Yancy’s Coconut Macaroons

Make dough with 1 cup butter, 2 cups light brown sugar, 2 well-beaten eggs, 3 cups flour, 1 teaspoon vanilla, 1 teaspoon almond extract and 1 teaspoon baking soda. Mix in 2 cups grated coconut. Drop by spoonfuls onto a lightly oiled sheet pan and bake at 350 until browned.
