Our grocery deli serves these potatoes—along with rice and two kinds of grits—as sides on its breakfast buffet. Cube red potatoes and parboil until just firm. Drain, dust with seasoned salt and pepper, then pan fry until soft through and crusty.

Allison’s Wells

A primary function of Mississippi Sideboard is to provide access to documents of specific interest in danger of being lost. Hosford Fontaine’s Allison’s Wells: The Last Mississippi Spa (Muscadine Press: 1981), certainly qualifies. This wonderful work was printed only once, and, according to Fred Smith of Choctaw Books, the press plates were melted.

 

When Allison’s Wells was destroyed by fire in January, 1963, the event was considered a major calamity for the city of Jackson, since the resort functioned as a significant event venue for the city as well as a popular weekend getaway and the site of a thriving artists’ colony, but the spa had a long history of appeal throughout the Mid-South. Periodicals from the 1890s through the 1920s are filled with reports of people traveling to Allison’s, and advertisements were run in papers across mid-America both by the hotel itself and by the Illinois Central Railroad whose small depot at Way, Mississippi (nine miles north of Canton) was only about a mile away. An Illinois Central notice promoting five resorts, including Allison’s, located along its line ran in many newspapers in 1902.

The New Orleans Times-Picayune in 1921 advertised I C RR rates from New Orleans to Allison’s Wells as $8.65. It was $26 to St. Louis and $33 to Chicago. The healthful benefits of the mineral water at Allison’s were an important attraction. An Allison’s Wells ad in the 1921 Times-Picayune stated that: “Time for a vacation? Here’s the place. Rest and Recreation, Hot Sulphur Baths for Skin Disorders and Unsurpassed Mineral Water for Malaria.” The November, 1953 issue of Lincoln-Mercury Times described it as: “A hotel, a resort, an inn, a spa, home, grandma’s house, a weekend at a wealthy friend’s — it combines the best of all of these.” A 1921 description of Allison’s Wells from the Grenada Sentinel could just as easily describe the Gray Center which now occupies the site of the old resort. It is “…an ideal place to commune with nature and to forget for a short while the turmoil and rush of a busy world.”

It is hard for me to realize that Allison’s Wells has to be explained, for it was such a special part of Mississippi life in the forties and fifties. The prospect of a weekend at Allison’s was enough to sustain me through the week; a thirty-mile drive from Jackson on twenty-five cent gasoline led to another world. There at the end of a winding gravel road off old Highway 51 the rambling resort hotel sparkled in summer with its seasonal coat of white paint, and in the kitchen an ancient black cook produced culinary marvels on a fragrant wood stove. The old well house was a reminder of the magical properties attributed to its healing waters; waters temporarily healing and more palatable were available in the Fishes’ Club. The Pavilion was the focal point of constant activity, from snapping beans to painting portraits, and the heart of Allison’s was the dining room, dim and cool, where dignified family servants served memorable meals to diners from Jackson, Canton, the Delta, the hills, and metropolitan areas as far away as Memphis. Presiding over the whole production with grace and charm were John and Hosford Fontaine, the hereditary proprietors, who dressed for dinner because dinner was worth dressing for, and expected you to do the same.

Perhaps it should be noted that Allison’s Wells was not for everybody. There were and are those who might prefer a Holiday Inn. It is true that at Allison’s there was a good deal of uncertainty. Allison’s regulars learned to expect the unexpected, and that was part of the fun. For example, it happened upon one occasion that the dreamy youngster at the registration desk assigned two honeymoon couples to the same bedroom. When the Art Colony was in session experimental art might appear mysteriously in the guest rooms, the plumbing was always independent, and for several seasons chicken wire was much in favor for decorating effects. Mattresses and springs varied in quality from room to room, and old friends might be quickly switched from A-grade accommodations to an A-minus room if an A-plus dignitary of church or state hove into view. No matter, this is the stuff conversation is made of, and no planned activities were necessary so long as the guests had the other guests to talk about.

In a laudable effort to cool the dining room one hot Mississippi summer, an ingenious window fan was rigged up, which was supposed to blow through wet straw, thus cooling the air in the dining area and producing an early version of air conditioning. The straw was to be kept wet by a hose, which ran from a tub of water on the porch to the straw packed in the window. On the occasion of a July birthday party, soap bubbles suddenly burst upon the startled diners. At first, the dinner guests were simply amazed. They later compared notes, and reported that they all saw spots before their eyes at the same time. After much slapping at the air, the spots were identified as soap bubbles, which burst impartially into the soup, the salad, and the entree. It seems that the hose had inadvertently been immersed in the laundry tub, thus producing the unexpected visual effects. Was Hosford daunted by this phantasmagoria? Not at all. When a sudsy guest complained she smiled sweetly and said, “Darling, isn’t it wonderful? Where but at Allison’s could this have happened?”

As has been shown, Hosford was an early exponent of positive thinking. She could be seen any cold morning in early spring or late fall strolling gracefully toward the ice-cold swimming pool, fed by waters which must have originated in a glacier. Without changing pace, she would step lightly into the pool, do a few brisk laps, and float out, with never a sign to indicate that the temperature of the water was below freezing. This attitude enabled her to convince newcomers to the spa that shelling peas was fun, darning old table linen an art, and dredging leaves out of the swimming pool a game. Regulars knew better, but all had to serve their apprenticeship.

The ultimate reward for being a good guest was an invitation to “the Retreat.” This meant a drink before dinner with John and Hosford in their bosky hideaway beneath their own apartment. A basement space had been screened and floored with bricks; outside a cornfield pressed close, and vines of various denominations clung to the screens. Inside there was candlelight and conversation. If there should be a lull in the conversation, which was unlikely, you might hear an owl hoot or a dove mourn. The Retreat’s furnishings were eclectic, and so were the guests. John and Hosford might gather together a collection of artists and writers, clergymen and cotton planters, bridge players and ordinary people, provided they all seemed to be guests of good will. If their will was not good when they entered the retreat, it was usually good when they left. A white-coated waiter brought ice and real napkins, two drinks, no more, no less, were served, tall tales were told, and the stories got funnier with the second drink.

Allison’s Wells burned to the ground in 1963, shortly after John’s death. John’s water colors, Hosford’s oils, as well as papers, books, silver, antique furniture, and souvenirs of almost fifty years were lost in the fire. Many of us who belonged to the Allison’s enclave lost more than that. We lost a special place that had preserved for us a special time and enhanced our lives.

These random memories, perhaps inaccurate, may serve to suggest the spirit of the place. I hope so. Allison’s was worth a book, written by John with Hosford as the heroine. As it has fallen Hosford’s lot to write the book as well as play the lead, I’m sure she is equal to the task.

History of Allison’s Wells before the Sam Wherry and Latimer Families

In 1899 my Grandfather, Sam Wherry, a horticulturist, who shipped from Durant the first carload of strawberries from the state of Mississippi, bought the property of Allison’s Wells from Mrs. Mary B. Allison, a widow originally from New Orleans.

Mrs. Allison first lived on the Original Natchez Trace where the gullies are. When the road was opened off of Highway 51 a main road to Way to the Illinois Central Railroad, she moved to Allison’s with her family. In 1879 Parson Hargon dug a well for the Allison’s and discovered this strange tasting water – medicinal. This health-giving water brought people to come and drink the water and buy it. It was of particular value in the treatment of malaria, a purgative as well as a tonic water, with all the minerals. So it was necessary to build the cottages on the hill for health seekers who came for weeks and months, as well as to enlarge the original home for guests.

When Sam Wherry, my grandfather bought their place the Allison’s moved about a mile away toward Way, which became known as the Allison’s House. Mrs. Allison’s son, Matt, spent his entire life time searching for the supposedly buried gold in the gullies off the Natchez Trace during the Civil War. A life time of digging, but he never found it. The Allison’s Water was from a shallow well pumped by hand — a red pump and it was sparkling, bubbling, ice cold and quite palatable at the well, but harder to drink when allowed to settle, because the heavy minerals had a slightly oily film which developed. Such a shock to attempt to mix an alcoholic drink with this ice-cold water for it turned the drink black from the content of the sulphur.

.A History of ALLISON’S WELLS from 1890 to 1938

In 1900 under Sam Wherry, Allison’s was a convivial health and pleasure resort, first famous for the heavy mineral water — Allison’s Water, so called – which was a tonic as well as a purgative. The resort developed with my father first a partner – Latimer and Wherry. Then Wherry sold his interest to P.H. Murphy, his son-in-law, W.H. Jeffers, a contractor, who was in charge of all the extensive building — the men’s row changed to the annex with a real bath house for the men who took the sulphur baths and massages.

The spa stayed in the Wherry connections until Latimer became sole owner in 1909: Latimer & Jeffers until 1909 and from then until 1963, D.C. Latimer & Co. In the continued search for pure drinking water the sulphur well in the lawn was discovered and the curative power of it heated helped to relieve tension and was found to be a real aid in curing any skin trouble. A bath house for men and women was built on the lawn and massages given first just for the men. The emphasis continued under the various partners to be health first with the value of the sulphur baths combined with the real cure of the Allison’s water. Of course, the massages by a trained masseuse was a part of the treatment. Dr. Taylor, a woman osteopath, trained the masseuses. She gave osteopathic treatments and the entire family really enjoyed having a treatment — Mother particularly after a busy day in the kitchen – so relaxing.

Allison’s was a busy, happy place buzzing with action from May through September. The horse drawn bus met the trains for guests at Way four times a day, and the wagon took the water to the station to ship and bring back the trunks of the guests. They came to stay for a month with their families particularly from the Delta, New Orleans and Memphis. It was fun to see the new guests arrive at Allison’s and hear Charlie Plez, the Porter, describe them. The days were filled with the pleasures of the time – horseback riding, buggy riding, hay rides, walks to the gullies, taking pictures in the gullies, tennis, croquet, euchre and auction bridge with expensive, elaborate prizes, music by Bud Scott’s orchestra from 10 to 11 in the pavilion every morning. Bud played for luncheon and dinner every day and the dance every week night with a ball on Thursday night.

An early memory is hearing my grandfather and his two sons rattling the small glasses filled with ice, sugar and bourbon about 10 a.m. – a cold toddy. My first taste later of the remains of the cold toddy – ice, sugar and bourbon.

Allison’s was noted for its fine food. It was such a personal operation by the family that it was really impossible to get anyone who could run the kitchen. My mother, Norma Wherry, managed the kitchen with first chefs from New Orleans and Memphis, but later tenants from the place were trained. My grandmother, Candace Barger Wherry, preceded Mother in running the kitchen. Allison’s menu was developed from cooking from scratch – home grown vegetables, fresh fruit from the orchard, wild muscadines brought from the swamp; even quail and wild ducks occasionally; hams, stuffed sausage, bacon cured in our smoke house. A Jersey herd furnished yellow heavy cream, fresh churned butter and buttermilk; cream of cheese dripped from a sack. Squabs were also served from our own pigeons. All cooking was done from two big black stoves with wood only for fuel until 1955 when an electric stove was added for baking cakes.

Health, gaiety, joy of living was uppermost – silver epergnes filled with fresh fruit and flowers, finger bowls, butter served in high silver compotes with small individual silver plates. The head waiter and white coated men waiters added the right touch of formality and welcome.

Wherry and Latimer operated with vision far ahead of their time. They were the first to have gas lights, then generated their own electricity: Electric lights, running water, toilets indoors and bathroom at the end of the halls and later in each room.

Allison’s was a farm for seven months out of the year and five months a health and pleasure resort. The Opening Ball was the 20th of May usually when Ole Miss ended the semester, and the closing ball around Labor Day. Farming was a real activity, cotton, corn, cattle, pigs, pastures and ponds. The Allison’s water was shipped by the 5-gallon jugs, which was a year-around operation. Regularly a car load of jugs of water would be shipped to and sold by a drugstore in Athens, Georgia. These jugs, if you can find one now, sell for $75.00, if perfect.

My father Douglass Colquhoun Latimer and my mother, Norma Wherry, had a certain formality. Guests dressed for dinner and the dance that followed. Father often called the Virginia Reel and Square Dance at night. Men had to wear coats in the dining room; but if you did not have a coat, he had hooks outside of the dining room with coats on them, which you could borrow. All of the family dressed before they left their bedroom. Mother always looked lovely. She was beautiful – brunette with brown hair and brown eyes and a skin you loved to touch. Daddy called her “Young Lady”. She was ever a Young Lady. She died at age 53.

Flowers were her hobby, along with sewing and embroidery. One year the front was filled with enormous chrysanthemums and the Maréchal Niel roses all across the front – a mass of yellow roses — so fragrant. When everyone dressed for dinner in the evening, my one desire was to look as lovely as the young ladies. So, one day, at the age of 7, I wore several dresses and a pair of red slippers. It did not work.

After being dressed one afternoon in white, which was normal, we children all went plum hunting. Of course, it was muddy. We came in bedraggled and Mother immediately put us to bed without dinner. Daddy was very stern, but very soft hearted. He fixed our dinner himself – a thin broiled steak like veal, fresh tomatoes and buttered hot rolls — and brought it to us. Mother had punished us, so she really did not mind. On went the music outside of our room – Bud Scott at his best – probably feeling sorry for us in bed.

School days — a public school of one room, where we had to have five pupils. The two Allison girls along with the three of us, Thelma, Sam and me. We walked to the end of the Men’s row, so called, to the Fishes Club for our schoolroom. This had been the room where the men gambled. A professional gambler usually spent the summer at the Wells.

Later we caught the train at Way to go to school in Canton usually driven to the station by our Uncle Harvey Latimer, who lived with my grandmother, Angelena Lancashire Latimer, born in London, England. The property was bought in 1905 and my father built the home, now Gray’s Center an Episcopal Center, for my grandmother and Uncle Harvey. I lived with them for a year when I was seven years old.

We had three modes of transportation every school day. At first either horse and buggy or carriage and then a car to catch the train at Way – No. 33 to Canton. We then walked from the Canton station a mile to school and perchance if we forgot our lunch and left it on the train, we walked to town to Mosby’s Drug Store to charge 50 cents and buy an oyster loaf for lunch. The money was charged to Allison’s and probably no bill was sent until after the Fourth of July, which was the financial cure for Allison’s.

Douglass, the youngest, who never wore shoes or a hat to school, frequently had the train passengers taking up a collection to buy him shoes. No, he did not take the money, but instead got real mad. When Douglass was in the first grade in the Canton School, he missed his train one winter afternoon, and when he did not arrive at Way, a frantic search for him began. Winter dark rapidly coming — cold — and where was the little boy? The stark terror when Daddy realized that Douglass must be walking home on the railroad track. Visions of seeing him crushed by the on-coming trains. The blessed relief to rush to meet this tiny sobbing child that had walked ten miles to get home.

Strawberries were grown commercially and we children picked some and were paid extra for it. I sold The Commercial Appeal—a source of income—as a child. Douglass Latimer was a great gardener and we had a large vegetable garden as well as flowers—worked in and managed by Daddy. He rose early, worked in the garden and oversaw the milking of the Jersey herd. We sold butter in Canton.

When he appeared for the day Daddy had on a Manhattan shirt starched by the laundry. One of his joys as he ran the office was the usual afternoon set back or poker game on the porch outside of the office with close friends. He had many – from all walks of life. We all adored him and though over 50 years have passed, he is an ever-present personality. He was ever filled with sternness and deep warmth and love for humanity and especially for his wife, “Young Lady”, and his children.

As 1938 opened with John and Hosford coming home to Allison’s it brought back memories of life in Boston and how Allison’s was remembered there with such nostalgic memories that when the radio would play “Take Me Home Again Kathleen” I would burst into tears, though quite happy in Boston. And John and my son Doug would laugh. I talked about Allison’s as I went through life – a period filled with happiness, dancing, playing dolls, playing bridge, euchre and early and late dates, with the great love of my mother and father and family. When I think of it today it is like another world. As children and young ladies, we were never presented with the problems, but of course there must have been problems.

John was first advertising manager of The United Drug Co. and next the vice-president of The United Drug Co. His most inventive bit of advertising was The Rexall Train, which traveled all over the United States displaying Rexall products. Mr. Liggett, the President, was aboard and they had a big party at each big city where they stopped for tours.

Home again with the unloading of the big van from Boston with part of our possessions at Allison’s and the rest on Lookout Mountain, Tenn., Chattanooga, where John was connected with Nelson Chesman Advertising and later a partner. In the winter we lived on Lookout Mountain, and in the summer, I ran Allison’s with John and all the employees’ help. John drove down twice a month – an eight-hour trip and spent his vacation at Allison’s.

When John and Hosford bought the Latimer heirs out — Sam, Douglass and Norma — the emphasis continued on high living and health, joining the National Spa Association, going to the meetings – one at Hot Springs – and having the national group at Allison’s. The Saratoga Springs Group gave a cocktail party in the rose garden at the gazebo with Ellis and Preston serving them in white coats – a not to be forgotten moment in time — moonlight, roses and jasmine.

Emphasis on unusual and good meals, beauty, landscaping; flowers everywhere in and out, large arrangements done by Parthenia in the living room as well as fresh flowers on every table in the dining room. These were often done by my Aunt, Mrs. S.D. Wilson of Tupelo. Ed O’Leary, the gardener and an ardent Catholic, hated to see Evy have so many of the flowers picked. Evy was a real designer with flowers, but she liked a mass of blooms the best. She won many prizes. Bowls of fresh sweet peas on each table in the dining room an Allison’s tradition.

A continued feature of Allison’s was the delicious food along with the art activities, as well as the many, many retreats and workshops and meetings. Everything was cooked on two big black stoves with wood brought up steep steps to the kitchen. Allison’s was written up in a number of magazines as “Off the Beaten Path,” which after sixteen years an inquiry comes: “How to reach Allison’s? I wish I knew How.” Duncan Hines included Allison’s and a feature article by Wendreoth Saunders, the artist, was published in The Lincoln-Mercury Times in November and December 1953.

Allison’s, which had been leased to Dr. Brown after the death of my mother and sister Thelma, needed a real face-lift and a return of the sparkle of living with emphasis on beauty, comfort and today’s feeling of life. This meant landscaping, rebuilding. As you entered, the bare clay hill was planted in peas to enrich the soil – so eventually out came the beautiful rose garden with the gazebo.

This presented a real challenge to my husband John, who was an engineer, an architect, a writer, a fine watercolorist and an advertising executive. He brought the joy and beauty and fun of living back to Allison’s. The redecorating continued when John retired and was an account executive with Godwin Advertisers in Jackson. Son John III is chairman of the board there now. Bathrooms were added to most of the rooms, the men’s sulphur bathrooms had a face-lift. The tops of the old toilet tanks became metal planters with flowers at the entrance. The artists painted them – “Realism” in today’s language; in yesterday’s language, “An old reality of time gone by object.” The ladies’ sulphur bathrooms were moved upstairs where Parthenia reigned supreme with the great massages.

The entrance was moved from the lower gate to the upper gate, a pleasing brick entrance planted with flowers, clumps of wisteria trees – shrubs marking the entrance and to the right the beautiful rose garden with Latvian touch to the gazebo. Beds of roses divided by brick walks — running roses in the background — perennials in beds around the center rose beds. Douglass Latimer, my brother, was bringing a bride home, Leigh Barret from Texas, so the first major rebuilding was a bridal suite for them in the annex upstairs last rooms where it overlooked the rose garden as well as the pool and grounds – beautiful view.

With the arrival of our displaced Latvians, Janis and Leontine Lazdin, John had a real engineer Janis to help with the continued improvements, the gazebo and featured seat in the rose garden, the boat house and seats down by the pond down the hill from the garden, which was also a feature in the nature trail, which was developed by “The Canton Garden Club” with the aid of the County Forester, who also marked the trees in the woods. Yes, I was and am a member.

The most important building was in true Latvian style the studio – at first and then the Chapel – Episcopal, because the artists outgrew it the first year. Another building, the enclosure of the pavilion with a small kitchen added for the priests — Catholic retreats. Always decisions should we have a lake or a pool — the pool won and what a big pool – reinforced concrete – there to stay forever — it’s still there. Scrubbed down every Saturday and refilled. Another renovation was the sulphur bathrooms for the women over the dining room—Parthenia’s domain.

1945 and 1946 War years brought our baby sister Norma Latimer Watkins back to Allison’s while Tom was in the service in the Philippines with her two girls Norma and Mary Elizabeth.

John renovated for them a bedroom and sitting room upstairs. Norma was in charge of Allison’s and her third daughter Sydney was born on the 2nd of January 1946 – in Jackson and then back to the Wells for the winter. Allen, our man of all work looked after getting Norma to school by bus to Pickens and of course Mary Elizabeth tagged along about a block to the big road to catch the school bus. Allen built the fires, cooked the children’s breakfast and served it in the sitting room in the early morning light — practically black, and took Norma to the big road.

Allison’s had many firsts: First American Bridge League Tournament in Mississippi … First Art Colony in Mississippi… First Continuous Exhibition of Paintings with a Tea … This is a few of them. From Allison’s to La Font at Pascagoula where the Art tradition continues a fall Workshop every first Tuesday in November for five days. There is a continuous Exhibition of paintings.

Doug and his wife Bertha continue with the same fine cuisine with emphasis on fine seafood. Landscaping and flowers are important. Fresh flowers on the table—as at Allison’s. Art continues to be important. Nothing dies—realities live.

Cucumber Sandwiches

Dear Ones, summer has come, so you must brush up on cucumber sandwiches. These dainties are among the noshes mandated for those incredibly fussy high teas you read about in rapacious Edwardian novels. Similarly, we serve cucumber sandwiches for gatherings where ostensible decorum rules; social luncheons, a formal patio cocktail hour, and of course the inevitable funeral. (Note: cucumber sandwiches at a kegger are the epitome of gauche.) Do not use those bloated green zeppelins from the local grocery; go to the farmers’ market and select good fresh cukes. If you can find a firm yellow one, cherish it’s sweetness. Partially peel fruit, refrigerate for an hour, and drain well before use. Trim bread–no crusts, please–and cut to size. Top with a spread of cream cheese and mayonnaise 3:1, seasoned with lime or lemon juice, white pepper, and salt. Add thinly sliced cucumber and cool before serving.

Pepper Corn Fritters

While researching the history of Mexican cornbread (the U.S. version,) I discovered our “Southern” cornbread in several Mexican cookbooks. Called–somewhat unsurprisingly–pan de maiz, this recipe seems to have found a place on tables in southern Mexico, Guatemala, and Honduras. One recipe I found on a Mexican website claims to have come by way of Maine and even employs buttermilk. While such things aren’t inconceivable, I suddenly felt as if the Culinary Improbability Drive had been activated, and I’d turned into an enormous zucchini hush puppy and about to plunge into a roiling intergalactic catfish fryer. I felt much the same way about Malaysian grits.

The origins of what passes as Mexican cornbread in the U.S. are obscured in a cloud of articles in “women’s magazines” containing oodles of specious speculation “women’s magazines.” The dish has all sorts of atrocious variations; extreme examples include any number of beans and meats, cacti, seeds, flowers, and a California aberration with blue tofu that ranks high on my Improbability Algorithm. For my part, I’ve devised a recipe that might be very close to Ur-meal bread. Add whole kernel corn, peppers and queso in equal proportions to a good stiff cornbread batter. I use thin-walled mild peppers 1:1 with thinly-sliced jalapeno. Drop by spoonfuls into a well-oiled skillet, brown on both sides, and place in a single layer on a cookie sheet in a low oven to crisp. Top with salsa, sour cream, and/or guacamole.

Armand Coullet, Mississippi Impressario

On Saturday, March 17, 1951, the stage of Jackson’s Civic Auditorium supported the most distinguished cast ever to tread the boards in Mississippi. As the very Devil himself, Charles Laughton led Agnes Moorehead, Charles Boyer, and Sir Cecil Hardwicke in a surprisingly successful enactment of Shaw’s Don Juan in Hell.

The review in Sunday’s Clarion-Ledger (“‘Don Juan in Hell’ a Big Hit Here”) states that the Jackson audience was thrilled with “Agnes Moorehead’s amazing transformation from a woman of 77 at death to a lady of 27 in Hell”, adding that “Laughton stated categorically that he is not ‘the beefy bird of comic strip fame.’”  One year later, a Time magazine article stated that the production’s tour had amassed gross profits of over $1M.

The Jackson performance was engaged by a man who recognized not so much a shy hunger in the city as an earnest yearning not only for literature, but for music, for lights, for the engaged delight of people in a body; the laughter, the suspense, the applause: the man, Armand Coullet, provided Mississippi’s capitol with over three decades of dazzling entertainment.

According to Jackson historian Harry Brown, “About a decade after H. L. Mencken declared the South ‘The Sahara of the Bozart’, Armand Coullet arrived on the Jackson scene to do something about it. He quickly established himself as the city’s resident Frenchman, a position he proudly made the most of and which of course carried a certain primacy in cultural affairs. Mr. Coullet was actually from Algiers. but that was certainly close enough to the Riviera for Jackson society of the day. Eventually he became the town’s foremost impresario, bringing notable entertainers and productions not only to Jackson but to other cities in the region. The Coullets—his wife Magnolia was an accomplished vocalist as well as being Chair of Foreign Languages at Millsaps, and his son ‘Tink’ went on to the Broadway stage and beyond—were welcome in the very highest social circles, and Armand was a highly valued addition to any gathering. He had a charming eye for the ladies, but of course with courtly decorum.”

Camille Saint-Saëns

Armand Coullet was born in 1899 to a well-to-do French family that had relocated to Algeria shortly after France conquered the North African country in the early 19th century. His father was a French civil servant. He attended public schools in Algiers, graduating from the French Government School of Topography. He also graduated from the Ecole Nationale des Beaux Arts with the Premier Prix in violin, conducting and orchestration. Advanced study in conducting and orchestration was completed with composer and conductor Camille Saint-Saëns, and and was later assistant to Saint-Saëns as concert master of the North African Symphony Orchestra.

He continued his violin studies in France at the Conservatoire de Paris; when Armand completed his musical training, his father and mother, Eugene and Marguerite, presented him with a fine violin made in 1667 by Francesco Ruggieri, who served as an apprentice in the workshops of Stradivarius. Coullet played first violin in the Opera House in Algiers for two years and directed his orchestra in the city’s leading hotels. He also served three years in a field artillery unit of the French Army during World War I.

Coullet came to the United States in 1924. In an interview fifty years later, he recalled, “The only thing I had was my violin and $27, but I had the world by the tail. When I got off the boat, there was an agent standing there who sked me in French if I played the violin. He gave me a job right there on the spot with the Boston Little Symphony.”

As concert master of the Boston Little Symphony Orchestra, Coullet traveled with the Chautauqua Tours, and for the next several years, he conducted his own orchestra in various New England resorts and spent a year as first violinist in the Roxy Theatre Orchestra in New York City. He first came south with various road shows and located at Palm, Beach, Florida with his own orchestra. He opened and directed the Academy of Music in West Palm Beach, with a faculty of 12 and an enrollment of 140 students. While in Palm Beach, Coullet regularly heard residents’ complaints about the town’s lack of theatrical offerings. Together with a local theater owner and three partners, Coullet contacted New York producer Lee Shubert and convinced him to send a touring company of “George White’s Scandals” to Palm Beach. The show was a hit and Coullet was bitten by the promoting bug. The itch would last the rest of his life

The devastating 1928 Okeechobee hurricane that practically destroyed West Palm Beach ended Coullet’s career there, and he went back to New York. While there, Hazel Chisholm, who was then working for Jackson radio station WJDX, called him to come to the city. When he arrived in the Jackson, he gave his two weeks’ notice his first day at the station. “I saw the town and thought, ‘Oh, my God,” Coullet recalled fifty years later. “It was so primitive. They had streetcars being pulled down Capitol Street by mules. I knew the town had potential, but potential was for the future. I wanted to leave immediately.”

But he was persuaded to stay, crediting his decision to the kindness of his employers. It was 1928, and in those days radio stations provided their own music. Coullet conducted a 14-piece orchestra for WJDX. He originated special instrumental and vocal programs in classical, semi-classical and popular music. He also met a young lady, Magnolia Simpson, from Madison, Mississippi, who was later to become Mrs. Coullet. Magnolia, Mrs. Sarah. B McLean, and Coullet broadcast every Sunday afternoon from the old Century Theatre the highly successful “Rice Dream House” program, sponsored by Rice Furniture.

Fellow musician and ofttimes traveling companion Muller Adkisson remembers, “During the Depression Armand played violin in the WPA orchestra and he said that’s what kept them going, what put food on their table. He had married Magnolia at some point in there. She taught both voice and Latin at Millsaps College. Later she taught German. WJDX’s original studio was in the Lamar Life building in one of the upper stories under the clock tower. Later when the Heidelberg Hotel added the upper six stories to their 12-story building, they added two stories that weren’t accessible by the elevator. WJDX moved there.”

In 1935, Coullet was instrumental in organizing the Jackson Symphony Orchestra and in 1937 he originated the All-Star Series (now a part of the Jackson Music Association). Coullet also found a theatrical vacuum in Jackson similar to the one in West Palm Beach so he again contacted Schubert, who persuaded New York agencies to place Jackson on their lists; it was a natural stop between Memphis and New Orleans, he reasoned with them.

“Because of union rules traveling shows could only travel so many miles a day,” Adkisson said, “so Armand was often able to bargain them down, get shows here, even though Jackson audiences weren’t that big and couldn’t afford the big shows. But often because of the rules somebody would call him up and say, ‘We have to have a show in Jackson, what can you pay us?’ And he got a lot of good shows here that way.”

His first Broadway production in Jackson was “Blossom Time” in 1935. Coullet later said, “(Being an impresario) might sound romantic and fascinating to some people, but it is hard work and full of worry.” After swinging the deal to bring “Blossom Time” he said he got the stage hand bill and it scared him so much he almost backed out.

Many names headlined his shows through the years: Tallulah Bankhead, Helen Hayes, Ethel Barrymore, Nelson Eddy, Jeanette McDonald, Bette Davis, Grace Moore, the Don Cossack Chorus, Bob Hope, Marion Anderson, Eva Le Gallienne, Joseph Szgeti, Fritz Kreisler, Richard Crooks, Albert Spalding, San Carlo Opra Company, NBC Opera Company, James Melton, Gladys Swarthout, Signumd Romberg, Nadine Conner and Guy Lombardo. His encounters with famous performers were brief, and he said, “you’d have to see them more than I do to feel that you know them.”

For over three decades, Armand Collet Associates sponsored shows in 15 cities and 12 states and across the South from El Paso to Birmingham, but beginning in the mid-1980s, Coullet limited himself to the presentation of Broadway theatre in Jackson and only a few other Southern cities. Included have been: “Hello, Dolly!”, “Fiddler on the Roof”, “Man of La Mancha”, “Zorba”, “My Fair Lady” (which ran for seven weeks), “Mame”, “Cabaret”, “1776”,  “Your Own Thing”, “I Do, I Do”, “George M” and a sneak appearance by Mantovani and his Orchestra. Coullet said he considered bringing the Beatles to Memphis in 1966 the crowning glory of his career, but his role in the Fab Four’s appearance at the Mid-South Coliseum can’t be substantiated.

“The big ones carry me,” Coullet once said, referring to smash hits such as “My Fair Lady” and “Hello, Dolly,” but he had his share of bombs. His biggest bust as a promoter was “Cabaret,” here. Coullet considered Grace Moore and Liberace his most glamorous stars. Liberace sold out twice.

“Armand always said how surprising it was to think of the large number of elderly women who came to Liberace’s performances,” Adkisson said. “It was a matter of sex appeal, or what they thought was sex appeal, since of course he was gay. Anyway, Liberace would invite the women in the audience to come backstage after the performances, and he’d wink and mug, and say, ‘Oh, what is your name, darling?’ and the woman would say like ‘Mary’ or something and Liberace would go, ‘Oh, my dear Mary!’ or something. Armand said the first time Liberace appeared in a city he might make a little money for his appearance, might even lose a little, but Liberace would come back two years later and the promoter would make a big profit. That was Liberace’s modus operandi, that he could tour successfully all over the country because he felt a responsibility to the local promoter. Armand had Liberace here three times with sold-out houses. The little old ladies would line up and Liberace would take an hour or more to schmooze with them.”

Even after decades living in Mississippi, Coullet retained his French accent. “It’s the one thing I’m stuck with and can’t lose,” he once said. “I’m not trying to lose it. It’s my natural way of speaking. You must realize that when I first came to this country, the only words of English I knew were ‘yes’ and ‘no’. I had to learn English by myself. I would read the newspapers and, when I found a word I didn’t know, I would write it on a little piece of paper and tack it on the wall. I’d see the word every day until I learned it, then I’d take it down. By that time, there would be 10 or more new ones.” Muller Adkisson recalls that when Coullet promoted shows in New Orleans and south Louisiana, he would give the promotional commercial in English, and then he would give it in French. “Of course people flocked to the shows because they loved hearing the promotions in their everyday speech. ”

In his last published interview, in May, 1977, the 79-year old Coullet, preparing for an upcoming season which was to include the touring company of the Broadway production of Welty’s “The Robber Bridegroom” as well as “My Fair Lady” and “Same Time Next Year”, said, “In this business you can’t slow down. If you slow down, you’re dead. It took me 40 years to build up the following I have. There’s no retirement for an impresario. I’ll be retired when they put me in a pine box. Sure, I’ve slowed down a little with age, but not so you can tell. You can’t kill a good Frenchman.”

Coullet died New Year’s Eve, 1983.

My Gazpacho

Older recipes for this king of summer soups include bread melded early on with oil, salt and garlic into sort of a cold roux for body. This recipe doesn’t include bread at that juncture, but I like crumbling dry cornbread over the bowl at table. I don’t recommend hot peppers; this is a cooling dish, and should be refreshing, not pungent nor heavy; starchy vegetables such as corn or peas seem out of place as well.

Mince two or three cloves of garlic very, very finely and mash in the bottom of a glass or enamel bowl with a teaspoon of salt and about a half a cup of vegetable oil. Add in fine dice one small onion, three very ripe summer tomatoes, two peeled cucumbers, two ribs celery (with leaves), and a ripe pimento pepper. Add a teaspoon of powdered cumin, a quarter cup each of chopped fresh basil and parsley, and a teaspoon of ground black pepper. Mix with two cups V8. Refrigerate overnight. An hour before serving, add V8 to consistency, adjust the salt and pepper, and top with a slosh of olive oil.

Flipping the Bird

The bill to designate the mockingbird the official state bird of Mississippi was approved unanimously by both houses of the Mississippi Legislature in 1944, which is probably the only time those assemblies totally agreed on anything. Texas, Arkansas, Tennessee and Florida followed suit, establishing the Northern mockingbird (fifteen species of the genus live outside Dixie) as the most popular state bird in the Union.

The mockingbird is a Southern icon, but I’d like to have an avian symbol for Mississippi that sets us apart from our Great Sister States. Let’s keep the mockingbird, but adopt another winged denizen of our borders to represent us. My nominee is the Mississippi kite, a bird so at home in the air it’s said that “Only two powers of nature can defeat the wings of a Mississippi kite. One is rain, the other darkness.” These graceful birds can be seen sailing above our woods in summer, tumbling in the air as they catch prey on the wing. A pair will usually nest in the same location for years.

Another unanimous vote on a new state bird is absurd; some fool’s going to suggest a cardinal, another a blue jay, and you can be damn sure some damn fool from the Delta is sure to throw in a mallard just for the hell of it. We’ve recently replaced two obsolete state symbols (the new flag is superb, but the new state song is an unmitigated disaster) so let’s try to get a bird of our own.

 

The Rock Cornish Racket

The follies of genius are unavoidable, unpredictable, and if we’re lucky just quirky. I think Victor Borge was a genius. During his heyday Borge performed the world over, but maintained a homestead in New England that produced Rock Cornish game hens. I suspect he was probably amused with a business that marketed miniature chickens; imagine him asking why the Rock Cornish game hen crossed the road with a nice little keyboard riff. At any rate, Nora Ephron remembers that “every Rock Cornish game hen in America used to come with a little tag with Victor Borge’s name on it.” At his insistence, no doubt.

Despite its rugged name a Rock Cornish game hen is nothing more than a little chicken. Poultry is big business, and millions are spent on developing and maintaining the most productive, disease-resistant and appealing varieties. The best industrial chickens are either big and fast-growing or smaller and long-laying. I suspect that at some point avian agronomists were frustrated to discover that pesky genetics prevented chickens from growing only so much so fast and from ovulating only so often; otherwise we’d have Rhode Island Reds the size of collies dropping half-gallon eggs all over Stone County. (The emus didn’t work out.)

With size as a limit, the Tyson Foods scientists bent under the thumbscrews of marketing and developing the Rock Cornish game hen in the mid-60s by cross-breeding big, fast-growing but rather spindly Plymouth Rocks with smaller Cornish Hens, which have short, thick legs and broad, muscular breasts. The resulting variety has a briefer growing span–ten days less to the slaughterhouse than the 40-day Rocks (birds grow fast; imagine if you had been chased out of the house when you had just learned how to run). Since they were developed for meat, their marketable egg-laying capabilities are inconsiderable (too bad, right?).

Tyson marketed the game hen as an upscale product targeting people willing to pay more for something different. And it worked. Calling it a “game hen” added to its cachet, since it suggests a mix with a pheasant, a quail, a partridge or some bird with similar snob appeal. Borge, who himself had a high-brow profile, was probably enrolled as a celebrity sponsor, though I still maintain that the eccentricity of the product itself was a great draw for him personally. Despite my affection for the Great Dane who bridged the gap between Oliver Hardy and Stravinsky, to me the most effective marketing strategy for game hens is that they’re sealed in plastic wrap just like teeny-tiny turkeys.

Having said all that, let me add that game hens should not be shunned on account of their corporate hatching; they’re good enough birds, if you know how to cook them. Buy one to a person, thaw thoroughly, trim and clean. Rub inside and out with oil, a little salt and pepper and whatever other seasonings you like (garlic and sage are always good), then roast in a slow oven until the legs are loose. Increase heat at finish to brown. I like to serve Cornish hens with wild rice, baby limas, wilted greens, and sour cream.

Momma’s Apple Pie

Over the hill from my boyhood home, in the middle of a long cornfield bordered by a dirt road filled with gripping mud in the winter and enveloping dust in the summer, grew an apple tree so big that now fifty years later it remains the largest I’ve ever seen.

I couldn’t begin to guess what sort of apple it was, but the fruit when ripe was small and crisp, faintly streaked, blushing red, and speckled from insects, winds, and sun. When green, the apples were so taut you could barely dent them with the tip of your thumb. Those were the apples my mother used to bake apple pies. I never knew her to use any other. If you have no tree nearby, stone-hard Granny Smiths will do.

Combine 4 cups apples, cored, peeled, and cut into chunks with a cup of sugar, juice of half a lemon, a half teaspoon each cinnamon and nutmeg. Spoon into an unbaked crust, top with a slashed crust, and brush liberally with melted butter. Bake at 350 on a middle rack until brown and bubbly. Cool very well before slicing.

Levee Press: the Delta Imprint

“For reasons best known to ourselves,” Hodding Carter, Ben Wasson and Kenneth Haxton decided “one low-water night some time back” to organize “still another addition to the multiplicity of publishing houses whose directors dream of an America that will some day read instead of write.”

Their brainchild, Levee Press, while miniscule by any standards—only four publications in roughly that many years totaling somewhat less than 3000 copies (2635 “official” count)—remains Mississippi’s most distinguished publishing enterprise. Levee Press imprints command a significant price among an elite of discerning bibliophiles not only because the names of the four authors—Foote, Welty, Faulkner and Percy—resonate in across the world, but also because its founders comprise a literary elite among themselves.

Had Levee Press maintained production at such a level of quality, the Greenville publishing house could very well in time have become one of the premiere imprints in the nation, but some combination in degrees of indifference and dissent brought it to an end.

In the late 1940s, during the “golden age” of Mississippi literature, the output was phenomenal, with Welty and Faulkner as cynosures in a stellar flurry of belles lettres including works from Carter himself, who had commandeered the Greenville Delta Democrat-Times—as he had the Hammond Daily Courier—into a newspaper of integrity and distinction, an achievement acknowledged by the Pulitzer jury that awarded him the prize for editorial writing in 1946. Hodding was at the peak of his career; his reputation as a capable spokesman for a progressive South was solidly entrenched across the nation. Ben Wasson, who had worked in New York theater with Leland Hayward and acted as Faulkner’s first literary agent, wrote on the arts and as a literary critic for the newspaper. Kenneth Haxton, a composer and husband of National Book Award nominee Josephine Ayers Haxton, who wrote under the surname Ellen Douglas, worked full-time at his family’s department store, Nelms and Blum’s (his mother was a Blum), where he had installed a bookstore. Carter also had young Shelby Foote working for him at the Delta Democrat-Times then, and while Hodding can dryly drawl about the enterprising intentions of him and his cronies in their cups, it was Foote who came up with the idea to publish a book using the resources of the Delta Democrat-Times.

Shelby Foote grew up in Greenville alongside his fraternal friend Walker Percy under the patriarchal wing of planter/poet William Alexander Percy. Foote, like Walker, had literary ambitions which in time both realized, but in early 1947, Foote had just turned 30, had only one major work in progress (Tournament), and his expenses were mounting. Apparently quite on his own initiative, he decided to print and publish his own work with the limited resources of the Delta Democrat-Times print shop. Since his enterprise just happened to mesh with their own previous plans to publish books in the hub of the Delta, Ben Wasson, representing Hodding Carter and Kenneth Haxton, asked Foote if he would add the name “Levee Press” to the pamphlet they had heard he was planning to print. “We gonna call it the Levee Press,” Wasson said, nodding out the window at the earthworks against the river.

From within the Tournament manuscript, Foote excised the grim story of Abraham Wisten, an ambitious Jewish immigrant, entitled it The Merchant of Bristol and hired co-worker Bill Yarborough to typeset and print 260 copies of the 20-page novella on June 2, 1947. Foote stapled them together himself and—with considerable pluck—signed,  numbered and marketed his work in the book section of Nelms and Blum’s at $1.50 a copy. More than one wit remarked that just as much would buy a good dress shirt, and sales were predictably disappointing, not only perhaps because of Foote’s perceived pretentions but more likely because as a publication, The Merchant of Bristol is nothing more than a pamphlet, reminiscent of the blue essay books used for university examinations. Wisten’s tragedy was reprinted in Foote’s first work of fiction, Tournament, in 1949.

Writing in the Commercial Appeal on July 6, 1947, columnist Paul Flowers announced, “Freshest literary venture in the South today is the Levee Press at Greenville, Miss. (there’s always something going on among the literati of Washington County.) The Levee Press is the idea of a group of writers, for the perpetuation of stories, essays, and other literary material which may not have enough general interest for publication on a national scale, but too good to be forgotten… Shelby Foote broke the ice with a short story, published in pamphlet form, and 250 copies, each one numbered and autographed, went out to persons who had subscribed. The project is non-profit and there’s no incentive except to keep alive bits of writing which ought to live. More small volumes will be coming from the Levee Press. It will not be commercial, and no one connected with it is looking for material gain (except Foote, of course: JY) However, most, if not all of its insiders are welling manuscripts in the open market, but they will publish at home, just for collector’s items some of the pieces nearest their hearts.” Flowers doubtless received this description of the Levee Press’s objectives from Hodding Carter himself by way of promotion, and perhaps this is an echo of the “reasons best known to ourselves” that he referred to some six years later in Where Main Street Meets the River, where he claimed—again, after the fact—that the purpose of the Levee Press was to “publish limited, signed editions of new, relatively short books—“novella” sounds better—by established Southern writers.”

With the publication of A Curtain of Green (1941) and The Wide Net and Other Stories (1943), Welty had garnered three O. Henry awards and a Guggenheim fellowship, which made her a clear candidate for publication with the Levee Press. Wasson “brazenly” asked Welty if she would permit the new publishing firm to issue one of her manuscripts as a book and had told her the plans for the new press. In Count no ‘Count, Wasson recounts, “The great and gracious lady replied that she approved of such a venture, that Mississippi needed a limited editions press, and that, as it happened, she did have a manuscript. It was a novella, Music from Spain.” In December, 1946, Welty traveled to San Francisco to visit her friend and ofttime paramour John Robinson, rented her own apartment there in January and between then and March wrote a lengthy story, “Music from Spain”. The story stands at somewhat of a distance from the body of Welty’s oeuvre because it is set outside of Mississippi, in San Francisco, its narrative is stream-of-consciousness and it is distinctly erotic—indeed, homoerotic— a daring element in a work for publication in Greenville, Mississippi in the late 1940s. After contacting Welty’s agent, Diarmuid Russell, Carter and company contracted Welty for 750 copies was agreed to give her 25 per cent of the $2.50 price—Wasson claims $4—in exchange for non-exclusive rights to “Music from Spain”.

When Ben Wasson proposed that Levee Press “do a Faulkner”, the other two laughed. Even though Faulkner in 1946 was one of three finalists for the first Ellery Queen Mystery Magazine Award (second to Rhea Galati), he was by most other standards the single most important Southern American writer of his day, but Wesson had a card up his sleeve. Not only had he been Faulkner’s agent when Faulkner was struggling to publish Flags in the Dust, but it was Wesson who for fifty dollars a week pared down Faulkner’s novel for the demands of Harcourt, Brace. For two weeks, while Faulkner sat nearby writing The Sound and the Fury, Wasson cut almost a fourth of the book, and Harcourt, Brace published the truncated version on January 31, 1929, as Sartoris. Some might say that Ben Wesson was calling in a debt, but for whatever reason, in late February, 1948, Wesson traveled with Carter to Oxford for an evening at Rowan Oak. Faulkner, “at-first-reticent”, gradually warmed his visitors, who left with an original manuscript, a “horse race piece” Faulkner suggested they call “A Long Dangling Clause from a Work in Progress.”

On March 1, Faulkner reported his commitment to his agent, Robert K. Haas: “Hodding Carter and an old friend of Mine, Ben Wasson, have what they call the Levee Press, at Greenville, Miss. Three times a year they get out an issue, which is sort of a colophon thing: a single story or article, limited number. I am letting them have the section of the big mss. Which Ober offered to Partisan Review and was declined. It will resemble a special edition pamphlet, bound of course, signed by me, to sell at $2.50. I get 25%. This is all right with Random House, isn’t it? The section is about 80-100 pages typescript. They will call it Section (of from) Work in Progress. I think. I want to do it mainly to confound the people who say nothing good out of Miss. The Press is less than a year old, is already getting known even though in slightly precious circles, like Yale reviews etc. Its foundation is Carter’s Greenville daily newspaper. His name is familiar to you, probably: lecturer, liberal, champion of Negro injustice though no radical, no communist despite Bilbo and Rankin.”

So it was with these commitments an announcement was made in the Commercial Appeal on May 2, 1948: “The Levee Press probably will be doing some celebrating about that time also (2nd week in May with publication of Cohn’s Where I Was Born and Raised), announcing books by Eudora Welty and William Faulkner, to be issued by the Greenville house. That won’t hurt the Levee Press, either, starting off with a pair of names such as Welty and Faulkner, for those are two writers highly esteemed in the English speaking world. The Levee Press may turn into an important venture in the American publishing world. It got off to a modest beginning about a year ago with a short story by Shelby Foote.”

For the Welty book, Carter stepped up his game considerably. Always the consummate newspaperman, he purchased a Jansen type plate that he had admired in certain Knopf publications. With no local bindery available, he contracted that job to a publishing company in Texas, Dickens. Carter also hired local artist Elizabeth Calvert to design the colophon, a stylized “L” bracketing a river steamer, which was ensconced beneath those of Welty and Faulkner (Percy died in 1943). Ken Haxton designed and drew the Picassoesque/art deco guitar for the terra-cotta cover and chose for each of the seven section headings musical motifs from the Spanish composer Isaac Albeniz, Recuerdos de viaje, “En la Alhambra”.  Writing in The New York Times Book Review in 1949, Charles Poore called the volume a “handsome example of bookmaking”. Music from Spain was incorporated into Welty’s third collection of short stories, Golden Apples, published by Harcourt, Brace in 1949. Welty’s 25 per cent of the $2.50 take was the price of literary notoriety in Mississippi at the time, but on the current market a (quality) copy of Music from Spain published by the Levee Press sells for $1000, a distinguished association copy, inscribed and signed by Eudora Welty, to authors Allen Tate and Caroline Gordon: “To Caroline + Allen/ with love/ from Eudora”.)

Though Levee Press’s relationship with Eudora Welty is undocumented, Faulkner’s exchanges are unsurprisingly high-profile, with vibrant accounts provided by both Carter, in Where Main Street Meets the River and Wasson, in Count no ‘Count. Given that the author was awarded the Nobel Prize during the publishing process. Carter, Wasson and Haxton shortened the title of the Faulkner manuscript to Notes on a Horsethief.

“It was good,” Carter claimed, “even though a few readers have since complained that they never before had read thirty thousand words divided into only three sentences.”  Again, Levee Press extended its resources for Notes on a Horsethief. With Elizabeth Calvert’s flowing, linear artwork for the rich, Sherwood green cover and the striking and dramatic end papers, described by Jean Stein as “horses in flight,” Horsethief is arguably Levee Press’s highest achievement both in terms of art and letters.

Notes on a Horsethief was printed on November 4, 1950, and the following January, on the 23rd, Estelle Faulkner phoned Carter, telling him that her husband had decided that there was no sense in unpacking the nine hundred and fifty books he had received the month before for signing only to ship them right back, and he had put the unopened crate in his station wagon early that morning and was on his way to Greenville.  Carter alerted Wasson, who “smuggled” Faulkner into Hodding’s office at the Delta Democrat-Times, sent out for the crate of books, and an ad hoc assembly line was organized with Wasson opening the books for a signature, Faulkner—standing, in a half-crouch—signing and numbering them and a young woman from the bindery took it from him to blot the signatures and replace them in the box. Carter sent out to Al’s Café for beer. “Hospitality dictated that I do something for a man who had driven one hundred and twenty miles just to stand in my office and sign his name to copies of a book for which he could have received far more than our limited edition’s twenty-five percent royalty could bring him at six dollars a copy,” Carter wrote, recording “for the factual-minded” that Faulkner’s ration of signed books to beers turned out that day and the next morning to be “sixty volumes of Faulkner to one bottle of Budweiser.”

Notes on a Horse Thief was published scarcely a month before Faulkner accepted the Nobel Prize Stockholm’s City Hall on December 10, 1950. The nine hundred copies sold out quickly, and soon copies were selling for as high as $25. Irving Howe, reviewing this “privately printed and fabulously pieced story” in The Nation, said it was “a bad piece of writing,” but Charles Poore in the New York Times Book Review, called it “at once a brilliantly told story of a manhunt and a subtly woven allegory on man’s fate.” Notes later became a section in Faulkner’s much-belated Pulitzer winner, A Fable, with gracious thanks from the author to Levee Press for permission to reproduce the material.

Choosing the next work to be published proved problematic.

Carter, Wasson, and Caxton intimated later that it had never been their intention to publish Mississippi writers exclusively, but in the end it just turned out that way. In fact, Carter was considering publishing a book of poems by John Gould Fletcher of Arkansas that had been turned down by his New York publisher, but at the last minute the decided no. Wasson wrote to Flannery O’Connor, Carson McCullers, and Robert Penn Warren, but none had a manuscript of suitable length ready for publication. Writer and photographer Carl Van Vechten, who Gertrude Stein had appointed her literary executor, sent some unpublished works by her, but the three principals of Levee Press found them so mystifying that they returned them, regretfully, to a subsequently indignant Van Vechten. Unknown writers (including Greenville son Howard Mitcham submitted hundreds of manuscripts, but none of them made the bar.

The shadow of William Alexander Percy still  looms large in Greenville. Carter, Wasson and Haxton all knew the man well and admired him immensely. Percy died in 1942, and Knopf published The Collected Poems of William Alexander Percy in 1943, with a second edition the following year. Yet Ann Stokes, who claimed to have worked with Percy in editing the poems for the collection, claimed that she had variant forms of some of the published poems that should be printed, and insisted with no small degree of persistence that Hodding Carter publish these poems as well.

Carter felt some degree of obligation to Stokes, who sold him the land on which he had built his new Feliciana house. Ben Wasson thought publishing Percy’s poetry was redundant and the book would not sell, and Carter, while engaged in a lengthy and complicated correspondence with Alfred Knopf, whose company held the copyright to the Percy poems, actually went so far as to ask Knopf to deny him permission to reprint the poems, Knopf consented, giving Carter no excuse to refuse Stokes’ nagging.

Of Silence and of Stars, with a forward by Carter, edited by Anne Stokes, decorations by Elizabeth Calvert, was issued in mid-1953, the title taken from the poem “Home” (“I have a need of silence and of stars…”). It is a handsome volume, with a deep blue cover featuring a sketch of herons somewhat similar but not as striking as the horses on the Faulkner cover, and the end papers are illustrated with drawings of cypress in a bayou. A note on the dedication page is a quote from Faulkner’s Nobel acceptance speech. Stokes dated each poem and divided them into three groups: those written before 1915, those written between 1915 and 1920 and those completed after Percy’s World War I experiences. Six hundred and fifty copies were printed, and each copy was numbered.

Although Ben Haxton placed “The Levee Press” on the title page of his 1997 work The Undiscovered Country as a tribute to the spirit of the enterprise he shared with Carter and Wasson, Wasson, evidently the principal behind the publishing venture, clearly lost interest after the Percy work was foisted on the house. Of Silence and of Stars proved to be the last book issued by Levee Press. Carter toyed with the idea of publishing “lost literature” of the South, but this idea never came to fruition. After failing to get a manuscript from Tennessee Williams, the Levee Press passed out of existence.
