The Delta Red

When November comes, hunters up and down the Mississippi flyway flock to the wild with guns and dogs. In the Mississippi Delta, arguably the heart of the flyway, men of a certain feather abandon their usual nests of domesticity for camp, in Irwin Hester’s case his duck camp on Concordia Island in Bolivar County.

“It’s not really an island,” Irwin said. “If anything, it’s a peninsula, since the river makes a tight loop around it.” He looked out the window at the sunset spread out over Arkansas. “You’d think they’d have a special name for a riparian peninsula, but they don’t.”

Irwin retired from what he calls “the oil business” almost a decade ago. He received his degree in geology from Mississippi State in the early 70s and began working with Gulf Oil, stayed with them through the merger, and remained, working his way up the ladder, eventually landing in Pittsburgh at U-PARK.

An only child, Irwin never married (“Just too damned busy,” he explained). When he retired in 2012, he came back home to Mississippi, made a home, renewed old friendships, and moved his folks’ old home to the end of a dirt road on Concordia Island. Twice a year, the beginning of duck season and the end, November and January, he holds camp.

“I make real, Texas-style chili,” Irwin said. “It’s the best, and once you’ve had it, you’ll never call anything else chili. I learned to make it when I lived in Austin. I knew a guy who cooked it at his hunt camp up on the Pedernales River. He said he got his recipe from Lady Bird Johnson herself.

Irwin’s chili has no beans, no tomatoes, and no onions. He uses a lean cut of beef, usually a top round, cut into large chunks, coats these in a mixture of smoked paprika, crushed leaf oregano, cayenne, and ground cumin, and browns them in a cast iron Dutch oven. For each pound of beef, he soaks, peels and seeds four anchos.

He uses the water from the peppers in the beef, adding more to cover about an inch, and places the heavily-lidded pot in the oven at a low temperature (“Just enough to make it simmer”) in the morning, and by the time the sun gets an angle, the chili must be stirred (“Once is enough”) and returned to the oven for another hour. When men return from the field, the fire is blazing, bottles opened, and a guitar is passed around. He keeps Crystal on the table.

“It’s as good a bowl of red as you’re going to get on this side of the Mississippi,” Irwin says.

Believe him.

Governor from Calhoun

On February 26, 1944, the Ripley’s Believe It or Not! cartoon syndicate published a panel featuring a tall, austere gentleman in a black suit. The caption beneath read, “Dennis Murphree has been governor of Mississippi twice although never elected to that office. In 1927 and 1943—as Lt. Governor—he became chief executive through the death of the incumbent.”

True, Dennis Murphree was never elected governor of Mississippi, but that’s not to say he didn’t try, running unsuccessfully in three gubernatorial races. Few people ever wanted to be elected governor more than he did, but the political scales in Mississippi never tilted his way.

He was born in Pittsboro, Mississippi, on January 6, 1886, the first child of Thomas Martin Murphree and Callie Cooper Murphree. His father served four years in the Confederate army and two terms as justice of the peace. He was a member of the school board, twice served as circuit clerk, and was twice elected state representative from Calhoun County. Martin Murphree was also a newspaper editor and died during his second term as state representative.

Dennis Murphree assumed the printing and newspaper office at his father’s death. In 1911 he was elected state representative from Calhoun County, Mississippi, the youngest person elected to that office from Calhoun County up to that time. His formal education was limited, but he obtained a vast amount of experience in the newspaper business. He was reelected state representative in 1915 and again in 1919. He married Clara Minnie Martin of Pittsboro. They had three daughters and one son.

Murphree was a fine orator, and in 1920 he was unanimously elected as temporary speaker of the house of representatives to serve during the illness of Mike Conner, the regularly elected speaker. He served thirty days and obtained valuable experience that he later used as presiding officer of the senate as lieutenant governor.

When Murphree ran for lieutenant governor in 1923, he defeated Hernando De Soto Money, Jr., son of U.S. Senator (1897-1911) Hernando De Soto Money, Sr. During his tenure, Murphree helped promote legislation to help the farmers, Delta State Teachers College (now Delta State University) was established, and the mental institution in Jackson was moved to Rankin County and later named for the incumbent Governor Henry Whitfield.

In 1925, Governor Whitfield called a meeting in Jackson with the object of adopting “some plan whereby the opportunities, possibilities and resources of Mississippi might be effectively presented to the outside world.” Lieutenant Governor Murphree proposed a plan of a “Know Mississippi Better Train,” a special train to carry representatives of Mississippi, exhibits of Mississippi resources, literature, and public speakers to visit across the country. The first KMB train pulled out of Jackson in August of 1925. Except for four years during World War II, the Know Mississippi Better Train ran every summer until 1948.

When Whitfield became ill in the summer of 1926, Murphree acted as governor much of the time. On March 16, 1927, Governor Whitfield died, and Murphree was sworn in as governor on March 18, 1927. A little over a month later, the levee broke at a ferry landing at Mounds, Mississippi, flooding an area 50 mi. wide and 100 mi. long with 20 feet of water, threatening the lives of almost 200,000 people.

FOR GOD’S SAKE, SEND US BOATS! blared the headline in the New Orleans Times-Picayune¸ quoting a plea from Governor Murphree. “For God’s sake, send us boats! Back from the levees, where the land is flooded by backwaters, people are living on housetops, clinging to trees, and barely existing in circumstances of indescribable horror. The only way we can get them out of there is by boat, and we haven’t the boats at present. Please try to make the people of New Orleans realize how urgent this is.”

The disastrous flood of 1927 that almost took Governor Murphree’s life required so much of his time that he was unable to campaign properly. As an additional handicap, he was twice forced by law to call out the National Guard to prevent lynchings in Jackson. Even though he had no choice in either instance, the whole matter was used from one end of the state to the other by his opponent, Theodore G. Bilbo, an ardent and notorious advocate of both white supremacy and white economic democracy to arouse prejudice and inflame hatred by his opponent, Theodore G. Murphree himself was a personal target of Bilbo’s crude and scathing campaign rhetoric. Family legend has it that when Bilbo died in 1947, one of Murphree’s daughters told him he should not go to “that horrible man’s” funeral, to which Murphree replied, “Daughter, I just want to see them throw a ton of dirt on the son-of-a-bitch.”

In 1931 Murphree ran for lieutenant governor and won. When he ran for governor in 1935 against Hugh L. White and Paul B. Johnson, Sr., he failed to get into the second primary. In 1939 he ran his third successful race for lieutenant governor. As lieutenant Governor Murphree helped Governor Johnson carry out most of his proposed legislation, including free textbooks for the schoolchildren of the state, an increased homestead exemption (from $3,500 to $5,000), and an expanded membership for the Board of Trustees of Institutions of Higher Learning to remove the board from political influences.

Murphree ran for governor the third time in 1943 in one of the most hotly contested gubernatorial races in Mississippi history against former Governor Mike Conner, Thomas L. Bailey, and Lester C. Franklin. Murphree failed to get into the second primary by less than 400 votes. Bailey won the election in an upset.

Then a little more than a month after the November general election, Governor Paul B. Johnson, Sr., died on December 26, 1943. Once again, Murphree was elevated to the governor’s office to serve the remainder of the Johnson term. He served as governor from December 26, 1943, to January 18, 1944, when Governor-Elect Thomas L. Bailey was inaugurated.

After a life devoted to public service, Murphree died of a stroke on February 9, 1949, at the age of sixty-three. He was buried near his home in Pittsboro, Mississippi.

Cathead Biscuits

Take two cups of self-rising flour and sift in dry a scant teaspoon of baking soda. Add 1/3 cup cold vegetable shortening, and mix thoroughly with your fingers until granular.

Working quickly, stir in enough chilled buttermilk to make a sticky dough. Throw this dough out on a generously-floured surface, sprinkle with a scant more flour and knead once or twice, no more than enough to make a manageable mass.

Roll out thick, about half an inch, and, using a sharp edge, cut into large rounds, at least 3″. Again, work quickly so that the dough doesn’t get warm; the soda has to work in the oven.

Place the biscuits–just touching–in a lightly greased skillet or thick metal pan. Pop them into a very hot oven for about a quarter an hour until golden-brown and fragrant. Brush with butter while hot.

Ignatius vs John Pela

“A small and sallow figure whose shorts hung clumsily in the crotch, whose spindly legs looked too naked in comparison to the formal garters and nylon socks that hung near the ankle,” resplendent in a red beard, besotted by the milk of human kindness—and perhaps feeling not a little guilty—stands on the porch of the Reilly home ready to provide some comfort to Irene Reilly. Patrolman Mancuso had found out that Irene couldn’t afford the a $1000 fine for drunk and destructive driving he’d given her.

Mancuso looked at the Plymouth and saw the deep crease in its roof and the fender, filled with concave circles, that was separated from the body by three or four inches of space. VAN CAMP’S PORK AND BEANS was printed on the piece of cardboard taped across the hole that had been the rear window. Stopping by the grave, he read REX in faded letters on the cross. Then he climbed the worn brick steps and heard through the closed shutters a booming chant.

 While he was waiting for someone to answer the bell, he read the faded sticker on the crystal of the door, “A slip of the lip can sink a ship.” Below a WAVE held her finger to lips that had turned tan. (p. 33)

The “chant” Mancuso hears is the refrain from “Big Girls Don’t Cry,” is a song written by Bob Crewe and Bob Gaudio. Originally recorded by The Four Seasons, “Big Girls” hit number one on the Billboard Hot 100 on November 17, 1962, and spent five weeks in the top position. The song—along with the movies that Ignatius sees at the Prytania—provides an important signature for the novel’s time setting. Mancuso follows Irene into the kitchen and they commiserate over coffee and donuts. Soon enough, they begin to discuss Ignatius.

“He’s out in the parlor right now looking at TV. Every afternoon, as right as rain, he looks at that show where them kids dance.” In the kitchen the music was somewhat fainter than it had been on the porch. Patrolman Mancuso pictured the green hunting cap bathed in the blue-white glow of the television screen. “He don’t like the show at all, but he won’t miss it. You oughta hear what he says about them poor kids.” (p. 35) “Oh, my God!” Ignatius bellowed from the front of the house. “Oh, my heavens! These girls are doubtless prostitutes already. How can they present horrors like this to the public? What an egregious insult to good taste. Do I believe the total perversion that I am witnessing?” Ignatius screamed from the parlor. The music had a frantic, tribal rhythm; a chorus of falsettos sang insinuatingly about loving all night long. “The children on that program should all be gassed,” Ignatius said as he strode into the kitchen in his nightshirt. Then he noticed the guest and said coldly, “Oh.” (p. 36)

Most of us will recognize “the show where them kids dance” as “American Bandstand,” but in New Orleans, in November, 1962, the popular local edition of was “The John Pela Show.” Pela was a staff announcer for local station WWL-TV who in 1961 took over hosting duties of the show originally titled “Saturday Hop.” Featuring a studio full of New Orleans teenagers dancing to the latest pop hits, and with groovy, era-appropriate graphics—including a stylized riverboat–setting the mood, the live, hour-long dance party originated from the WWL studios every Saturday a must-see for NOLA teens in the day.

Ignatius maintained an extreme opinion.

“The ironic thing about that program,” Ignatius was saying over the stove, keeping one eye peeled so that he could seize the pot as soon as the milk began to boil, “is that it is supposed to be an exemplum to the youth of our nation. I would like very much to know what the Founding Fathers would say if they could see these children being debauched to further the cause of Clearasil. However, I always suspected that democracy would come to this.” He painstakingly poured the milk into his Shirley Temple mug. “A firm rule must be imposed upon our nation before it destroys itself. The United States needs some theology and geometry, some taste and decency. I suspect that we are teetering on the edge of the abyss.” (p. 37)

After a tumult with Irene, Ignatius retreated to his room.

He slammed his door and snatched a Big Chief tablet from the floor. Throwing himself back among the pillows on the bed, he began doodling on a yellowed page. After almost thirty minutes of pulling at his hair and chewing on the pencil, he began to compose a paragraph.

Were Hroswitha with us today, we would all look to her for counsel and guidance. From the austerity and tranquility of her medieval world, the penetrating gaze of this legendary Sybil of a holy nun would exorcise the horrors which materialize before our eyes in the name of television. If we could only juxtapose one eyeball of this sanctified woman and a television tube, both being roughly of the same shape and design, what a phantasmagoria of exploding electrodes would occur. The images of those lasciviously gyrating children would disintegrate into so many ions and molecules, thereby effecting the catharsis which the tragedy of the debauching of the innocent necessarily demands. (p. 40)

Considered the first female writer from the German-speaking lands, the first female historian, the first person since antiquity to write dramas in the Latin West, and the first female poet in Germany, Hroswitha (c. 935–973) was a secular canoness at Gandersheim Abbey In Lower Saxony. She has been called “the most remarkable woman of her time”, and an important figure in the early history of women. Hroswitha’s six short dramas are considered to be her most important works. Ignatius’s conjuration of Hroswitha likely stems from her position of a dramatist, with the medieval stage providing a parallel to a televised dance floor, making  her somewhat of a patron saint of public performance. She’s an interesting choice for his appeal, since Tool most certainly would have been aware of Hroswitha’s reputation as a proto-feminist, which jars somewhat with Ignatius’s position as an ultra-conservative Catholic:

“I do not support the current pope. He does not at all fit my concept of a good, authoritarian pope. Actually, I am opposed to the relativism of modern Catholicism quite violently.” (p. 45)

Finally, don’t recoil at Ignatius’s dire punishments for (presumably) innocent teenagers. Ignatius is a medievalist, and however diminished by contemporary horrors, the Middle Ages were brutal and cruel. Ignatius is following the script.

Ars Voces: Euphus Ruth – Time’s Eye

When I go somewhere to take photographs, I sort of have something in mind, but it has to feel right or speak to me for me to actually make a wet collodion photograph. I may shoot some snapshots on film or take some documentary shots of things I am recording over time, but for the plates it has to be that feeling of connection with time and place, past and present.

This is a scanned copy of an 11×14″ red glass ambrotype I made at Poplar Springs Cemetery in Calhoun County in April of 2012. I had been staying in Bruce at my parent’s and decided to go up to Poplar Springs where my great-grandparents (Starling Monroe and Nancy Ruth) are buried..

After walking around the cemetery for a long while, reading the gravestones and making a few snapshots with a hand-held camera I decided I would not set up the wet collodion. I got in the car to back out of the cemetery entrance for some reason instead of driving through.

That is when I saw this image. It hit me: there it was the old fence I had noticed and not noticed my entire life of visiting there. I could see my relatives’ gravestones in the background but what grabbed me was the fence, the plants, the foliage: that feeling.

I pulled back in and proceeded to set up the portable darkbox, get the chemicals ready, and mount the camera on the tripod. In about 30 minutes I was looking through the camera’s ground glass at this image. In another 15 minutes I was washing the chemicals from the glass and feeling good about the plate.

In 2014 the cemetery caretakers in their infinite wisdom totally removed the fence and cleaned the bank off, destroying some of the visual reminders of 50 plus years of visiting this cemetery. Nothing lasts forever; that is one of the reasons I’m a photographer.

Jack Myers: Civil Rights Pioneer

Jack Myers stood at the forefront of gay rights in Mississippi for over fifty years, running a series of gay bars and clubs in the capital city of Jackson. In this interview Myers talks about the many places he ran and shares his memories of others.

This all started back when I was in high school, we’re talking 1962-63. I finished radiology school, lived in Memphis for a while, lived in Eupora for a while, worked at the state hospital and at the VA. While I was at the VA they sent me to Duke for a year for in-service training, and was hoping for a position in Jackson, but they never got the position open. I gave them 30 days to decide if they were going to give me more money, but they just kept putting it off, so I left after 30 days.

The first gay bar I can recall going to was called the Sportsman’s Lounge. You go down here and you turn on Mayes Street, Cowboy Malone’s used to be right there by the tracks, and there’s a little bitty building on the other side of the track and it was called the Sportsman’s Lounge. As a matter of fact, I had my 21st birthday there. I worked there when I was… it was in ’60-something. I was in X-ray school at UMC at the time. There have always been clubs in Jackson that weren’t openly gay but where gay people were welcome. I remember T.C. Schilling, one of the first people I met when I came out here, he used to own Jackson Commercial College, and he talks of some places that he used to go and one was down there on West Capitol Street, and there was a place off Robinson Road, you know where East Ford used to be? Where Robinson Road crosses Hwy. 80? If you leave here and go out Robinson Road you’ll cross Ellis Avenue, and right before you get to Hwy. 80 on the left facing Hwy. 80 used to be East Ford. You get behind the Ford place and you turn right, there’s a long road that goes through there, and he said he used to go to a place, there was a woman that had a bar out there. He said she’d take up for the gays in a minute, wouldn’t let anybody bother anybody. And there’s a lot of (gay) people I know used to go to the Walthall Hotel downtown. That was in the ‘60s.

I worked at the Sportsman’s Lounge, then he closed that bar and opened a place on McDowell Road where the police shooting range is now. That was all wooded then, it had a drive that went up to this big old house; it was called the Mansion. The guy lived upstairs, and one side of the downstairs was the bar. And if the sheriff’s department or the police came by and two guys and two girls were dancing, they’d just switch partners.

I know when I first came out, on Woodrow Wilson, where you take a left and get on Bailey Avenue, they took several old houses and made them into businesses and there was a place called Chez Pierre’s that was gay-friendly. The Glass Kitchen on Five Points was a popular restaurant. When I was in school at UMC from ’64-66 all of us who were in school would go to Delta Drive because they’d taken a lot of old houses up there and turned them into bars and they had bands, you took your own bottle, they only sold beer. There was the Pepper Mint Twist Lounge, the Hilltop A-Go-Go, the Sirloin Room; the Sirloin Room always had this great band called the Poppas.

I can’t remember the exact year I opened my first bar, but it was in the early ‘70s. It was on Delta Drive, now Martin Luther King Drive. And I moved from there downtown to the old Wagon Wheel which was on Capitol and Farish Streets upstairs. The entrance was on Farish. Then we bought the old Amite Theatre. It was behind Jack’s Saloon, it was on the corner of Amite and Roach; they were back-to-back. There was a Dr. Wade Windham who opened a bar there, a straight bar called the City Dump, I think it was. They took old cars and made benches and booths out of them. We sold them all for scraps. We completely remodeled it.

Bill’s Disco (black bar) was on the corner of Amite and Mill Streets there by the train station. It was called the Interchange when we had it. I’m thinking that when the old theatre burned we moved there and called it the Interchange and Bill Rimes ran it for us… well, the old theatre was called Bill’s Disco and it burned in 80-something. And then we moved on the corner across the street to that small building, opened it was the Interchange on Amite. They tore the old Amite Street Theatre down and built that monstrosity in the back; I can’t remember what it’s called (This is the catty-corner building on the corner of Roach and Amite.)

The dance bar on Capitol was Jack and Jill’s. It wasn’t the first bar; it was the first big dance bar. I don’t know if it was this article (in a local paper), but there was also one in the Washington Post that quoted me as saying that I had the first (gay) bar in Jackson, and no, I didn’t. There were bars years before I had one here. There was a girl bar where Amite Street gets to Capitol and crosses Capitol and turns into Robinson Road. I’m thinking that’s where it was. The road that goes by the train station, Amite, comes in (at an angle) there and crosses Capitol. There’s a little bar that sits there, there’s a parking lot out front. There’s been a bar there for years, but there was a girl that had it for a while. Her name was Polly Wilmer. In fact, I hadn’t seen her in years and Harry and I went by the Waffle House to get something to eat and this girl came by and said, “Are you Jack Myers?” I said, “Yeah.” “Well, this is Polly Wilmer,” she said. Oh, my God, I hadn’t seen her in years, and she’d gotten big, huge and she used to be a little tiny thing. We talked for a while; she used to have that bar, it was on Robinson Road, I think, used to be a Waffle House or something that sat right in here. It wasn’t Mississippi Street.

When I first opened Mae’s Cabaret on Delta Drive, now Martin Luther King, we got some hassle from the police. I was working at the Raincheck on Northside Drive; going west on Northside drive, you cross over the train tracks and as soon as you crossed over the tracks you took a left and there used to be a brickyard there. The only thing left there was an office; it was very small. It had a nice-sized room in the front, and a nice-sized room in the back, but to get to the back, you had to go through a hallway where the bathrooms were. And then you had the back room, where people could dance. When the police came in, the lady who ran the door would push a button under the desk and a light would flash and everybody would know to sit down. Because in order to have a dance license, you had to have an emergency exit off the dance floor, and there wasn’t a door back there. But one of the policemen said something to Doris about, “We know you have that light,” and she said, “I’m not worried about having a door back there, you know, trying to hem in a queen… (laughter).”

Doris wanted me and her to go into business, I worked with her for a long time, she wanted to open up a bigger place. I think I got a mortgage on my house; I had it paid for. So we opened up the place (Capitol and Farish?), and the police chief said, “The only thing I ask, you know, it’s fine having the show, but I want someone from vice and narcotics to come see the show.” And he did. It was Officer Fitzgerald. After that was over, he said, “Man, I don’t see anything wrong with these shows.” And I said, “Well, I did the right thing, paid the first people off when you told me not to have a show, and sent them back to Atlanta, but it’s not a strip show.” He said, “Well, I see that now, but somebody told us you were going to have a strip show.” That’s when we saw the chief and he said if the church could have their womanless wedding, then we could have a drag show.

 

When we had the old Amite Theatre downtown, we had a bunch in a pickup came by, they did not get out, just came by yelling stuff out to us. That’s the only incident we ever had like that. We always had off-duty city policemen working for us. Just a uniform; they could wear their uniforms. 95% of our protection was just them being at the bar. If you had an off-duty policeman working for you, you had to carry liability insurance and name the Jackson police department on that policy. That’s how you got to hire them. If you’re going to use a policeman, they want their ass covered. It wasn’t that expensive. It either paid a half a million or a million.

(In Jack’s bars) Momma and Daddy ran the door. And if Momma didn’t recognize you, the first thing she’d say was, “This is a gay bar, you’re welcome, and if you don’t like it or whatever, you can leave. If you cause trouble, we have a policeman here.” If it was someone (like a public figure) who might be looking around to see what was going on, she’d tell them not to be nervous, to come on in. Well-known people who were on the make’d go to New Orleans or somewhere like that where nobody could see them. People would come to me all the time and say, “I saw So-and-so (in this gay bar) in New Orleans.” They couldn’t come out here but could there.

Big Boy’s Strawberry Pie

While Shoney’s menu claims the pie is baked, only the pie shell is baked. The filling is cooked and cooled, the strawberries simply washed and sliced.

Combine 2 tablespoons of cornstarch with a cup of sugar and a half a package of strawberry gelatin. Mix in a cup of water and heat, stir until thick, and cool.

Bake a 9-inch pie crust until lightly browned. Cool, blend strawberries into the gelatin, spoon into pie shell, and refrigerate until firm. Overnight is best.

Water Buffalo

Trash fish is a slang term for what U.S. state agencies and anglers call rough fish to describe fish species not commonly eaten or fished for sport. A fish considered rough fish in one region may be considered a game or food fish in another due to culture or tradition.

For example, the common carp is considered an undesirable rough fish in the United States and Australia, but is the premier game fish of Europe and the most valuable food fish across most of Asia. Gar is an undesirable nuisance in most places in the U.S., but in Louisiana it’s mashed, made into balls with seasonings and fried.

Buffalo is a genus (Ictiobus) of freshwater fish common in the United States. It is sometimes mistaken for carp because of its flat face and large, silver scales running along the body, though it lacks the whisker-like mouth appendages common to carp. Buffalo live in most types of freshwater bodies where panfish are found, such as ponds, creeks, rivers and lakes. From a fisherman’s point of view, the buffalo is difficult to catch; the preferred method is with gill nets.

According to Dr. Jim Steeby, former research and extension professor at MSU, “There are three species of buffalo: bigmouth, smallmouth and black. The smallmouth, also called the razorback, is most commonly caught in rivers with hoop nests.

“We can spawn and grow them with catfish in ponds,” Jim said. “They are minnow family fishes so they have bones in their flesh, but it’s a Southern favorite; the ribs are the best part. In the Delta at Stoneville, we did mostly catfish research, but we worked on some other species. Back in the early 60s they started growing buffalo in ponds in Arkansas, then switching to catfish as the market for them was better. Buffalo are not grown much anymore. Most of the harvest comes from commercial fishermen. If the market were bigger we could easily supply it, but buffalo seems likely to remain a regional favorite.”

Jackson chef Nick Wallace said that the unpopularity of buffalo might have something to do with the bones, “But you can go to some of these Southern fish markets and find buffalo. It’s not cooked in the restaurants at all; maybe because the chefs don’t like the quality because of the bones, I’m not sure; maybe it doesn’t fit to their clientele. But fish markets that do six hundred, seven hundred thousand dollars a year, they have it. It is seasonal, mainly winter, but it has a long season. To me, it is a delicate fish. If you eat it, you have to eat it delicately.”

“Years ago, I called Mark Beason early one morning, and I said, ‘Mark, I have B.B. King coming in, and B.B. wants some buffalo.’ Mark took his nets to the Big Black River and an hour later I had two big buffalo. I checked it for abrasions and dark marks; you want to watch out for things like that. The whole fish is edible, and the tail is great. B.B. wanted it the next day, too. I had gotten a couple more, and he took two whole buffalo with him. They had a kitchen on his bus, and he had a guy with him who was back in the kitchen when I was cooking it, looking over my shoulder.”

“It has a nice pink flesh,” Nick said. “The fish needs to be eaten piping hot because the taste is more pronounced when you eat it hot. If you let it cool down, it’s almost like a muscle, the fish tightens up. You want to handle this fish hot. When my granny made buffalo cakes, she would get her hands in the hot cooked meat to make them.”

“That’s what I like about cooking this type of fish, it actually takes work, it’s not just a simple meat you slice on the bias and throw in the skillet. You have to really touch this food, feel it, know it and work with it. She’d make the cakes like a croquette. She’d put mustard in the cakes and if you’re making a buffalo sandwich you’re going to want good mustard on it: white bread, mustard and tomatoes. Best sandwiches in the world.”

“Buffalo should stand out a lot more than sea bass, halibut and tilapia,” Wallace adds. “We were raised on Mississippi fish, that’s what we were used to, and that needs to be talked about. I just don’t understand how you can go to a restaurant and find sea bass on the menu, when you have anything you could really want to be sustainable here in Mississippi.”

The Right Reds

Most people claim I’m an old ass who’s quick to fuss about any damned thing in the world. Let me confirm that accusation by pointing out that when cooking New Orleans-style red beans most people insist on using the wrong beans.

Yes, that’s right. Instead of honest-to-goodness red beans, most people—even most vendors—use kidney beans, which are—yes—red, but they aren’t the right red. You’ll see small kidney beans marketed as red beans all the time; even the Camilla brand red beans are kidneys, as are those used by the Blue Runner people.

However, most markets in the mid-South will have honest-to-goodness red beans sold simply as red beans. If you look at the ingredients, you’ll find “small red beans,” not kidneys as you’ll find on the Camilla package or on the Blue Runner label.

Wave me off and say there’s only a whisker’s difference between the two, but it’s crucial; a matter of veracity, refinement, and taste.

Lowery’s Ivory-Bills

George H. Lowery, Jr., (1913-1978) was founder and director of the Museum of Natural Science at Louisiana State University, and one of the most respected ornithologists in the nation. This account of his sighting of ivory-bills near Tallulah, Louisiana, is from his Louisiana Birds (1955; LSU Press).

One of the most exciting ornithological experiences of my life occurred on the rainy Christmas morning of 1935. On the previous evening my father and I, with two companions, had entered the Singer Preserve, near Tallulah.

This area was at the time a great virgin hardwood bottom land forest. We were in quest of America’s rarest bird, a species that few living ornithologists had ever seen except as a museum specimen. Indeed, until the year before, ornithologists had come to believe that this, the largest of all woodpeckers in the United States (total length twenty-one inches), had joined the ranks of the Dodo, Labrador Duck, and Passenger Pigeon.

It was a comment to this effect in the offices of the Louisiana Wild Life and Fisheries Commission that prompted a quick denial from Mr. Mason Spencer, a resident of Tallulah, who happened to be present. So incredulous was everyone of his assertion that Ivory- bills still lived near Tallulah that a permit was immediately issued to him to shoot one this with the certainty that he would produce nothing more than a “log-god,” or Pileated Woodpecker. Mr. Spencer, however, promptly vindicated himself, to everyone’s amazement, by securing a male Ivory-bill. The specimen was mounted and is still on display in the main foyer of the Louisiana State Museum in New Orleans.

After several unsuccessful attempts to see this great woodpecker myself in the Singer Preserve in the summer of 1934, I was still trying on the Christmas Day mentioned above. My companions and I were out at daybreak, quietly stalking through that magnificent hardwood forest with our ears strained for only one sound-the high-pitched nasal yamp, yamp, or as some people interpret it, kent, kent, of an Ivory-bill. We saw flock after flock of Wild Turkeys, dozens of deer, and scores of “log-gods,” but no sign of the bird that we really sought.

A slow drizzling rain that began to fall did not seem to better our prospects, but suddenly, far in the distance through the great wood, a telltale sound reached our ears. Approaching cautiously in the direction indicated by the calls, we soon beheld not one but four Ivory-bills feeding on a tall dead snag! There were two males and two females, which, with their powerful bills, were proceeding to demolish the bark on this dead tree, in search, no doubt, for flat-headed beetles, or “betsy-bugs.”

I went back several times to this place, once when Drs. A. A. Allen and Paul Kellogg took motion pictures and sound recordings of an Ivory-bill at its nest. Once I even caught, before it hit the ground, a piece of wood that an Ivory-bill, in the tree above me, chipped off with a vigorous chisel-like blow of its beak.

But, at least in the Tallulah forest, and maybe everywhere in Louisiana, all that is something of the past. The great forests where Ivory-bills were struggling to survive from 1935 to 1938 are now gone. The last virgin hardwood bottom land swamp on the North American continent fell to the ax because not enough sentiment could be raised to save it! The last authenticated report of the bird in the state is of a lone female that lingered in this area in the spring of 1943 after the felling that same year of a tree that contained a nest and eggs.

It is possible that no future generation of Americans will be able to spend a Christmas morning, or any morning, watching four Ivory-billed Woodpeckers go about their daily routine amid huge redgums whose diameters are greater than the distance a man can stretch his arms. I wonder what natural beauties we shall have, aside from the mountains and the sky, a hundred years from now!
