A Divine Dressing

Why don’t today’s chefs create dishes in honor of performing artists like those who gave us Melba toast and turkey Tetrazzini? Where’s the Bowie sundae, the Madonna cupcake or the Star Wars souffle? The need, as I see it, isn’t so much for the dishes, which are admittedly key components, but for the stories they may tell, such as this one.

In 1923, George Arliss took the stage as the Rajah of Rukh in The Green Goddess. Arliss was at the height of his career. He went on to repeat his performance in the film version of the play and received an Academy Award nomination for the role, ironically losing to himself that same year (1930) when he played British prime minister Benjamin Disraeli in the eponymous film.

While in San Francisco, Arliss stayed at The Palace Hotel, and for a banquet in Arliss’s honor, the executive chef of the hotel, Philippe Roemer, himself a celebrity, created an original salad dressing with an assortment of finely chopped green herbs to suggest the name of the play. The dressing is a signature recipe in the hotel’s Garden Court Restaurant, most often served with the Dungeness Crab Salad.

The classic Green Goddess recipe usually includes anchovies, mayonnaise, vinegar, green onion, garlic, parsley, tarragon and chives in some form or quantity. Some cooks add sour cream or yogurt, and a popular contemporary version includes avocado (wouldn’t it just?). Served with steamed vegetables or seafood. Combine and mix in processor or blender:

1 cup parsley leaves
1 cup packed spinach leaves, stemmed
½ cup tarragon vinegar
1 cup mayonnaise
1 garlic clove, roughly chopped
3 anchovy fillets
¼ cup vegetable oil

Chill well before serving on fresh greens and vegetables.

Oyster Dressing

Southern dressings tend to employ more wheat the closer you get to the Gulf Coast, and oyster dressings are no exception.

Most Louisiana recipes call solely for a stale French loaf of some kind, but  Mid-South recipes–as well as older ones, since wheat breads are new to the inland South–most call for cornbread. This recipe, involving both, is typical of central Mississippi.

(A note: do not use green pepper in this recipe; I’m a devotee of the gentle bonhomie wisdom of Justin Wilson, who maintained that bell peppers are “taste-killers.”

Sauté two cups each diced white onion and celery in a stick butter until tender. Bring to heat a pint of oysters with liquid in a half stick butter until oysters are beginning to curl. Combine three cups crumbled cornbread and three cups crumbled bread crumbs in a large bowl with a tablespoon dried thyme, a tablespoon dried basil, and a tablespoon rubbed sage.

Add cooked onion, celery, and butter along with three well-beaten eggs. Mix well while adding enough stock to make a thick slurry. Add oysters, blend well, and spoon into a lightly-buttered baking pan. Bake at 350 until center is firm, about an hour.

The Hoka’s Hot Fudge Pie

The Hoka had two signature desserts: the New York-style cheesecake made by the Freer sisters, and a hot fudge pie made by Jani Mae Locke Collier. Jani Mae is a native of Oxford. She and my sister Cindy lived together at a big house at the end of North 14th in the mid-1970s when the Hoka started. Jani brought this family recipe to the Moonlight when Betty Blair got it going. Jani Mae is married to Emmett Collier, who makes beautiful pottery in Brandon, Mississippi. It’s a very simple recipe, easily made, and best served à la mode.

Jani Mae’s Hot Fudge Pie

1 cup sugar
1 stick butter
½ c. plain flour
5 tablespoons cocoa
2 eggs beaten

Cream butter and sugar, mix well with flour, cocoa and eggs. Spoon into a toasted pie crust. Place in middle rack of oven at 350 until firm in the middle, about 20 minutes or so. Serves four.

Traditional Ambrosia

Southern ambrosia is traditionally made with  fruits from Mexico and Central America that came to stores in the rural South during the winter–oranges, pineapples, bananas, and coconuts–lightly sweetened with cane sugar. Maraschino cherries have long been an option.

Extract the meat from the coconut, skin and grate. The pineapple should be golden, aromatic, and somewhat soft, peeled, diced, and macerated.  Use sectioned Valencia oranges, which are sweeter than navels. These too should be macerated and chilled.

To serve,  drain fruit and layer into a glass bowl or trifle. Top with a generous sprinkling of hand-grated coconut and a light sprinkling of sugar. Add more fruit along with a few sliced (slightly green) bananas. Top with coconut. Combine some of the juices from the macerating to drizzle over the fruit; reserve the rest for rum punch.

The Green Bean Queen

Most Southern holiday dishes are home-grown recipes of family favorites, but unlike Grandma’s sweet potato pie or Aunt Sally’s ambrosia, the ubiquitous green bean casserole was developed in 1955 in the Camden, NJ test kitchens of the Campbell Soup Company by home-town girl Dorcas Reilly.

A 1947 graduate in home economics from Drexel University, Reilly began working at Campbell’s in 1949 as one of two full-time staff members in the company’s home economics department. Reilly became something of a prototype for today’s culinary celebrities in the sense that she was among the first to use multiple media outlets for marketing.  Not only did her job with Campbell’s involve creating recipes from the company’s products, but she also sent press releases to print media, prepared food for photo shoots and cooked live on television. The difference lies in that Dorcas was not promoting herself; she was promoting Campbell’s Soups, which was a good way to make a living.

“It was really a lot of fun,” Reilly later recalled. “Each Thursday, I would travel to New York to meet with the ad agency. They would tell me what I was to prepare for the live commercial breaks during The Henry Aldrich Show in Studio 3B on NBC. I did everything from shopping for what I needed to preparing the food on the set. Campbell’s sponsored the show from 1951 until it ended in May 1953.”

Since the show was live, Reilly prepared the dishes in a makeshift studio kitchen on two heating elements near a utility sink. When time came for the commercial to air, she would bring the hot dish to a table in front of the camera.

“Most times there wasn’t time for me to get out of the shot, so I would hide under the table until the commercial was over,” Reilly said. Reilly led the team that created the green bean casserole in 1955. She says the casserole was invented as a recipe involving two things most Americans always had on hand in the 1950s: canned green beans and Campbell’s Cream of Mushroom Soup.

Like all recipes typical of the period, the casserole requires minimal number of ingredients, takes little time and can be customized to fit a wide range of tastes. An estimated 15 million households will serve Dorcas’ green bean casserole this holiday season. The Campbell’s Soup Company estimates that $20 million worth of cream of mushroom soup are sold each year for use in this recipe alone.

In 2002, Reilly, then living in Haddonfield, NJ, appeared at the National Inventor’s Hall of Fame to donate the original copy of the recipe to the museum. In 2008, Alpha Sigma Alpha, Reilly’s sorority at Drexel, honored her with the Recognition of Eminence Award, and in 2013 Drexel established an annual $1,000 scholarship in her honor and bestowed her with its inaugural Cultural Contribution Award.

Dorcas died on Oct. 15, 2018 in Haddonfield at the age of 92.

Giblet Gravy

Use a quart of clear, rich broth thickened with a thin paste of corn starch and water. To this add the yolks of at least two boiled eggs which have been creamed with a pat of butter.

Add four more chopped hard boiled eggs (yolks and whites), the cooked and chopped livers and gizzards of the turkey as well as the hen you used for your stock (about two cups), but not the meat from the necks, which are superfluous and troublesome.

I often add a half cup of chopped, sauteed green onions and celery for texture. Salt to taste and season with white pepper. A smidgen of thyme is a nice accent.

Sartoris Thanksgiving

In a his article “Cooked Books” (The New Yorker, April 9, 2007), Adam Gopnik points out that there are four kinds of food in books: “Food that is served by an author to characters who are not expected to taste it; food that is served by an author to characters in order to show who they are; food that an author cooks for characters in order to eat it with them; and, last (and most recent), food that an author cooks for characters but actually serves to the reader.”

Faulkner falls solidly into the second category, a writer who uses food to show who his characters are, as does (unsurprisingly) a French writer who influenced the Mississippian very much, Marcel Proust.  “Proust seems so full of food—crushed strawberries and madeleines, tisanes and champagne—that entire recipe books have been extracted from his texts,” Gopnik says. “Proust will say that someone is eating a meal of gigot with sauce béarnaise, but he seldom says that the character had a delicious meal of gigot with sauce béarnaise—although he will extend his adjectives to the weather, or the view. He uses food as a sign of something else.”

This is precisely what Faulkner does with the Thanksgiving meal at the Sartoris home in Flags in the Dust, his first novel to be set in Yoknapatawpha County (called “Yocona”). Written in 1927, the novel was rejected by his publisher, but it was released in a drastically edited version as Sartoris in 1929. The full manuscript was finally restored and published under the editorial direction of Douglas Day in 1973. The novel is set just after World War I and focuses on the once-powerful, aristocratic Sartoris in decline, clinging to the vestiges of affluence. Here Faulkner describes their Thanksgiving table:

. . . Simon appeared again, with Isom in procession now, and for the next five minutes they moved steadily between kitchen and dining room with a roast turkey and a cured ham and a dish of quail and another of squirrel, and a baked ‘possum in a bed of sweet potatoes; and Irish potatoes and sweet potatoes, and squash and pickled beets and rice and hominy, and hot biscuits and beaten biscuits and long thin sticks of cornbread and strawberry and pear preserves, and quince and apple jelly, and blackberry jam and stewed cranberries. Then they ceased talking for a while and really ate, glancing now and then across the table at one another in a rosy glow of amicability and steamy odors. From time to time Isom entered with hot bread . . . and then Simon brought in pies of three kinds, and a small, deadly plum pudding, and a cake baked cunningly with whiskey and nuts and fruit and treacherous and fatal as sin; and at last, with an air sibylline and gravely profound, a bottle of port.” (Flags in the Dust, Random House, 1973, p. 281)

The meal is lorded over by the family patriarch, Bayard Sartoris II, who is soon to die as well as his son, Bayard III, leaving the few remaining members of the once proud and powerful Sartoris family destitute.

Old Bayard’s attempts to maintain the family’s traditional high standards are exemplified by this meal, which is indeed a groaning board with plentiful meats and game, vegetables and breads, sweets and condiments. The inclusion of stewed cranberries, somewhat of a luxury item at the time, stands out. Towards the end, adjectives begin to cluster as they tend to do in Faulkner, and the final, “sibylline and gravely profound” presentation of port lends a dark, ceremonial  coda.

Winifred’s Cookbook

The culinary history of Jackson, Mississippi is filled with colorful characters, including one who exemplifies the genteel aspects of the city in the early decades of the last century.

Winifred Green Cheney was born into a very old Jackson family; originally from Maryland, the Greens moved to Jackson in the early 19th century. Winifred was born in the second family home at 647 North State Street in 1913. She graduated magna cum laude from Millsaps with a bachelor of arts in Latin in 1933, and on October 25, 1934, after a 7-year engagement, she married Reynolds Cheney, who became one of the city’s most prominent attorneys. The couple had three children: Reverend Reynolds S. Cheney II, W. Garner Cheney and Mrs. Patrick (Winifred C.?) Barron.

While Winifred, in almost every respect, was a model for a well-to-do woman of social standing in the mid-century South (active in her church and in social charities, etc.), in another she was not: Winifred was a writer. In the course of her life, she wrote (about cooking, mainly) for such well-known publications as The National Observer, The Rotarian, Southern World and, of course, Southern Living. She published two cookbooks (both by Oxmoor House), Cooking for Company (1985), and the truly wonderful Southern Hospitality Cookbook (1976).

Winifred’s Southern Hospitality Cookbook is not only a treasure-trove of splendid recipes, but as a whole is a tutorial of upper-class cooking in the mid-20th century South. The recipes are rich and varied; the ingredients are often expensive, and the times for preparation are usually considerable. Indeed, one of the most frequent critiques of the book is how complicated, indeed “fussy” the recipes are, many often calling for minute amounts of several various ingredients and elaborate stage-by-stage instructions on their preparation. But this is the way Winifred and the women of her generation cooked; they had plenty of time on their hands, and more often than not enough money to spend on costly and hard-to-find ingredients.

Many of the recipes are heirlooms from Virginia and the Eastern Seaboard, as well as many from “my great-grandmother … from Lone Star Plantation in the Mississippi Delta, written in her fine Spencerian hand.” (“But there were no directions,” Winifred adds. “I found this to be true with most of the old ‘receipts’ in her walnut escritoire papeterie.”) She also includes recipes from dozens and dozens of friends and neighbors: Odel Herbert’s Carrot Casserole, Vivienne Wilson’s Asparagus and Carrot Escallop, Claudia Whitney’s Meat Spaghetti, Zollie Kimbrough’s Shrimp Casserole, Linda Lacefield’s Apricot Stuffing for Duck, Becky Voght’s Caramel Icing; and many, many more.

Winifred’s cookbook is a milestone in the culinary history of Jackson as well as the Middle South, but what takes it to a higher level is a short essay by her editor at The National Observer, David W. Hacker (“Savoring Miss Welty’s Wit at a Special Seafood Lunch”), and a preface by Eudora herself, “A Note on the Cook” in which she writes:

“The original Lady Bountiful was the invention of an Irish dramatist in 1707. Winifred exists as her own version. She makes her rounds with baskets and trays as a simple extension of her natural hospitality.In good weather, but especially in bad, splashing forth in raincoat and tennis shoes, carrying a warm cake straight from her oven, she sympathizes with you or celebrates with you by sharing her table with you.

When Jane Austen’s Miss Bates, attending Mr. Weston’s ball, is seated at the supper, she surveys the table with a cry, ‘How shall we ever recollect half these dishes?’ When I sit down to Sunday dinner at Winifred’s, I feel just like Miss Bates. What guest could not? But it now becomes possible for us to recollect the dishes we’ve dined on there. The cook herself has recollected the recipes for them in her own cookbook. It’s like another extension of Winifred Cheney’s gracious hospitality; she has added another leaf to her table.”

The Sixth Deadly Sin

In The Taste of America, John and Karen Hess refer to an article by Harriet Van Horne, “Edunt et Vomant” (“They have eaten and let them vomit.”), commenting on a 1975 fluff piece in the New York Times describing a dinner Craig Claiborne and his partner Pierre Franey had in Paris, a $4000 meal for two that featured 31 dishes and 9 wines. As Claiborne and Franey were licking their decadent fingers, the fringes of their world hungered and starved.

Van Horne wrote, “No journalistic caprice has, in my memory, set off such a shudder of distaste. This calculated evening of high-class piggery offends an average American’s sense of decency. It seems wrong, morally, esthetically and in every other way.” The Hesses included Van Horne’s quote to further elaborate on the gourmet absurdities of the time which elevated overpriced, tasteless food, (canned foie gras, canned truffles, cottony chicken breasts in a floury velouté sauce) that were championed by those like Claiborne who lauded expense as a barometer of taste. The Vatican newspaper echoed, deploring the display while millions were starving. Paul VI “as a humble servant for a suffering humanity” demanded significant changes of the rich in America and Europe in favor of the poor, a plea the affluent either ignored or atoned with in pittances.

In the most general terms gluttony involves an over-indulgence and/or over-consumption of food, drink or intoxicants to the point of waste, particularly in terms of a misplaced desire of food or its withholding from the needy, an excess that’s damned by every spiritual path in the world in every quarter of the globe. European theologists from the Middle Ages took a more expansive view of gluttony, arguing that it also consists of an anticipation of meals, the eating of delicacies and costly foods, seeking after sauces and seasonings, and eating too eagerly. Gregory the Great described five ways by which one can commit the sin of gluttony, and corresponding biblical examples:

  1. Eating before the time of meals in order to satisfy the palate. Example: Jonathan eating a little honey when his father Saul commanded no food to be taken before the evening. [1Sa 14:29]
  2. Seeking delicacies and better quality of food to gratify the “vile sense of taste.” Example: When Israelites escaping from Egypt complained, “Who shall give us flesh to eat? We remember the fish which we did eat in Egypt freely; the cucumbers and the melons, and the leeks and the onions and the garlic,” God rained fowls for them to eat but punished them 500 years later. [Num 11:4]
  3. Seeking after sauces and seasonings for the enjoyment of the palate. Example: Two sons of Eli the high priest made the sacrificial meat to be cooked in one manner rather than another. They were met with death. [1Sa 4:11]
  4. Exceeding the necessary amount of food. Example: One of the sins of Sodom was “fullness of bread.” [Eze 16:49]
  5. Taking food with too much eagerness, even when eating the proper amount and even if the food is not luxurious. Example: Esau selling his birthright for ordinary food of bread and pottage of lentils. His punishment was that the “profane person . . . who, for a morsel of meat sold his birthright,” we learn that “he found no place for repentance, though he sought it carefully, with tears.” [Gen 25:30]

In his Summa Theologica (Part 2-2, Question 148, Article 4), Thomas Aquinas revised the list of five ways to commit gluttony:

* Laute – eating food that is too luxurious, exotic, or costly
* Nimis – eating food that is excessive in quantity
* Studiose – eating food that is too daintily or elaborately prepared
* Praepropere – eating too soon, or at an inappropriate time
* Ardenter – eating too eagerly.

Aquinas notes that the first three ways are related to the nature of the food itself, while the last two have to do with the time or manner in which it is consumed.

Even to the exclusion of these examples, which are admittedly rather fastidious themselves, we are all guilty of gluttony in our complacency as citizens of one of the most affluent nations in the history of human civilization.  We quaff fine wines, stuff ourselves with costly foods, and watch celebrity chefs preparing dishes in a gladiatorial setting. Some wretched sinners sneer at those who eat off-cut chops, misshapen homegrown vegetables, or don’t use Zanzibar cinnamon. In our current moral implosion, hunger itself has come to be seen as a sin, almost as an illness that needs treatment, instead of a type of self-discipline for we who have grown too indulgent.

Stuffed Focaccia

Slit bread, brush with olive oil, sprinkle with an Italian herbal blend, and layer with mozzarella, black olives, and finely-minced shallots. Assemble, brush with more oil, and bake in a moderate oven (300) until crisp. Cut into sticks.
