Chick Pea Salad

Toss well-cooked chick peas with chopped fresh tomatoes, white onions, cucumbers and peppers in a sharp (acidic) vinaigrette. Marinate for at least an hour (overnight is better) and serve over a bed of chopped greens with a good crusty bread. This salad goes particularly well with a heavy pasta dish such as lasagna, cannelloni or an Alfredo.
