Louis LeFleur, Frontiersman

Surprisingly little has been written about Louis LeFleur, who gave his name to Jackson’s Pearl River bluff, and became the father of the last chief of the Choctaw Nation (Greenwood LeFlore). Much of that written is inaccurate, the most glaring error being that he was a French-Canadian when in fact he was born in the tiny French colony of “Mobille” surrounding Fort Condé on the Gulf of Mexico.

Louis LeFleur was born Louis LeFlau; since by custom Louis eventually came to be known as LeFleur, we’ll use that name throughout to refer to him as LeFlore will be used in reference to his son Greenwood. Louis’ father, Jean Baptiste LeFlau came from France in the early 18th century as a soldier in the Fort Condé garrison. In 1735, he married Jeanne Boissinot, a native of Mobile, who bore him three children before her death in 1752. Jean Baptiste then married Jeanne Girard in 1753 and Louis, their third child, was born on June 29, 1762. There are no records of Louis LeFlau after his baptismal entry of 1762 until around 1790, but it’s certain that during this time he began trading with Native Americans, primarily the Choctaws, and likely operated flat-boats on the Amite and Pearl Rivers as well as in the Mississippi Sound.

LeFleur epitomizes those men of the American frontier who plied their trade along the navigable rivers in a wilderness before, during, and even after the advent of steamboats and the eventual dominance of rail. In Antebellum Natchez James D. Clayton writes that “L. LeFleur (sic), father of a celebrated Choctaw Chieftain of a later era, operated with handsome profits the main boat shuttle to Pensacola, carrying produce and commodities.” He brought luxury items to the prosperous city of Natchez, including “fine apparel” which “had been ordered from Panton, Leslie, and Company of St. Marks in east Florida.” The boats LeFleur and those like him used were flatboats or keelboats that were manned by a crew of up to twenty-five people. The goods LeFleur routinely carried were much less luxurious, used in his trade with the Choctaw, and the pelts he secured were sold in the trading houses at St. Marks and Pensacola. Corn and other farm products were sold in in Florida and Natchez.

Sometime around 1790, LeFleur cheerfully adopted the Choctaw system of polygamy and married both Nancy and Rebecca Cravat, the half-French nieces of the Choctaw Chief Pushmataha. LeFleur moved his growing family—three children were born by 1798—to Pass Christian, but with the establishment of the Choctaw Agency near present-day Jackson, he chose as a location for the new home a bluff on the west side of the Pearl River, rising some twenty-five feet above the crest of the floods and extending along the river for several hundred feet. With the opening on the Natchez Trace under the treaty of Fort Adams in 1801, LeFleur opened a way station in the same location where traders, travelers and mail carriers could secure fresh horses. This station rapidly became an inn providing bed and board as well as entertainment. The actual site of this trading post is disputed. Greenwood was the first of the “LeFlau” sons to be born at LeFleur’s Bluff on June 2, 1800, named for the Greenwood in the firm of Greenwood and Higginson, the London correspondents of Panton and Leslie.

LeFleur still operated his profitable boating trade, securing commissions from General William C.C. Claiborne, Governor and Commander-in-Chief of the newly organized (1798) Mississippi Territory to carry “certain goods sent by the United States as presents to the Choctaw Nation of Indians.” He also carried messages to the Governor of the Province of Louisiana. In addition to being entrusted with the delivery of merchandise making up the government annuity payments to the Choctaw Nation, Louis was asked to be present at the occasions when terms of treaties were negotiated. Louis “Leflow” is listed as one of the witnesses to the Treaty of Mount Dexter on November 16, 1805, which conveyed large amounts of land in what is now southeastern Mississippi and southwestern Alabama, including much of the western portion of Clarke County, Alabama, to the United States.

By 1810, operation of the inn and raising cattle had become LeFleur’s main enterprises, and he, along with Louis Durant, was said to have introduced cattle into Mississippi. Travelers from the east and from foreign lands have mentioned the accommodations at the Bluff and at the inn he established in 1812 at the place now known as French Camp. At French Camp, LeFleur had a number of buildings erected and it was here in 1812 that Major John Donly, who held the U.S. Government contract for transporting the mail on the Nashville-Natchez route, suggested to Louis that he be allowed to take young Greenwood home to Nashville with him in order that the boy might receive an “American education”, and LeFleur consented. Louis served with Pushmataha under Andrew Jackson in the War of 1812 and was promoted to the rank of major (brevet). He also served three months in 1814 in command of a company on Russell’s expedition to Alabama. He later served in the campaign to Pensacola in 1814-15.

With the introduction of the steamboat on the Mississippi River—the New Orleans was the first steamboat down the Mississippi in 1811—commerce along the Trace fell, but LeFleur expanded his agricultural interests and in a decade tripled their acreage in cultivation and heads of cattle. Greenwood was elected Chief of the Northwestern Division of the Choctaws, but when Jackson was elected president in 1828 he pursued a policy of negating the treaties between the U.S. and the Choctaws, and with the Treaty of Dancing Rabbit Creek (1830) the Choctaws were forcibly removed from their ancestral lands. In a survey of freeholds within the Choctaw lands is a record for “Louis LeFlau, 300 acres in cultivation in the Yazoo Valley; five in family with four males over 16”. Major LeFlau was to receive two sections of land according to the Supplement to the Dancing Rabbit Creek Treaty.

The Treaty of Dancing Rabbit Creek was a coup de grâce for the Choctaws and it caused deep rifts in the LeFlau/LeFleur/LeFlore family. Details are sketchy, but Greenwood is in the fifth and last level of behests in Louis’ will, which was signed April 16, 1833. Louis LeFleur died that same year, and while his gravesite is unknown, family tradition states that he was buried in Hot Springs, Arkansas, not very far from LeFlore County, Oklahoma.

Christmas at Rowan Oak

This is an excerpt from Malcolm Franklin’s Bitterweeds:  Life with William Faulkner at Rowan Oak (1977) Born in Shanghai in 1923, Franklin was the son of Cornell and Lida Estelle Franklin. After what’s most often described as a “cordial” divorce, Estelle married William Faulkner in 1929, and he began living in Oxford, Mississippi. Franklin served as a medic during World War II, studied medicine and herpetology. He died in Charleston, South Carolina, in 1977.

Of all the holidays at Rowan Oak, Christmas was the most festive. An air of great excitement prevailed everywhere, even in Chrissie’s and Andrew’s little cabin.

I recall one cold, crisp December mid-afternoon, when the various members of the family gathered in the library in preparation for the expedition to get the Christmas Tree. This was the very beginning of Christmas, when the tree was found and cut.

Each was bundled up against the cold. This year there was Jill, Pappy, Victoria’s husband Bill Fielden, myself, Mama, and Andrew bearing the axe. It was Pappy who chose the tree-a cedar that had less of a chance to become a large tree. In making his choice he was also careful to thin out the woods properly, leaving extra growing space for the ones not cut, for our Christmas Tree always came from Bailey’s woods on Rowan Oak’s grounds.

After the tree was felled, Andrew and Pappy spread the khaki-colored tarp smoothly on the ground. Then the tree was carefully wrapped in the tarp, leaving an area at the base free so that Pappy and Andrew and all of us could take turns pulling it through the woods to Rowan Oak. This was done to protect the branches as the tree was pulled along, for it was far too heavy to carry.

The tedious chore of getting the tree up and ready for trimming was then completed. By then it was late afternoon and a cold sharp light came in through the living room windows. The trimming was left to the ladies with the men offering a suggestion now and then. Boxes of ornaments lay open on the floor. Tinsel lay heaped on the parlor table. When the decorations had found their way onto the delicate outer branches and the tinsel, sparkling and clear, reached to the very top ornament, the tree was a beautiful sight to behold. Across the hall the library door stood open. A roaring fire crackled in the fireplace. A bourbon bottle stood open on a silver tray. Cut glass waiting to be filled caught the reflection of the fire. (Christmas was preceded by trips for Christmas cheer to Memphis, seventy-odd miles away, the nearest place offering a wide selection of bourbon, wine, and of course champagne for the New Year.)

There were other trips to the woods for greens and decorations, all to be gathered before Christmas Eve. The gathering of the holly and mistletoe was quite a task. We had to drive almost eight miles out into the country to the place where it grew. This was an old Chickasaw Indian Boundary line, where the holly trees were used to mark the line running east and west. In the trees high above these hollies grew the mistletoe. So high up were they, that it was necessary to shoot the mistletoe out with a .22 rifle. Only a few berries were lost as the branches fell.

It was Christmas Eve morning. Pappy had taken Mama to Oxford in the old touring car to do last minute shopping. She had left instructions with Chrissie that if any packages or boxes should arrive while she was out, to just have them left in the house or on the verandah. Where I was at the time no one was sure. After all, it was Christmas Eve.

Toward the middle of the afternoon Chrissie was summoned by a sharp rap on the front door. It was the driver of the Railway Express van, with several large boxes for Mr. Franklin. Upon Chrissie’s instructions he and his crew neatly lined up three boxes on the verandah and drove off.

As the afternoon became colder and a grey sky brought early darkness, Mama and Pappy turned into the driveway, headed for the open fire and a drink. When Mama reached the top step on the verandah and saw those long boxes, all three of them, she was astounded. “Billy,” she called out, “What on earth do you suppose Malcolm’s receiving in these boxes?” As Faulkner reached the verandah he took one look at the boxes and called out loudly for me. **Buddy,” he said, “What on earth are these things? Come here!”

I had just come in by the back door and had not seen the boxes. I hurried through to the front verandah, took one quick look and knew. Dear God! They had sent out to me three cadavers meant for the Anatomy Department of the University!

When Mama found out what they were she took off for the library saying “Get rid of them! Get rid of them!”

I turned to Faulkner and explained. “Pappy,” I said, “I told Dr. Hogg that if anything was sent to the Anatomy Department during the holidays, the Express Company could call me and I would go over to the Department and let them in! I didn’t tell them to deliver cadavers here!”

“Well,” said Pappy. “We cannot have an array of cadavers gracing the verandah on Christmas Eve! You’d better phone Railway Express to pick these up immediately.”

Heading towards the telephone, shaken by the array of cadavers, I called back to Pappy. Please pour me a stiff drink while I make the call!

As the number was ringing the thought flashed through my mind that, as it was late Christmas Eve afternoon, there just might not be anyone there. But We had barely finished our drinks when the Railway Express van drove up again to the front Verandah. Faulkner then volunteered to drive me to the science building where I unlocked the door and made room for the Railway Expressmen to deliver the cadavers. As they emerged from the building Faulkner pulled from his pocket a pint bottle and passed it to each man.

When we arrived back, Rowan Oak was brightly lighted, and the glitter of the tree could be seen as the car came down the driveway and pulled up under the porte-cochere. Entering the library we headed toward the fire to warm up again. The aroma of various hot dishes drifted into the foyer from the dining room, where a buffet was being placed on the table. Norfleet appeared carrying a water pitcher. He bowed to Faulkner as he set the pitcher in place on the tray next to the bourbon decanter and glasses. For many friends would find their way up the cedar-lined driveway of Rowan Oak on Christmas Eve, leaving gifts or stopping by to say “Merry Christmas,” and perhaps sampling one of the hot dishes on the way to replenish a glass. This evening there were Dr. and Mrs. John Cully, Colonel and Mrs. Evans of ‘Minmagary” fame, Colonel Baker and his charmingly vivacious wife Kate, and many, many more.

The hour was a little past eleven, and younger members of the family were preparing to leave for the midnight service at St. Peter’s. A great flurry of activity could be glimpsed beyond the parlor door as coats were being held, gloves pulled on, and scarves flung across shoulders with an occasional impatient “Hurry or we’ll be late.” Older guests also began to disperse, leaving Pappy and Mama to go upstairs, where the stockings lay waiting in Mama’s room to be filled. Christmas Eve had suddenly become very quiet as Rowan Oak waited for the arrival of Santa. Even the dogs seemed somewhat subdued.

Daylight had hardly crept across the east lawn and touched the great cedars before young couples were astir in Rowan Oak. Jill’s and her young cousin Vicky’s were the first voices to be heard. Then there would be Pappy’s voice, trying to subdue the exuberant chatter as the girls headed for Mama’s room where the Christmas stockings hung waiting. Chrissie had already brought “Miss Estelle’s” coffee tray up, and was peeping from behind the door and saying “Christmas Gif,” and flashing her brilliant, warm smile. She caught Pappy on the stairs, tipping down to fix his own breakfast. Chrissie knew that Mr. Bill would be the only one to eat a proper breakfast: eggs, bacon, and grits covered with melted butter, topped off with hot coffee.

On Christmas Faulkner was always a fastidious dresser. To start the stocking-opening ritual in Mama’s room, he wore an elegant and ornate silk Chinese robe. In this he would have his breakfast. Even for the early part of the ceremony of the tree he would be so dressed, for by nine-thirty the young people were there beside the tree in the parlor. It was at this time that Mama would make her appearance wearing a lovely Chinese wrapper in soft, muted pastel shades.

The younger members of the family, including the colored servants, Broadus, Norfleet, Estelle, and others, gathered around the tree. Pappy in his colorful dressing gown officiated. He offered a prayer first. Then he picked up a package and called a name. That person stepped forward and received it. This continued until all the packages were passed out, amid a flurry of paper and ribbon the boxes were opened.

The time had now come for Faulkner to receive his gifts. These consisted of little bundles of pipe cleaners, some in assorted colors, others snow-white. There were all kinds of pipe cleaners in various bundles clinging precariously to the branches of the tree, each with its little tag. There was one package of Dill pipe cleaners, which Faulkner liked particularly. The tag on this read: “To Pappy, Love Buddy.” The next, a gaily colored mixture, said “To Pappy, Love Jill.”

For Faulkner would accept only pipe cleaners from the family with the exception of an occasional handkerchief from Mama. If he received any other gift, he would carefully take it to his office and there it would remain unopened.

Colored members of the family went merrily off to the kitchen to open their gifts. There were pints of bourbon for our colored friends: Henry Jones, Wade Ward, and Wallace, who hunted with Faulkner, and of course Andrew.

The dining room table had been made ready early that morning. The Christmas punch bowl glistened ruby red, the flowers were gracefully arranged. Punch cups were placed about the ornate lace table cover. The bowl could be glimpsed by members of the family as they made their way upstairs to dress for the day. This was a Christmas punch created by Faulkner for the holidays. It consisted of apples, bourbon, dry burgundy and soda water, chilled by a generous portion of ice chunks.

During the morning and through the day frequent knocks at the kitchen door were followed by shouts of “Christmas Gif!” and various folks that had worked for us during the year received in return a Christmas drink and cheerful word. This was the custom in Oxford and throughout Mississippi. Wallace, at the request of Faulkner, stood ready with a wagon to drive to their homes those who could no longer navigate.

During the early afternoon members of my mother’s family began to arrive. There was my mother’s sister Aunt Dot, and my grandmother Oldham, this time without my grandfather. He had passed away during the war. Then there was Mary Jenkins, Dr. John Cully’s surgical nurse, who lived at the Oldhams’, and had for years been almost a member of the family. She had on numerous occasions taken care of Faulkner during serious drinking bouts.

Miss Maud, Faulkner’s mother, never went out on Christmas, or attended dinner at the homes of any of her children. She preferred to have her sons and grandchildren drop in and visit her. After her husband, Mr. Murry, passed away in the early 1930’s Miss Maud never had a Christmas Tree. Instead, there were bouquets of holly, Christmas greens, and a holly wreath at the front door. About mid-afternoon Faulkner would leave for a visit with Miss Maud, usually staying an hour. Then he would return to dress for dinner.

The afternoon grew late. Faulkner, who had returned to Rowan Oak and dressed in the white tie and tails which he considered appropriate for the occasion, made his appearance in the parlor, suggesting as he did so that drinks were in order. He then headed for the library fire and a bourbon, soon to be followed by members of the family. Conversations over drinks rose and fell with merry outbursts of laughter. Ice clicked against chilled glasses as new toasts came up. Mama came gaily into the library, saying, “Billy, will you do the honors?” Those who were seated before the fire arose, and we all placed empty glasses on the tray as we passed the library table on the way to the dining room.

Faulkner was already standing at the head of the table as the members of the family reached the dining room. The long table was draped with its elegant linen cloth, and the lighted candelabra cast uneven shadows on the polished silver. Holly and Christmas greens in a low cut-glass vase formed the centerpiece. Silver goblets with crisp white linen napkins marked each place.

There were two small tables placed at graceful angles near the dining table. These were for the younger members of the family, for there were too many to be seated at one table. Small gumdrop trees were placed in the centers of these tables. Their dainty linen and lace tablecloths swept close to the floor.

Chairs were held for the ladies as Faulkner graciously designated where each was to be seated. Norfleet’s white coat flicked through the pantry as he made a smiling entrance carrying the huge serving platter and turkey. After Pappy said the blessing, the turkey was carved. Each plate was bountifully served as Norfleet held it for Faulkner. Boojack re-set Faulkner’s place as Norfleet removed the well-carved turkey, placing it on the long narrow serving table on Faulkner’s left just in front of the fireplace.

Faulkner, lifting a crystal wine glass, poured a small portion in the glass and tasted it. Then each glass was filled by Faulkner as he walked around the table. When every glass was filled, Fau toast appropriate to the occasion. Boojack entered carrying a heaping dish of rice. Just behind, Broadus appeared bearing a large bowl of giblet gravy. There was always a tremendous amount of giblet gravy prepared, for it was a favorite with rice on Christmas. Then came the broccoli with a cheese sauce, followed by a shallow dish of sliced buttered sweet potatoes. The ham was passed, and a final platter of broiled quail. The long serving table had very little room left as the dishes were placed on it.

It was Boojack who, sometime later, swung open the door carrying a large empty tray. She, with the help of Broadus, removed the dinner plates and placed the dessert plates beside Mama.

Norfleet appeared almost immediately bearing a large cut glass bowl of ambrosia, which he placed in front of Mama. Seeing the ambrosia reminded Faulkner of a story a good friend had told him. Faulkner repeated the story as the ambrosia was passed. This friend had a cook, and when she was asked if she would like to go to heaven when she died, she stood silent for a few minutes. Then, smiling broadly, she replied: “No Sir, I don’t believe I wants to go to heaven, cause all I’d be doing up there every day for Eternity is grittin’ up coconut for the white folks’ ambrosia.”

Boojack returned carrying fruitcake and a silver urn of after-dinner coffee and the cups. Norfleet placed in front of Faulkner a bottle of cognac and delicately patterned small brandy glasses. By the time the last refill of cognac had been offered and conversation become somewhat scattered it was time to leave the table. The sky was a deep black and night had come. Christmas was over.

The Man Who Loved Christmas

First published in the Calhoun County Journal Dec. 20, 1984, this memoir of my father, Jesse L. Yancy, Jr., was written fourteen years after his death by his friend and political partner, Sellers Gale Denley. Jess Jr. was a remarkable man in a difficult time, colorful, vibrant, and generous, his life a vision of community, unity, and compassion.

If there was ever a man who loved Christmas, it was the late Sen. Jesse Yancy of Bruce. The word “loved” is used advisedly. For there are those who might be said to “enjoy” Christmas, “respect” Christmas, “anticipate” Christmas, etc., but Jesse loved Christmas. His enthusiasm might have been regarded as extreme; except that was the way Jesse was about most things. He worked hard. Then he played hard. More than likely this approach to life was a primary cause of his untimely death on Aug. 26, 1970, at the age of 44, from a massive heart attack. Prior to assuming the senate post he served as district attorney of the third circuit court district for eight years and was city attorney in Bruce for 17 years. So it wasn’t unusual that the new city library was named in his honor.

And the way that Jesse launched the Christmas season was not particularly unique or unusual, either. It began with a big party with his friends at the Bruce community building. Funds were solicited for a live band and a case or so of assorted spirits and goodies, with a few dollars left over for another project. You see, Jesse had a secret Christmas vice. He liked to dress up in a funny red suit, hide his face behind a mask of white whiskers and, on Christmas Eve, visit the area in South Bruce where most black citizens lived.

Before each of these visits his automobile was filled with candy, nuts, fruit, toys and firecrackers. In the early 1960s it was all the Christmas some of the children had. The ritual started in the ’50s when he dressed up to play Santa for his own children. His family decided he should also go see the children of the black woman who worked for them. His appearance was an immediate hit. It was the Christmas of 1960, when I started helping him with the project, that he said he realized back then on his first trip that most of the black children had never really seen Santa Claus. So it became an annual event, growing in scope each year, to make the Christmas Eve appearance. The addition of toys and other goodies was a part of the evolution. The project was financed with any excess funds from the party, plus contributions from several of us who usually helped, with Jesse taking up the slack. It started each year with several trips to area wholesalers to purchase the large volume of goodies needed for some 250 to 350 children.

The bounty would be hauled in and the Yancy children—Cindy, Tom and Lee, often assisted by cousins Bill and Bob Cooper—and others would assemble individual sacks. Then, on Christmas Eve, Jesse would put on his Santa suit, we would load up a vehicle or two—the most memorable and utilitarian being a dark green Mustang convertible— and begin the appointed rounds. There must have been a lookout, for as soon as the first vehicle crossed the railroad tracks, which marked the boundary of the black community, several young boys would take over the lead position. With wide-eyed excitement they would precede the caravan down Murphree Street shouting: “Here he comes. Here comes Santa. Here he comes.” And for the next hour or so Jesse would be in his Christmas glory.

He handed out presents to those close by while keeping an eye out for those too shy to come up to him, so he could seek them out later. He knew quite a few of them by name. And almost all of the parents knew Jesse and whispered their thanks. But if the children knew him they didn’t let on. And neither did they let on if they sometimes got a whiff of the Old Charter Santa and his helpers found useful in warding off the cold and other miseries.

The custom died with Jesse. The party lasted another year or two, and some of us talked about continuing the Santa Claus visit. But, we rationalized, it was 1970 and the children were being encouraged to visit Santa on the Square, sponsored by the city as a part of the Lion’s Club Christmas parade. So we didn’t.  It has been 35 years, but every Christmas about this time I begin to get a little bit anxious. Like you feel when you know there is something you probably need to do. Like you feel when you know there is something you probably will never get to do again.

It has been suggested that one can sometimes recapture the spirit of Christmases-past by recording remembrances like these. I am confident that Jesse would overlook my indiscretion in writing about it now.

Welty’s White Fruitcake

The Jackson Cookbook, first issued by the Symphony League of Jackson in 1971, followed by a well-deserved 30th anniversary issue, features Eudora Welty’s introduction, “The Flavor of Jackson”, a savory dish of Southern culinary exposition.

In the essay, Welty writes: “I make Mrs. Mosal’s White Fruitcake every Christmas, having got it from my mother, who got it from Mrs. Mosal, and I often think to make a friend’s fine recipe is to celebrate her once more,” Welty wrote.

The original recipe in The Jackson Cookbook was submitted by Mrs. Mosal’s daughter, Mrs. D.I. Meredith. In 1980, this expanded version appeared on  a limited edition Christmas card sent out by Albondocani Press, Ampersand Books, and Welty herself.

White Fruitcake

1 1/2 cups butter
2 cups sugar
6 eggs, separated
4 cups flour, sifted before measuring
flour for fruit and nuts
2 tsp. baking powder
pinch of salt
1 pound pecan meats (halves, preferably)
1 pound crystallized cherries, half green, half red
1 pound crystallized pineapple, clear
some citron or lemon peel if desired
1 cup bourbon
1 tsp. vanilla
nutmeg if desired

Make the cake several weeks ahead of Christmas if you can. The recipe makes three-medium-sized cakes or one large and one small. Prepare the pans — the sort with a chimney or tube — by greasing them well with Crisco and then lining them carefully with three layers of waxed paper, all greased as well.

Prepare the fruit and nuts ahead. Cut the pineapple in thin slivers and the cherries in half. Break up the pecan meats, reserving a handful or so shapely halves to decorate the tops of the cakes. Put in separate bowls, dusting the fruit and nuts lightly in a sifting of flour, to keep them from clustering together in the batter.

In a very large wide mixing bowl (a salad bowl or even a dishpan will serve) cream the butter very light, then beat in the sugar until all is smooth and creamy. Sift in the flour, with the baking powder and salt added, a little at a time, alternating with the unbeaten egg yolks added one at a time. When all this is creamy, add the floured fruits and nuts, gradually, scattering the lightly into the batter, stirring all the while, and add the bourbon in alteration little by little. Lastly, whip the egg whites into peaks and fold in.

Start the oven now, about 250. Pour the batter into the cake-pans, remembering that they will rise. Decorate the tops with nuts. Bake for three hours or more, until they spring back to the touch and a straw inserted at the center comes out clean and dry. (If the top browns too soon, lay a sheet of foil lightly over.) When done, the cake should be a warm golden color.

When they’ve cooled enough to handle, run a spatula around the sides of each cake, cover the pan with a big plate, turn the pan over and slip the cake out. Cover the cake with another plate and turn rightside up. When cool, the cake can be wrapped in cloth or foil and stored in a tightly fitted tin box. From time to time before Christmas you may improve it with a little more bourbon, dribbled over the top to be absorbed and so ripen the cake before cutting. This cake will keep for a good while, in or out of the refrigerator.

Note from a Culinary Gumshoe

Anyone who entrusts you with a family recipe loves you and will give you other instructions like, “Get a job.”

Such memories bind us all, and heirloom recipes should be treasured as reflections of a people and their character. I’m always on the lookout for old recipes from family lines and any dish not mentioned in that harangue of books and magazines devoted to Southern cuisine. Community cookbooks are a fine source of these recipes, but you can bet your bottom dollar that more than a few contributors are simply not going to share essential details because the church secretary was caught sleeping with her brother-in-law.

Some years ago, I found a recipe that stands out: amalgamation cake. Yes, it’s a cake, but amalgamation is a word you usually stumble on in cookery works by dirt road academics purportedly “devoted to” and “enthralled with” Southern foodways. I first heard this cake mentioned by a friend from Tupelo; queries to others brought about a dozen responses, all of them indicating that the amalgamation cake originated from northeast Mississippi and adjacent Alabama.

I felt smug about isolating a true north Mississippi heirloom when someone popped up and pointed out that Ferrol Sams mentions amalgamation cake, “And he’s from Georgia.” Recipes also hail from northwest Tennessee, western South Carolina and a bundt from Florida that seems way off all maps, but they are few. No mention is made of amalgamation cake in “Southern Living”, not in any of Quail Ridge Press’ “Best of the Bests” series, nor in any of my Jackson cookbooks. It is in The Mississippi Cookbook, published by the Mississippi Cooperative Extension Service in 1972, confirming that amalgamation cake is a rural tradition.

Research on the origins of this recipe became a grail quest. The earliest recipe I’ve found is handwritten from Itawamba County in 1939, sent to me by Bob Franks in Fulton. Apparently recipes for amalgamation cake are jealously guarded in families, passed down and shared only with close friends and relatives. True to form, every recipe I received came with stringent instructions to follow; those who shared recipes with me said if I didn’t use fresh coconut that I would die and go to–a deeper level of–hell.

They all told me to get a job, too.

Amalgamation cake is always made for Christmas, and is similar to Alabama’s Lane cake, made famous by its mention in To Kill a Mockingbird. The Lane cake was created by Emma Lane of Clayton, Alabama who published her recipe in 1898. Most recipes for both cakes result in layers of white sponge cake with a filling of raisins, pecans, and coconut. The main difference between a Lane cake, which has it, and and amalgamation cake, which doesn’t, is liquor. The Lane cake, like its cousin the Lady Baltimore, is always infused with bourbon or some such, while the sober amalgamation abstains from spirits. The sole exception to this rule is a recipe from my home county (“Vote dry and drink wet!”) Calhoun, which calls for a sweet wine wrap overnight.

The following recipe was published in The Tuscaloosa News, Nov. 2011, from Billie Ruth Armstrong Moore, a student in the Osher Lifelong Learning Institute’s “Preserving Your Family History” class. Asked to bring in a family recipe and write about it, she wrote:

Granny’s Amalgamation Cake was a favorite dessert at Thanksgiving and Christmas which our extended Armstrong family always celebrated at the home of my grandmother, Georgia Elizabeth Shumpert Armstrong. Her home was located near the Evergreen Community which is in the southwest corner of Itawamba County, Mississippi.

Billie Ruth includes scaly bark hickory nuts, a distinctively native ingredient. White raisins were mentioned as a refinement, and seven minute frosting is standard.

BATTER
1 1⁄2 cups sugar
1⁄2 cup Crisco
3 eggs (or 9 egg whites)
1 cup milk
2 1⁄2 cups plain flour
2 teaspoons baking powder
1 teaspoon vanilla flavoring

FILLING

9 egg yolks
2 cups sugar
1 3⁄4 cups milk
1⁄4 pound butter
1 15-ounce box raisins
1 1⁄2 cups mixed nuts (1 cup pecans and 1⁄2 cup scaly barks)
1 big coconut, grated

Bake batter in 2 or three layers. For filling, beat egg yolks well, and then add sugar, milk and butter. Mix well and cook on medium heat until thickened slightly. Add raisins and nuts, cook until thick, add coconut last. Beat well, cool, spread between layers, then assemble and frost cake. Let rest several hours–overnight if possible–before serving.

The Christmas War in Calhoun County

While no battles of importance took place in Calhoun County, Mississippi, Leon Burgess, in his M.D.L. Stevens and Calhoun County, Mississippi offers Stevens’ account of a December skirmish in the northwest. The original story appeared in The Calhoun County Monitor on June 4, 1903.

In December, 1862, Gen. Grant’s army pressed back the Confederate army from Holly Springs to Coffeeville where after a sharp engagement Grant fell back to Water Valley, threw out a strong cordon of cavalry and encamped for the winter.

About Christmas a strong company of Kansas Jayhawkers invaded Calhoun County north of Schoona River, spending their fury in and about the village of Banner. They captured the few horses and mules remaining in the county, robbed every chicken roost and hen nest, stole turkeys, geese and ducks, and now and then they took a fat hog. In their rounds they confiscated a barrel of moonshine whiskey near the big rock at the head of Cowpen Creek. They drank freely, filled their canteens and came to Banner, where they took and destroyed everything in sight. In the afternoon they set out for Water Valley. Each marauder had his canteen full of “wild cat” and, tied in front and behind his saddle, a good lot of turkeys, geese, ducks and chickens, and a haversack full of eggs. They left Banner yelling like a mob of Hottentots, all full of wild cat whiskey; more than a hundred strong, the Federals insulted every old man they met and drove women and children from their homes.

A small squad of Willis’ Texas Cavalry was hanging around Grant’s army, watching every movement. They learned of the contemplated raid on Banner, followed in the of the Federal cavalry and kept a close eye on their movements. The Texans received into their ranks a few of the Calhoun boys at home on furloughs, armed with double-barreled shot guns and mounted on mules and horses. The company numbered about 20 of the battalion and 12 or 15 of the local boys. They saw from a distance the devastation of Banner and the surrounding country and saw that the Jayhawkers were tanking up on the “bust skull” whiskey and were preparing to leave for Water Valley. Willis, under the guidance of a friend, hosted his small band of braves in a narrow valley were the horses were tied and the boys were concealed on the crest of a narrow ridge about 60 yards from the road that ran up a narrow hollow west of Gore’s Branch 5 or 6 miles from Banner.

On came the drunken Federal mob, more than a hundred strong, singing, cursing and looting, all bent on reaching Water Valley with their booty. They crossed Gore’s Branch, the headwaters of Long Persimmon Creek, and moved up the road running parallel with the long ridge. When the Federal cavalry had filled the road at the foot of the ridge, Willis gave the command to fire. Sheet of flames leapt from 30 guns; volley after volley was poured into the panic-stricken Federal ranks. Horses and riders were piled promiscuously on the road.

The Rebel boys rushed down the hill and captured men, horses, turkeys, ducks, chickens and canteens half full of mountain dew. They mounted and followed in hot pursuit of the fleeing Federals. Down by Trusty’s and Tatum’s they charged the retreating Jayhawkers, killing and capturing men and horses; their charge to Tuckalofa Creek was a race for life. The next day a regiment of Federal cavalry came out and buried the dead and cared for the wounded. No estimate on casualties.

Hernando de Soto and his remaining troops crossed the Tombigbee near present-day Columbus and spent the winter near Tupelo, reaching the Mississippi River on May 8, 1541.

René-Robert Cavelier, Sieur de La Salle explored the Ohio River Valley and the Mississippi River Valley and claimed the entire territory for France as far south as the Gulf of Mexico. La Nouvelle-Orléans was founded May 7, 1718 by the French Mississippi Company under the direction of Jean-Baptiste Le Moyne de Bienville.

1699
The first permanent settlement in French Louisiana was founded at Fort Maurepas (now Ocean Springs referred to as Old Biloxi) in 1699 under Pierre Le Moyne d’Iberville, with Louisiana separated from Spanish Florida at the Perdido River near Pensacola (founded 1559 and again in 1698).

Fort Rosalie—the site of modern-day Natchez—was established by the French. Natchez was to become the most important European settlement in the Lower Mississippi Valley up until the Civil War.

1736
The Chickasaw Campaign of 1736 consisted of two pitched battles by the French and allies against Chickasaw fortified villages in present-day northeast Mississippi. Under the overall direction of the governor of Louisiana Jean-Baptiste Le Moyne de Bienville a force from Upper Louisiana attacked Ogoula Tchetoka on March 25, 1736. A second force from Lower Louisiana attacked Ackia on May 26, 1736. Both attacks were bloodily repulsed, and French domination of the Mississippi Valley fell into decline.

1763
The Treaty of Paris, also known as the Treaty of 1763, was signed on 10 February 1763 by the kingdoms of Great Britain, France and Spain, with Portugal in agreement, after Great Britain’s victory over France and Spain during the Seven Years’ War. By the terms of the treaty, Britain wrested the area east of the Mississippi River from the French.

1774
Phineas Lyman led a group of New England veterans of the French and Indian War to settle in the new colony of West Florida (then a territory of Great Britain) near Natchez on the Big Black River where he died shortly before the outbreak of the American Revolutionary War.

1783-1795
Under the terms of the Peace of Paris (1783), a series of treaties between Great Britain, France and Spain, what is now Mississippi above 31° north latitude parallel passed to the United States of America, but a separate Anglo-Spanish agreement, which ceded both Florida provinces back to Spain, did not specify a northern boundary for Florida, and the Spanish government assumed that the boundary was the same as in the 1763 agreement by which they had first given their territory in Florida to Britain. Spain claimed the expanded 1764 boundary, while the United States claimed that the boundary was at the 31° parallel. Negotiations in 1785–1786 between John Jay and Don Diego de Gardoqui failed to reach a satisfactory conclusion. The border was finally resolved in 1795 by the Treaty of San Lorenzo, in which Spain recognized the 31° parallel as the boundary, and British troops were withdrawn in 1798.

April 7, 1798
The Mississippi Territory was organized. The territory’s original boundaries consisted of the region bounded by the Mississippi and Chattahoochee rivers in the west and east, the 31st parallel in the south, and the point where the Yazoo River emptied into the Mississippi River in the north. Government was patterned after the 1787 Northwest Ordinance which established a governor, secretary and three judges to serve as a ruling council. After the territory’s population reached 5,000 free adult males, an assembly could be elected and a delegate sent to Congress. Winthrop Sargent, a New England Federalist, was appointed governor.

1799
Chafing under Sargent’s autocracy his opponents presented their grievances to the federal government, which granted a second stage of territorial status to Mississippi, including the popular election of officials. In 1801 Democratic-Republican President Thomas Jefferson removed Sargent from office. The new administration repealed all of Sargent’s laws and moved the territory’s capital from Federalist-dominated Natchez to nearby Washington.

1804
The northern boundary of the Mississippi Territory was extended to the Tennessee state line.

1812
President James Madison annexed land along the Gulf of Mexico, and by 1813, the Mississippi Territory encompassed the boundaries of present-day Alabama and Mississippi.

March 27, 1814
General Andrew Jackson won the Battle of Horseshoe Bend which destroyed the Red Stick Creeks as a military power. The subsequent Treaty of Fort Jackson forced the devastated Creeks to cede over 23 million acres of land to the United States and cleared the way for an influx of immigration into the Mississippi Territory.

October, 1816
Prominent residents from throughout the Territory met at the home of John Ford, south of Columbia, to discuss statehood. In what became known as the “Pearl River Convention,” the attendees—the majority overwhelmingly eastern section residents—decided to send leading territorial official Harry Toulmin to the nation’s capital to request admission of the Mississippi Territory as a single state.

March 1, 1817
President James Madison signed the Enabling Act that granted admission of the western section of the Territory as the state of Mississippi on; the eastern section was organized as the Alabama Territory at the same time. The line of division, which still serves as the boundary between Mississippi and Alabama today, was designed to be a compromise between the wishes of western and eastern residents of the Territory.

July, 1817
Forty-eight delegates from Mississippi’s fourteen counties met at Washington to draft the new state’s constitution. The constitution established Mississippi’s government and recognized Natchez as the state’s capital.

August 15, 1817
The Alabama Territory was carved from the Mississippi Territory.

December 10, 1817
President James Monroe signed the resolution that admitted Mississippi as the nation’s twentieth state. Territorial governor David Holmes won election as the state’s first governor. Electors also chose George Poindexter as its only congressman and Walter Leake and Thomas H. Williams as its first senators. Alabama entered the Union on December 14, 1819.

Long before Oxford became a locus of Southern foodie hype, the busy little city fostered and  sustained a lively variety of hometown restaurants. This list was hammered out by a bickering, nit-picking flock of Oxford residents both current and former.

Stan and Joan

In March, 2017, Joan Didion published the notes of her jaunt forty-eight years ago through Louisiana, Alabama and Mississippi in a slender book, South and West (Knopf). We’ll take a much more in-depth look at the book in a later entry, but first let’s focus on the passage in which Didion meets with the legendary “Voice of the Rebels” Stan Torgerson, in Torgerson’s home town of Meridian, Mississippi.

Bear in mind as you read that the month is June, the year is 1970. Nixon is in the White House for his first term. The nation as a whole is in a somewhat less turbulent mode after the riotous Sixties, but no section is more complacent than the South, where the key word had become progress. This passage is in essence an examination of the ongoing homogenization of the South as seem through the eyes of a transplant from the upper Midwest (Torgerson) and told to a visitor from California.

At times Torgerson sounds like a one-man chamber of commerce espousing racial harmony, social equality and industrialization. When Stan says, “We’re not as inbred as we used to be” he’s referring not (necessarily) to genetics but instead to the influx of people and ideas from outside the South; when he says “we don’t wear crinolines any more” he’s telling Didion that Old South is gone. But though he says, “If there were elm trees hanging over the street it would be very midwestern,” as they drive through residential Meridian, the issues of race and poverty he discusses are those of the South.

This section from Didion’s work appears here in its entirety not only for the more compelling reason that it needs to be read in toto to grasp its exhaustive effect on Didion and to understand more fully Didion’s comments in context—particularly the last line—but also on a somewhat sentimental level because those many of you–as I do–remain familiar with Torgerson’s voice from his 17 years on air with Ole Miss sports might recollect his voice in the cadences of the quoted passages.

When I called Stan Torgerson for lunch at his radio station, WQIC, and asked him the best place to lunch, he said Weidmann’s, “but it wouldn’t win any Holiday Magazine awards.” In fact it had, and was not a bad restaurant, but everyone in Mississippi begins on the defensive. “I’ll be the biggest man in a green shirt to come through the door,” he advised me. He was, at lunch, wary at first. He said he didn’t think I knew what I was doing. I agreed. He refused drink, saying he wasn’t in New York City. Stan Torgerson came out of the cold North (Minnesota, I think) and headed to Memphis, where he went into broadcasting. He worked in Miami, and then, for a year, in San Diego, living in La Jolla. He felt ill at ease in La Jolla—his neighbors kept to themselves, had their own interests—and he wanted to get back south. His son had won a football scholarship to Ole Miss. He was worried about his children and drugs in California. “Excuse me,” he said, “but I just haven’t reached the point where I think pot is a way of life.”

When the black radio station in Meridian came up for sale he bought it. He also broadcasts the Ole Miss games, something he began doing when he was in Memphis. “That’s right,” he said, “I own the ethnic station, WQIC. In its thirteenth year of serving the black community here.” He programs gospel and soul, and reaches 180,000 in several Mississippi and Alabama counties, the thirty-second largest black market in the country, sixty miles in all directions and forty-three percent of that area is black. We serve a major black market, program soul music and gospel music, but what does that mean? A month ago in Billboard there was a survey pointing out that the Top 40-format stations are playing basically soul. Jackson 5 with ‘ABC.’ ‘Turn Back the Hands of Time,’ that’s Top 40 but it’s soul. Once in a while we throw in some blue-eyed soul, like Dusty Springfield with ’Son of a Preacher Man.’ We don’t play rock because our people don’t dig it. We don’t play your underground groups like the Jefferson Airplane . .. We have goodly reason to believe that ten to fifteen percent of our audience is white; some of the phone calls we get in the afternoon for dedications, they’re definitely white voices. We get thirty-six percent of the audience.”

He said I was probably wondering why he came back to Mississippi. “I came because I dearly love this state. I have a son—he’ll be a senior this fall—playing football at the University of Mississippi.”

He pointed out that Meridian was timber country, hill country. Pulpwood is the backbone of the agricultural product. He pointed out how progressive Meridian was: its three new hospitals. “In most southern cities there is a much stronger tendency to old-line money . . . Southern retailers stayed in business privately, home-owned, until very recently. In most cases the retailer has just begun to feel the competition from the chains. There’s the greatest business opportunity in the country right here in the South . . . We don’t have a McDonald’s in a city of almost fifty thousand people, don’t have any of these franchises here yet. You give one corner of one intersection in Jackson, Mississippi, or you give me the whole ball of wax right here in Meridian, I’d take the whole ball of wax and I’d put a McDonald’s on one corner, a Burger Chef on the other, a Shoney’s Po’ Boy (sic! jly) ‘cross the street . . . “

His voice kept on, weaving ever higher flights of economic possibility. “There is and must be,” he said, a “continued turning to the South by industry. The climate is certainly one reason. Another is that the South wants industry and is willing to give a tax advantage to get it. Another, of course, is that there is a relatively low level of unionism in the South. Lockheed assembles tail sections here and ships them to California for assembly . . .

“Atlanta is the magic city for the young around here, across the whole social spectrum . . . The great migration out in the past ten years has been black, they get these glowing letters, and of course they’ve got relatively liberal welfare programs in some of the northern states . . . No doubt, too, there appears to be greater opportunity in the North.”

More on the progressive nature of Meridian: “Our radio station has probably got as fine a list of blue-chip clients as any in town, black or not. We’ve got all four banks, and anyone in retailing who’s interested in doing business with the black—the black’s dollar is very important. The minimum wage was probably the most important thing to happen along these lines, and then food stamps were a good dead, I would say they added millions of dollars to the economy.”

“We are in a transitional phase. There’s a tremendous push to education on the part of young blacks. The schools here are completely integrated. Of course, neither you not I can change the older black, the forty-year old, his life patterns are settled.”

“Ole Miss has its standards to keep up. As more and more blacks get an educational advantage, you’ll see blacks at Ole Miss. There’s a feeling among some black leaders that because these kids have not had advantages they should get some kind of educational break, but basically what has to happen is the standards have to stay up and the people come up to meet them.”

We were driving through town at night, and Stan Torgerson interrupted himself to point out the post office. “There’s the post office, the courthouse where the famous Philadelphia trials were held, the trials for the so-called Philadelphia deaths.”

“If there were elm trees hanging over the street it would be very midwestern,” Stan observed as we drove through the residential district. He pointed out his $29,500 house, a two-story frame, “twenty-eight hundred square feet, with magnolia, dogwood and pecan trees.” He pointed out Poplar Drive the “Park Avenue of Meridian, Mississippi, all the houses built by the old-line families.”

Fervently, he kept reverting to the wholesomeness of life in Meridian. His daughter, who would be a high school senior in the fall, had “her sports, her outdoor activities, her swimming. It’s a quiet, pacific type of living, which is one of the reasons I wanted to come back down here. The kids are taught to say ‘sir’ and ‘ma’am.’ I know it’s very fashionable to poke fun at the South, but I’ll pit our slum area any day against the slum areas where the Cubans and Puerto Ricans live in Miami, Florida, and Miami’ll lose.”

Meridian is the largest city between Jackson and Birmingham, and there is a naval base there which means a great deal to the community. At apartment buildings largely inhabited by the navy there are cars with plates from all over the country.

Some random social observations from Stan Torgerson included: most of the local children go to college within the state, at Ole Miss or Mississippi (sic jly): the other country club, built with federal money, has a membership which includes “assistant managers of stores and some navy people’: most of the subdivisions in Meridian feature “custom houses.” Torgerson paused dramatically, to emphasize the versatility of the new blood in town: “A fabric store.”

I asked if some of the children did not leave, and he allowed that some did. “Nothing here for the kid with an engineering degree. And of course the girls go where they marry. Southern girls are notoriously husband hunting, but I guess that’s the same anywhere.” It occurred to me almost constantly in the South that had I lived there I would have been an eccentric and full of anger, and I wondered what form the anger would have taken. Would I have taken up causes, or would I have simply knifed somebody?

Torgerson was would up now, and I could not stop his peroration. “There’s been a great metamorphosis in recent years in the South, the Volkswagen dealership for example comparable in size to anything you’ll find anywhere.”

“The KKK which used to be a major factor in this community isn’t a factor anymore, both the membership and the influence have diminished, and I cannot think of any place where the black is denied entrance, with the possible exception of private clubs. We don’t have any antagonistic-type black leaders working against racial harmony. Since the advent of black pride, black power, there is a little tendency to be self-segregating. On our station, we have a program we call Adventures in Black History to point out the contributions black people have made—a black minister does it. I have blacks working in the WAIC Soul Shop, and there’s a black druggist here, a man eminently qualified, who is a local boy who went north and came back, received his training at the University of Illinois. We have a certain degree of black business, including this gas station here, which is owned by a black. The key is racial harmony, and education, and we’ll try to provide our people with both, ‘cause we’re gonna live together a long time. Every major retailer hires black clerks, Sears has a couple of black department heads, there’s a black business college here, and a black and white Careen Training Institute.

“Of course we have transplants, too, new ideas, like any other hybrid we’re generally stronger. We’re not nearly as inbred as we used to be. We’ve been withdrawn in this part of the South for many, many years, but we’ve become more aggressive, and as people come in they’ve helped us become more aggressive—we don’t wear crinolines anymore, no we don’t.”

“And about our politics, well, George Wallace got a lot of votes in Indiana, let’s face it. I’m not saying I’m going to have a black minister come home to dinner tonight, ‘cause I’m not. But things are changing. I had a man the other day, owns an appliance store, he never believed you could send a black repairman into somebody’s house. Now he can’t find a white … He asks me if I know a black man who makes a good appearance. That’s progress . . .”

Of course, there’s a tremendous lack of skilled blacks, and the problem is training and education. It’s no longer a matter of lack of opportunity, it’s a matter of lack of skills. We’re still two generations from full equality, but so are they in Chicago, in Detroit, and have you ever been in Harlem?”

Glazed by the two hours in which this man in the green shirt had laid Meridian out before us as an entrepreneur’s dream, a Shoney’s Po’ Boy (!) on every corner and progress everywhere, even at the country club, I dropped him off and drove through the still-deserted streets of the downtown. A few black women were on the streets and they carried umbrellas against the sun. It was almost five o’clock. In the middle of 22nd Avenue, the main street of Meridian, there was a man holding a shotgun. He had on a pink shirt and a golfing cap, and in one ear there was a hearing aid. He raised the shotgun and shot toward the roof of a building several times.
