  1. If you cook the salmon until it flakes, you will have severely over cooked it. Needs to be seared on outside & removed immediately from pan, red & quivers inside. You lose 90% of the flavor if you don’t eat it essentially raw (think ceviche or sushi) with speedily seared. Different strokes for different folks. Just criminal to overlook salmon or tuna.
