judge Vincent Sherry and his wife, Margaret, were slain in their Biloxi home at the hands of the so-called Dixie Mafia, a loosely knit group of traveling criminals performing residential burglary, robbery and theft based in what was called “the Strip”, a string of seedy bars, strip joints and gambling parlors that flourished along Mississippi’s Gulf Coast from the 1960s to the 1980s.
“It was out of control,” said retired Special Agent Keith Bell, referring to the level of corruption in Biloxi and Harrison County—so much so that in 1983 federal authorities would designate the entire Harrison County Sheriff’s Office as a criminal enterprise. Special Agent Royce Hignight initiated the investigation of the sheriff and was soon joined by Bell. “They were doing anything and everything illegal down here,” said Bell, who grew up on the Gulf Coast. “For money, the sheriff and officers loyal to him would release prisoners from the county jail, safeguard drug shipments, and hide fugitives. Anything you can think of, they were involved in.”
Bell is quick to point out that there were plenty of honest officers on the force, and some would later help the FBI put an end to the culture of corruption in Biloxi. But for a long time, Sheriff Leroy Hobbs and his Dixie Mafia associates held sway. The Dixie Mafia had no ties to La Cosa Nostra. They were a loose confederation of thugs and crooks who conducted their criminal activity in the Southeastern United States. When word got out that Biloxi—with its history of strip clubs and illicit gambling—was a safe haven, the criminals settled in.
At the same time, members of the organization incarcerated at the Louisiana State Penitentiary at Angola were running a “lonely hearts” scam extorting and blackmailing gay men with the help of associates on the street. Dixie Mafia inmates at the Louisiana State Penitentiary at Angola were behind a scam, led by Ringleader Kirksey McCord Nix—a convicted murderer serving a life sentence without parole—who believed that if he raised enough money he could buy his way out of jail. Inmates paid guards to use prison telephones. Then they placed bogus ads in homosexual publications claiming they were gay and looking for a new partner to move in with. The men who replied to the return post office box address got additional correspondence and racy pictures. But there was a catch—the scammers told their victims a variety of lies about why they needed money before they could leave where they were.
“A lot of money came flowing in,” said retired Special Agent Keith Bell. “There were hundreds of victims.” Men from all walks of life—professors, mail carriers, politicians—fell victim to the scam. “One guy in Kansas mortgaged his house and sent $30,000 to the scammers over a period of months,” Bell recalled. To add insult to injury, some of the inmates writing letters eventually confessed the scam to their victims—and then extorted even more money by threatening to “out” the men if their demands were not met. The scam brought in hundreds of thousands of dollars—money they entrusted to their lawyer, Pete Halat, but he spent the money.
When it came time to hand it over to the crooks, Halat said the cash had been taken by his former law partner, Vincent Sherry. So the Dixie mob ordered a hit on Sherry, a sitting state circuit judge who had no direct ties to the criminals. On September 14, 1987, Sherry and his wife Margaret, who was a member of the Biloxi city council, were murdered in their home. Pete Halat was of course not exactly dumbstruck when the Sherrys were murdered. Halat, called upon to give the funeral eulogy, delivered a bizarre, long-winded speech that ruminated on Biloxi’s need for “honest, open and accountable government.” The crowd packed into church on that somber September, 1987 day gawked at his unmitigated gall of turning a sad occasion into a political event. Halat even passed out copies of his speech to the media. A few weeks later, he announced he was a reform candidate for mayor of Biloxi. And he won.
Gulf Coast residents were shocked by the murders. Local authorities worked the case unsuccessfully for two years. The FBI opened an investigation in 1989, and Bell was assisted in the investigation by Capt. Randy Cook of the revamped sheriff’s office—Leroy Hobbs was convicted of racketeering in 1984 and sentenced to 20 years in prison. The federal investigation into the Sherry murders lasted eight years. In the final trial in 1997, Pete Halat was sentenced to 18 years in prison. Kirksey McCord Nix—the Dixie Mafia kingpin at Angola who ordered the hits—as well as the hit man who killed the Sherrys each received life sentences.
Mississippi legitimized legalized gambling in the 1990s. Today, the funky roadhouses and strip joints on the beach road have been replaced by shiny casinos, wrung out or rebuilt after the soaking by Hurricane Katrina in 2005. City fathers allow that the Dixie Mafia may still be operating on the Gulf Coast, but as a mere shadow of its former might and ruthlessness.
Howard Bahr: The Green Diamond
In the decades following the Great War, American culture shook itself out of the Nineteenth Century and woke to fresh ideas and new possibilities. Youth, having liberated Europe and ended war forever, had a voice for the first time in our history. Cynicism and joi de vivre found ways to cohabit, and under their common roof, Youth created a new way of living. Jazz was the soundtrack. Flappers in short skirts, long beads swinging, danced the Charleston, the Fox Trot, the Shimmy: girls smoked cigarettes and drank gin in public and were picked up from Mama’s house by sheiks in fast cars. The Imagists’ admonition–“Make it new!”–resonated everywhere.
Downtown, the staid dignity of the Chicago School gave way to soaring silver skyscrapers that transformed city skylines. In the suburbs, new houses traded a classical vocabulary for the sleek lines, portholes, and minimalist décor of the Moderne. Aluminum and glass replaced busy fretwork; cluttered, over-stuffed parlors vanished, and porches disappeared; tall Lombardy poplars, nature’s answer to Arts Decoratif, graced the landscaping. Even everyday objects like radios, toasters, pencil sharpeners, vases, clocks, mirrors, and telephones took on new forms in the up-to-date household. The automobile industry, ever alert to the public’s whims, abandoned the boxy bodies and spoked wheels inherited from horse-drawn carriages and began to experiment with streamlining, a movement that culminated in the startling 1936 Chrysler Airflow.
When that car and others like it appeared on showroom floors, they represented not only a revolution in style, but in movement as well. Newly-paved highways beckoned, and the motorcar, liberated from Sunday drives and trips to the park, was recast as a ship of dreams. The world was opened up in an unprecedented way: as Dinah Shore would sing in 1953, “See the U.S.A. in your Chevrolet! America is asking you to call!” Travelers, once bound to the railroads, could now set their own schedules, carry as much baggage as they wanted (no charge!), and rest in the friendly motor hotels springing up in the wilderness.
American railroad companies looked on this newfound Freedom of the Road with misgivings. Railroads had bullied steamboats off the inland rivers, now, in their turn, they were threatened by the automobile. Passenger revenue was still high, but the Detroit competition was available, cheap, and attractive to the public. In 1882, when the railroads were at the height of their tyrannical power, Commodore Vanderbilt of the New York Central could proclaim, in an unguarded moment, “The public be damned!” Needless to say, by the mid-1930s, this sentiment was no longer viable.
To meet this challenge, railroad engineering and PR departments tapped into the Moderne craze and created the Streamliner: a first-class, air-conditioned train with sleek aluminum coaches, specially assigned engines, and a color scheme that ran from the locomotive pilot to the end of the observation car. Design luminaries like Henry Dreyfuss and Raymond Loewy brought steam locomotives into the realm of high art: when the New York Central’s Twentieth Century Limited (Dreyfuss) and the Pennsylvania’s Broadway Limited (Loewy) raced each other eastbound out of Chicago on parallel tracks, they represented a pinnacle of design unequaled for American industry.
Another innovation was the articulated “trainset,” the railroads’ first great experiment with diesel-electric power. Articulation meant that the power car” (that is, the locomotive) and all the coaches shared wheel trucks and were permanently coupled together, save when they went to the shops for maintenance. Trainsets were short–five or six cars in the consist–ran on tight schedules, and were well-appointed. The CB&Q fielded several silver, shovel-nosed Zephyrs. The UP and C&NW ran a joint City of Denver, the Santa Fe’s Chicagoan/Kansas moderne aesthetic.
The schedule of the Green Diamond was ideally suited for businessmen traveling between the great cities of St. Louis and Chicago, with a stop at Springfield, Illinois’ capitol. Northbound, the train departed St. Louis at 8:55 A.M. and arrived in Chicago five hours later. Southbound departure from Chicago was at the close of the business day, 5:00 P.M., with a St. Louis arrival at 9:55 P.M. Along the way, passengers enjoyed such amenities as air-conditioning, a radio in every car, and excellent dining (see Jesse Yancy’s article below). In addition, the train carried a stewardess trained in dictation, and a registered nurse for the hangovers and heart attacks common among Capitalists in the Great Depression years.
The Green Diamond must have been quite a sight as she glided through the cornfields on a summer’s day, or flashed her green against the snow of winter. People accustomed to a steam engine’s mournful whistle no doubt looked up when #121 blatted her air horn at grade crossings: perhaps they heard in it the sound of the Future, but probably not. Locomotives would always and evermore be driven by steam, just as the Great War had ended all wars, and drugstores would always sell Paregoric.
In the end, the very success of the Green Diamond led to her demise. The St. LouisSpringfield-Chicago schedule proved so popular that passenger traffic began to exceed the limited capacity of the trainset, which could not accommodate the addition of extra cars during a surge of ridership. In 1947, eleven years after her glorious debut, IC #121 and her articulated companions were replaced by conventional, more practical diesel locomotives and coaches. The train’s name and schedule remained, but the moderne novelty was gone forever from the Land of Lincoln.
The final chapter of the trainset’s story began at the Illinois Central’s Paducah shops, where she was given an overhaul. When she emerged, she was freshly-painted in the same two-tone green, but the Green Diamond banner had been erased from her sides. Train crews, doubtless Bemused by the assignment, took her across the various divisions to Cairo, Memphis, and at last to her new home of Jackson, Mississippi. Why she was sent there instead of somewhere else is lost to history, but for the next three years–until she was sold for scrap–she traveled the Louisiana Division between Jackson and New Orleans. Now called the Miss-Lou, her timecard schedule was almost identical to that of the Green Diamond, and she once again provided the reliable, courteous service for which the Main Line of Mid-America was famous. The Miss-Lou moniker derived, of course, from the states through which she traveled, but, as Yancy explains below, it was by another name that she entered the folklore of the Deep South.
We are given some things in life–the Iris, for example, or a young girl’s face–that seem the more beautiful because we know their flowering will not last. We treasure less, perhaps, those things we foolishly believe will last forever. So it was with the great passenger trains that once flowed majestically across the Republic: colorful carriers of Dream and Promise in a time when pride was still part of the national character and anything was possible. They are vanished now, every one scattered across the trash-heaps of memory, and few remain who remember them at all. They will not come again; that they once passed among us is testimony to what we had, and to what we can never have again.
(Along rails running among the homesteads of south Mississippi, the farmers along its route noted the green train’s resemblance to a pest, and before long became affectionately known the Tomato Worm. The Diamond was retired on August 8, 1950.)
A Lumber Town on the Skuna River
Dennis Herron Murphree (1886-1949) of Pittsboro, Mississippi has the singular distinction of serving twice as governor of Mississippi without ever being elected to office. He was twice elected to the lieutenant governorship, once in 1923 and again in 1939. In each instance, he succeeded the governor who died in office and completed the term of his predecessor. In March 1927, he became Governor of Mississippi after the death of incumbent Henry L. Whitfield and served for about ten months until Theodore G. Bilbo, who defeated Murphree in the Democratic Party primary by 10,000 votes, was sworn into office in January 1928. With the death of Gov. Paul B. Johnson, Sr. in December 1943, Murphree finished out the three weeks left in Johnson’s term, serving until the swearing in of Thomas L. Bailey in January 1944.
According to historian James M. Young, Murphree wrote/compiled his county history in 1928 but that it wasn’t actually published until sometime later. “Some references I’ve seen show the publication date as ‘unknown’ and some show 1948. I remember that The Monitor-Herald published it (in installments, I think) at least two times, and I suspect that the first time was in 1948 and that copies in the form of a book were also made at that time. The last chapter of Murphree’s history deals with the organization of Bruce and the last paragraph in the history is the one I sent you (the following text; jly) concerning the roads out of the new town of Bruce. Murphree’s version consists of 16 chapters. The first 5 or so (short chapters) were written by him, and then a section covering 1852-1876 which had been written by Judge J.S. Ryan was inserted. This was followed by a section consisting of a long letter covering the legislative creation of the county, written by Judge J.A. Orr (who introduced the bill in the legislature). A section covering the period 1875-1900 was written by Thomas Martin Murphree (Dennis Herron Murphree’s father) followed that, and the final section was written by Dennis Murphree and was titled “History of Calhoun County from 1900 to 1928”. The Orr, Ryan, and T.M, Murphree sections are heavy with who got elected to office. Dennis Murphree’s section has some of that as well but also lots of more interesting stuff; for example, he has a fairly detailed account of the murder of Robert Lee Crawford, Papaw Young’s brother-in-law, in the yard of the T.W. Young house across from the church at Ellzey. The section written by Thomas Martin Murphree was published by The Calhoun Monitor (in Pittsboro) at the end of the summer of 1904. 500 copies of the “booklets” (as Dennis Murphree called them) were printed and sold for 25 cents each.”
In order to tell the story of the “Skuna Valley Railroad” and the new town of Bruce, in Calhoun County, Mississippi, it will be necessary for me to go a long way back as to make the proper beginning.
It was, I think, in the year 1901, that a very smart, shrewd old Michigan lawyer first came into Calhoun County. His name was Roger W. Butterfield. Mr. Butterfield had watched the huge white pine forests of Northern Michigan fall relentlessly under the lumbermen’s saws and axes, and he realized that timber would sometime be a real item of value, and so having some money to invest, he looked about over the country for some places where timber could be bought cheaply and in bountiful supply. Somehow, he chose the South and Calhoun County, Mississippi as the base for his operations and investments. He sent several men of his own force into the county seeking to buy land and timber, employed Attorney J. L. Johnson at Pittsboro as his local attorney and then hired Andy J. Bounds of the Bounds neighborhood and one of the county’s best citizens to represent him as land buyer and local representative.
These people immediately entered on a land and timber buying campaign which lasted several years. They took their time, looked about, located land which was not expensive and which was covered with fine timber and then made the purchase. They did not seek to link up all the tracts, although naturally they preferred to buy in a block as much as possible. In the main, however, they avoided buying any in cultivation. They bought large acreage in the Schoona River Valley, and they bought many tracts in the hills. Most of their purchases, however, were north of a line which might have been drawn east and west through the center of the county. When finished the Butterfields owned some twenty-five thousand acres of timbered lands in Calhoun County and some three thousand in Yalobusha with a small amount in Lafayette and Pontotoc Counties. The average price paid for these lands was approximately $2.50 per acre.
It would be a real treat for members of the younger generation to see today the giant trees which made up a large part of the growth on these Butterfield lands. In the river and creek valleys the huge forked leaf white oak trees grew often fifty feet from the root to where the first limb appeared, and several feet across the base. Other hardwoods grew in like size and great abundance. In the hills, the old “virgin” pines dotted the hillsides and they too were a sight to behold, because they grew so tall, so straight, so uniform and with only a small cluster of limbs in the very top. On the hillsides too as in the valleys, grew every specie of hardwood likewise in great abundance. Until the coming of the Butterfields, these trees were valueless on the market. In fact, the first time in my life I ever knew about timber of any kind being sold was when some stave workers came into Schoona Valley near where we lived at Oldtown and paid $1.00 per tree for huge over cup and white oak trees several feet through, provided these trees would “split” after being cut down, meaning that provided they could easily be split up into staves six feet long. If the tree did not split well, they simply abandoned the log and went away leaving these huge logs, the kind which became almost priceless in later years, to rot where they fell.
I well remember that during the winter of 1902-3, Mr. Butterfield sent a young lawyer and a young lady who was an expert clerk, though not a lawyer, down from Michigan and they spent the winter in the old courthouse making abstracts of the land which Butterfield had up to that time purchased. These two people were a source of much amusement to the young people of that date, with their, to us, Northern accent, quaint expressions, unusual customs, etc. I am sure that on their part, they found us even more amusing. Time passed, and Roger W. Butterfield went the way of all mankind, but his heirs held on to the Calhoun County lands and timber and each year paid their taxes regularly, while from time to time, a few more acres were bought and added to their holdings. Along about 1920, however, these owners began to feel the urge to sell and dispose of their property. This was probably because timber prices had advanced to such an extent that they could secure a huge profit on their original investment; and, second, because with the cutting of canals in the rivers and creeks and the issuance of bonds for roads, schools, etc., their Calhoun county taxes, which in the beginning had been practically nothing, began to be a heavy burden.
I have related how that over all the long years, it had been the dream of the people in Pittsboro and the Northern section of the county that someday they would see the building of a railroad into that section. Along about 1921, it became known that the Butterfield interests would sell their holdings in Calhoun, and hope began to be revived as to the possibilities of a railroad being built out into our section in order to carry the timber. It will be remembered that this was in the days when the huge log trucks powered by gasoline and used over concrete roads were utterly unknown in our section. Much discussion was had between various citizens and firms seeking some plan to accomplish the result desired. Acting on instructions from an organization of Calhoun County business men, a meeting was arranged whereby representatives would go to Chicago and there meet with Mr. Markham, President of the Illinois Central Railroad, and seek to interest him and his railroad in the idea of building a short line of railroad either from Coffeeville or Bryant out to Pittsboro. Mr. H. H. Creekmore of Water Valley, a native Calhoun citizen, Mr. Jim L. Johnson and I were chosen by our people as their representatives on the proposed trip. This I remember it was in 1922.
Agreeable to plan, we three went to Chicago and had a lengthy and friendly session with Mr. Markham. We found him very sympathetic to the proposal. Naturally so, since it would mean an immense amount of tonnage to be hauled by the Illinois Central Railroad after it had been brought out to their main line. However, Mr. Markham would not agree to undertake the building of the short line.
He promised that IF we could get some timber manufacturer or sawmill company to buy the Butterfield tract and the railroad right of way and do the grading for the new railway, the Illinois Central would furnish the steel rails for the road and when finished would also furnish the locomotives and box cars to use on the new railway on a very long time sale plan with a low interest rate. Our people were very well pleased with the report of the Committee, and then began an effort to try to interest some timber company or manufacturer in buying the timber and building the railway. This kind of effort went along over a period of two or three years. I remember that on my own personal expense and with the consent of the Butterfield folks, I placed an advertisement costing a neat sum in the Manufacturers Record of Baltimore, briefly outlining this situation. I had a number of replies and furnished each with quite a bit of information. I had nothing to do with the making of the deal between the Bruce Company and the Butterfield heirs when the timber we have been talking about finally passed out of the Butterfield hands. I have always thought, however, that it was easily possible that all the planning, talking, advertising and publicity which I and others in Calhoun County had been doing, had something to do with bringing this matter to the attention of the Bruce Company folks and therefore the ultimate result.
Anyway, about 1924 or early 1925, the Bruce Company of Memphis, Tenn., purchased outright all of the Butterfield holdings in Calhoun and adjoining counties. Soon thereafter it began to noised around that their plans included the building of a standard gauge, common carrier railroad, from Bryant’s Spur, located four miles south of Coffeeville on the Illinois Central Railroad, up the Schoona Valley to the neighborhood of the old town of Pittsboro. In my service as Lieutenant Governor, I was often called on to serve as Acting Governor on those occasions when the Governor left the state. On one of these occasions, for me a very happy coincidence, Attorneys H. H. Creekmore and N. I. Stone, came to the Governor’s office, bringing with them the proposed Charter of Incorporation of the “Schoona Valley Railroad.”
The Attorney General of the state, who was Hon. Rush Knox, himself a native son of Calhoun county, but at that time a citizen of Chickasaw, approved this charter and at ten o’clock A.M. on the 1st day of June 1925, as Acting Governor of Mississippi, it was my sincere pleasure to sign the Charter for this railroad for which along with many other Calhoun folks I had worked for and hoped for so long. I pause long enough to say that later on, by amendment, the name of the railroad was changed from “Schoona Valley” to “Skuna Valley”. This, I think came as a result of effort made by Will C. Bryant, who had always claimed that “Skuna” was the proper way to spell the name of the Valley. Personally, I think “Schoona” is correct, because all of the old records, manuscripts, etc., which I ever saw in Calhoun County spelled it that way. Slowly the new railroad was built, and during the year 1926, progress was made in laying off and planning the new town. The name decided upon for it was “Bruce” because of the fact that the Bruce Lumber Company of Memphis, Tenn., was the force behind the plan.
Governor Whitfield became ill during the summer of 1926 and spent almost all the rest of the year in a hospital in Memphis. So I was very busily engaged during the period acting as Governor during his absence. It is my recollection that in such capacity I also signed the Charter for the new town, but of this I am not positive. Anyway they named one of the streets in the new town for me, for which I have always been grateful. Governor Whitfield returned to Jackson in February, but rapidly grew worse and died on the 18th day of March 1927.
After the Constitution, I succeeded him, and on taking the oath of office became the 35th man in our state’s history to be Governor of Mississippi. It has not been my intention at any time to clutter up these pages with stories of my various political campaigns. I will say again, however, that Calhoun County people have never failed me, and I have carried the county by a large majority in each and every race that I made. This has always been a source of much pride and gratitude to me. By force of circumstances, I was “pitchforked” into the race for Governor in 1927. I had not planned to run, and felt always that I would be defeated but after Governor Whitfield’s death, it became necessary that I run or forever be branded as one who was afraid to try. In July 1927 my Calhoun County Campaign Committee planned a huge barbecue and political picnic for me and chose as the spot for this great gathering the location of the brand new town of Bruce. I think that it was on July 4 1927. The location was what is now the public square at Bruce, which at that time was only an old field with only one or two houses. Thousands of people from all over the state attended, and it was truly an enthusiastic and heartwarming affair. This was the very first public gathering ever held in Bruce, Mississippi.
The new town of Bruce grew rapidly. Besides the huge Bruce Company mill, several other timber manufacturing plants were established there. A number of people from over the county moved in and set up various lines of business. Too, there was in influx of immigration from several of the northeastern counties of the state, particularly from Tishomingo and Alcorn counties. These new people settled largely in the Bruce area and many of them still remain in that section. Another thing which contributed to the growth of the new town was the policy adopted by the Bruce Company of selling off its valley lands as soon as they cut the timber. The land bought at a reasonable price was immediately opened up for cultivation so that now, for miles up and down the Schoona Valley, where I had as a boy hunted for squirrels, turkeys, etc., there flourished the finest farms in the country. New roads began to be projected: one going east toward Houlka out of Bruce, another west down the Schoona valley toward Coffeeville; another toward Water Valley. Neither of these roads has been fully improved as deserved, but all hope that they will be in good time. Laying out of these roads had an odd effect on the old time traveler who returned to view the section. Oftentimes he found himself “lost” in a neighborhood or area where in former years he was absolutely familiar.

Okay, let’s straighten this out once and for all. Those big orange roots you find in the grocery store are not yams. Got that? As a matter of fact, it’s a good bet that most of the people who just read that have never even seen a yam.

Still and all, you’re bound to find cans of yams in many local grocers, but due to USDA requirements, you’ll find “sweet potatoes” somewhere on the label.
