Recipes for Life

In his introduction, Oscar Rogers writes, “The title of this book could well have been My Mother Cooked My Way Through Life with These Creole Recipes. Her skill in cooking fine foods, prepared with loving care, assured her of a living, and me of my survival. She places part of herself into each dish she prepares—in fact a part of herself is in everything she does. This is her priceless legacy to me.”

Dr. Oscar Rogers was one of the most distinguished educators in Mississippi. He received his A.B. from Tougaloo in 1948, the B.S. in theology in 1954 and an M.A. in theology in 1954, both from Harvard. He returned to Natchez to accept the position as dean of students and registrar at Natchez Junior College in 1954, and was appointed president of Arkansas Baptist College in 1956, serving until 1959. In 1958, he received a doctoral fellowship to enroll at the University of Arkansas at Fayetteville, and there he completed his doctor of education degree in social science in administration in 1960.

Rogers’ wife, Lee, insisted that her children (three sons) live near and learn to know her father, Jefferson O. Lewis, a longtime employee of Tougaloo College, so the family moved to Jackson where she became a teacher in the Jackson Public Schools, and Oscar accepted the position as dean of students at Jackson State College from 1960-68. During 1968-69, the family moved to Seattle, where Lee taught and Oscar engaged in research. They returned to Jackson in later 1969, where Dr. Rogers became dean of the graduate school at JSU, a position he held for fifteen years. He was also a pastor of Asbury Methodist Church in Bolton, Mississippi. In 1984, he became the seventh president of Clafin University, a position he held to his retirement in 1994. Dr. Rogers died in July, 2011.

This book was published in December, 1971, when Rogers’ mother, Mrs. Walter Tillman, affectionately known as Pinky, was still alive. She attended the reception and signing, held by the University and College Press of Mississippi in the H.T. Sampson Library on the JSU campus.

Some may be surprised that Oscar calls the recipes “Creole”, since they originate not in New Orleans, but rather upriver in Natchez; yet in its strictest definition, Creole is defined as “a person descended from the early French and Spanish settlers in the U.S. Gulf States”. Natchez was founded by French colonists in 1716.

In the culinary sphere, however, Creole implies the cooking of the well-to-do, more urban inhabitants of the region; one authority, Howard Mitcham, defines it as “city” cooking as opposed to “country (Cajun)”. And many of the 200+ recipes are sophisticated indeed: cauliflower Hollandaise, Doberge cake (a distinctly New Orleans dish, by the way), shrimp remoulade, and floating island pudding, but there is also an abundance of good home-style recipes such as Southern-style pork chops, a meat loaf, baked beans, and spoon bread. Courtbouillion of Red Fish

1 large red fish, snapper or sheepshead, 5-6 lbs.
1/2 cup salad (vegetable) oil
1 c. flour
2 large onions, chopped
2 1/2 cups canned tomatoes
2 bay leaves
4 green bell peppers, chopped
4 shallots or green onions, chopped
2 cloves garlic, minced
2-3 slices lemon
1 cup claret or port wine
1/2 teaspoon allspice
1 1/2 cups water (scant)
a few sprigs parsley

Slice fish across back into 2 or 3 in cuts. In a large skillet heat the salad oil, add the flour and stir until very brown. Add onions, stirring until cooked a bit. add chopped tomatoes and remaining ingredients except wine and fish, cook for 1/2 hour or more. Add sliced fish (you may lay fish in roasting pan or large pot if skillet isn’t large enough and pour sauce over fish). Simmer for 15 to 20 minutes until fish is cooked. Add wine and let come to a boil again. Serve with rice or creamed potatoes. (Serves 6 to 8).

Feta Melon Salad

Crumble feta and crisp lean bacon seasoned with black pepper over chilled melon and cucumber. Sprinkle with lime juice.

 

A Mississippi Hill Down Under

Roving Google Earth is a fascinating experience, particularly for those of us who, for whatever reason, will never be able to visit the far-flung edges of the globe. It’s one of my favorite diversions, and that’s how, when bouncing between the Timor Sea and the Great Australian Bight, to my astonishment I found, on the southern tip of Western Australia’s “Golden Outback,” Mississippi Hill.

Mississippi Hill is in Cape Le Grand National Park in the extreme south of Western Australia, 35 mi. east of Esperance. The southwest section of the park is dominated by rock outcrops of gneiss and granite. These form a distinctive chain of peaks including Mount Le Grand (1,130 ft.), Frenchman Peak (860 ft.), and Mississippi Hill (590 ft.), named by a British explorer, Edward John Eyre.

In February,1841, Eyre began one of the great treks across the Australian continent, passing over 1000 mi. from Port Lincoln, South Australia, to Albany, Western Australia through the arid expanses of the Nullabor Plain. Eyre was the first European to travel along the Great Australian Bight, a desolate, harsh, and empty land on the southern coastline of the continent.

His expedition was one of the most horrible in the annals of Victorian exploration. He set out on New Year, 1841, with three aborigines, Wylie, Joey, and Yarry, and his overseer Baxter. Joey and Yarry shot Baxter dead and decamped with the stores. The renegades shadowed Eyre and Wylie at a distance. The Eyre and Wylie survived on such fare as eagle stew and a penguin they found on the beach and ate skin and all. Nearly 800 mi. into their journey, exhausted, near starvation, and eking by water from sporadic rains, on the 2nd of June, slightly east of today’s Esperance on the south Australian Bight, they climbed a rocky hill and saw a ship at anchor, barely 7 miles away.

It was a French whaler, the Mississippi, which had departed from Hobart, Tasmania on February 12, 1938. The French had been invested in Mississippi for some time, e.g. the Mississippi Bubble. The ship’s captain, a an Englishman named Rossiter, pressed cognac and Dutch cheese upon Eyere’s company before the Mississsippi continued 280 miles east to the British settlement Albany.

For his trek, Eyre was awarded the Royal Geographic Society gold medal and has had a number of geographical features named after him, including Lake Eyre and the Eyre Peninsula. And while I have yet to hear back from the Western Australia Parks and Wildlife Service—of course I reached out; don’t be silly—it’s a certainly that the tor  was named Mississippi out of gratitude.

I think it’s quite pretty.

The Existential Tomato

If you’ve never enjoyed the sensation of going out to the garden, picking a beautiful, ripe tomato (of whatever variety) and eating it right there on the spot atop of our good earth with the tang of that tomato plant in your nose and the warm sunshine on your face, then you’ve never had a tomato at it’s best. If you have, then you can truly say, “I know what a tomato is,” for then you have achieved an existential union with tomato-ness.

Vegetables prepared for the table straight from the soil are a hallmark of great Southern dinners; a luscious home-grown tomato, simply sliced and served on a plate, usually with a fragrant cantaloupe and maybe a good, dewy cucumber is a signature of any summer meal. I consider a ripe tomato the crowning glory of Southern vegetables, but everybody has their own favorite; some advocate summer squash, others favor fresh beans and peas, and still others extol sweet corn. Some souls champion okra or eggplant. But even back in the Bad Old Days when most of the country ate out of a can or from the frozen food section, people in the South knew to get their vegetables from gardens, and if they didn’t have a friend or relative they could help out by weeding and hoeing for some of the returns, they could get fine vegetables from the truck gardens and produce stands along the byways.

So when you’re out on the road this summer and you see little produce stands with signs written on brown cardboard with a magic marker, do yourself a favor by stopping by and spending a little time and a little money getting to know the foods of the South and the people who love them.

Faulkner Walks on the Wild Side

In 1931, William Faulkner published his first collection of short stories, These 13, which in addition to some of his most acclaimed and frequently anthologized stories—“A Rose for Emily”, “That Evening Sun,” and “Dry September”—included “Divorce in Naples”, Faulkner’s most overt portrayal of  homosexuality.

Faulkner had already broached the theme in the intimacy between Quentin Compson and his Harvard roommate Shreve McCannon in The Sound and the Fury (1929), and Jenny and Patricia as well as the openly gay lesbian Eva Wiseman in Mosquitoes (1927). He’d expand his depiction of Quentin and Shreve and introduce a parallel relationship with Henry Sutpen and Charles Bon in Absalom, Absalom! (1936).

Simply put, the story depicts the relationship between two sailors, George (“Greek, big and black, a full head taller than Carl”) and the younger Carl (“with his round yellow head and his round eyes, looking like a sophisticated baby”).

‘THEY CAME INTO THE SHIP together at Galveston, George carrying a portable victrola and a small parcel wrapped in paper bearing the imprint of a well-known ten-cent store, and Carl carrying two bulging imitation leather bags that looked like they might weigh forty pounds apiece. George appropriated two berths, one above the other like a Pullman section, cursing Carl in a harsh, concatenant voice a little overburred with v’s and r’s and ordering him about like a nigger, while Carl stowed their effects away with the meticulousness of an old maid, producing from one of the bags a stack of freshly laundered drill serving jackets that must have numbered a dozen.

For the next thirty-four days (he was the messboy) he wore a fresh one for each meal in the saloon, and there were always two or three recently washed ones drying under the poop awning. And for thirty-four evenings, after the galley was closed, we watched the two of them in pants and undershirts, dancing to the victrola on the after well deck above a hold full of Texas cotton and Georgia resin. They had only one record for the machine and it had a crack in it, and each time the needle clucked George would stamp on the deck. I don’t think that either one of them was aware that he did it.’

One night Carl disappears. George, frantic, fails to find him. When Carl returns after three days, he reveals that he has been with a woman, and George kicks him out of their berth only to discover later, after their reconciliation, that Carl was too naive to have sexual congress with the woman, and

“ …two weeks later we were watching him and George dancing again in their undershirts after supper on the after well deck while the victrola lifted its fatuous and reiterant ego against the waxing moon and the ship snored and hissed through the long seas off Hatteras.’

Most of Faulkner’s examinations of same-sex desire focus on men; Faulkner had close relations with many homosexual writers and artists, including his townsman and fellow writer Stark Young and his childhood friend Ben Wasson as well as William Alexander Percy and Lyle Saxon. It goes without saying that while living in New Orleans he doubtless knew many others.

The story draws most directly on Faulkner’s experiences with William Spratling, a down-on-his-knees New Orleans fairy, in sailing to Europe on the West Ivis beginning July 7, 1925 and to Genoa on August 2, where after landing they celebrated their arrival by going drinking with the ship’s officers. The drinking bout turned into a brawl with “pimps and prostitutes”, after which Spratling was arrested and thrown into an Italian prison where during the night he had a “homosexual encounter”. (Rape is of course implied, but then again we don’t have any evidence that the encounter wasn’t consensual.) This event in Genoa provided the kernel for the story, and Faulkner himself was heard to joke at one point that he was jealous of Spratling.

With “Divorce in Naples” Faulkner presents an unmistakably gay male relationship fraught with stereotypical dynamics brushed with innocence and infused with our hunger for love.

The King Edward’s Chicken Fricassee

This recipe comes from The Jackson Cookbook (1970), a wonderful addition to any kitchen library. The dish is a classic old-school fricasee–-rich, with a sublime aroma–-characteristic of the–admittedly bourgeois–haute cuisine fashionable in hotels such as the   King Edward in the middle of the 20th century.

I used boneless thighs skewered and lightly floured (no drenching beforehand) with salt and pepper, early yellow onions, and a mixture of fresh and dried thyme. Bread the chicken lightly and brown in butter; use a medium heat to keep the butter from burning.  Wilt thickly-sliced onions in butter before topping the chicken with more of the herb mix and butter. Bake in a medium (350) oven for about an hour. Baste once, twice is better.

Smoked Oyster Spread

Soften cream cheese, season with black pepper, and blend with an equal amount of drained, mashed smoked oysters. Add about a tablespoon of oil from the can to kick up the smokiness. Diced green onions and/or mild chilies and black olives are a nice touch. Flavor with a smidgen of horseradish, lemon juice, and cayenne; no salt! Blend until smooth and refrigerate. Bring to room temperature before serving. For a dip, thin with mayo.

The Rainbow Cake

Jake saw an image of a rainbow cake somewhere and just had to make one. It wasn’t even called a rainbow cake in any sort of caption; it was just a random image on a blog somewhere, but he found it beautiful, and I did, too. But when he said he wanted to make one, well, I kinda tingled in my toes. You’d never know it, but Jake is color-blind. I’m not sure how extensive it is, and he’s not either, but when he pointed to that gorgeous slice of multi-colored cake on the monitor and said he wanted to make it, I offered to help. It was the least I could do.

Since this was such an experimental venture, we used a commercial white cake mix; after all, our objective was drag queen appearance over substance. The most indispensable element of the project was two (count ‘em, two!) boxes of McCormick’s assorted food coloring and egg dye. Each box has formulas for achieving eight colors (red, yellow, green and blue as well as pretty purple, orange sunset, teal, mint green and dusty rose). We used two boxes of cake mix, split the batter into six equal amounts and then colored each bowl of batter. Because there was less batter per baking pan, oven time was reduced by about half.

Jake wanted to arrange the layers, but I suggested that we stick to Roy G. Biv (less the “i” I think). After a brief discussion, the pans were numbered and labeled. Once cooled, we assembled the cake with a basic white icing, and let it sit over night in a wrap. A few friends came over the next day, and with the first slice, everyone went “Ooo . . ! “ We just grinned.

Down in Doodleville

For Jackson, Mississippi the Civil War was catastrophic, but by the 1880s, the city had begun to rebuild and slowly piece itself together along two main two axes, Capitol and State Streets.

The Pearl River provided then as it does now a natural barrier to expansion to the east, so that the city grew west along Capitol behind the bluff and north along State following the bluff. The southwesterly course of the floodplain largely prevented significant development on South State Street beyond its parallel to the divergence of the Illinois Central and Gulf & Ship Island Railroads, yet inevitably attempts were made, paramount among them the hamlet that became Duttoville.

Located south of Porter and on either side of Gallatin adjacent to the Illinois Central Railroad, Duttoville was named for Father Louis Anthony (Luigi Antonio) Dutto, one of the most fascinating figures in the ecclesiastical history of Mississippi. Dutto was born in the commune of Boves in Italy’s Piedmont region and educated at Brignole-Sale, a pontifical college in Genoa. A very learned man, Dutto was the author of The Life of Bartolome de las Cassas (published posthumously; 1902). He was ordained for the Diocese of Natchez before he was 24 years old and arrived in Jackson on August 25, 1875 to assist Fr. Picherit in attending the surrounding missions. Dutto succeeded Picherit as pastor in 1885.

According to an anecdotal biography written in 1932 by Rev. P.H. Keenen, a personal friend, “Father Dutto was a great financier, having special aptitude in this line. He was sought as adviser in matters financial by young businessmen, and his advice, when followed, usually brought success, and often wealth. . . .  He himself acquired much property. On the missions he seldom asked his people for funds—he gave instead of asking. His business acumen enabled him to do this.”

In 1886, Fr. Dutto bought land in what was then the southwestern portion of the city, which, according to the account given by McCain in The Story of Jackson, “he divided into lots on which homes were erected and gardens cultivated by certain Catholics who had to come to the city to engage in commercial and agricultural pursuits. This section is still known as Duttoville.”

By another account (Jackson Daily News, May 30, 1979 p. 15A) Dutto acquired the property in 1891 from F.A. and Mary F. Wolfe, J.W. Langley all along Gallatin Street and the I.C.R.R. and the G.&S.I. Railroad and the “Muh (pronounced as the pronoun “me”) Estate, “vast acres” of land just outside the city limits, Dutto sold lots to working class people who could not pay taxes on simple homes, including many Italian immigrants (likely the “certain Catholics” referenced above). The area soon became a thriving community with a planing mill, brickyard and other enterprises that provided work for residents, and many worked in Jackson proper. Anticipating annexation by Jackson the settlers incorporated in 1903.

The original Duttoville was bounded on the north by Town Creek, the east by the Pearl River with the Illinois Central and Gulf & Ship Island railroads to the west. Later the village expanded west of he railroad tracks to Terry Road. The first (and only) mayor was J.R. Root; aldermen were W.L. Porter, Joe Karese and Will Muh; J.E. Robinson was town marshal, and J.W Langley was city clerk. We’re told a small jail was built but “never occupied”.

 When Jackson first attempted to incorporate Duttoville, the tiny village put up a fight. The Duttovillers went to court and fought the incorporation and won. The city of Jackson appealed, and after two years, while the case was still pending in court, the citizens of Duttoville and Mayor Hemmingway of Jackson made a compromise.

The city agreed to extend water, lights, telephone, a fire station, police protection, a grammar school (George School) and other amenities. But the area continued to be called by its original name, which in time became corrupted into “Doodleville” or “Dooleyville” both used well into the mid-20th century as a popular though derisive term for the part of town bordered by Battlefield Park on the south, Terry Road on the West, Hooker Street on the north and South Gallatin on the East, all well west of the original settlement.

Belhaven resident Wilfred Cunningham, who grew up on Farish Street, remembers going to Doodleville as a very young man. “This was in the late Forties, and I was in my early teens. Anything south of Capitol Street on Farish Street we considered Doodleville,”

“The area was much more depressed than North Farish. I seem to remember the roads weren’t paved, the streets were graveled, I thought we lived poorly on Farish, but Dooley was a lot more run down.” Cunningham said.

“The houses were row houses, shotgun houses like we had on Farish. People from Doodleville would come to Farish where we had the ice cream parlors, the stores, the clubs, and the Alamo. There wasn’t any industry of any kind there for jobs, so most of the people worked in north Jackson.”

“For some reason I was always told not to let the sun go down on me there. I never ran into such a problem, but I always got the impression that there was a gang of some kind that kept Doodleville for people who lived here and weren’t friendly to outsiders.”

Jackson bluesmen Cary Lee Simmons and Bubba Brown composed the “Doodleville Blues” in the 1930s, and it was a local hit, getting lots of laughs when Simmons performed it for his friends in Jackson. He made a recording in 1967, which you can listen to here.
